Also, I find if I splurge a little on the Parmesan and spend the money to buy a good 18 or 22-month aged Imported cheese, the difference is really noticeable. Aged imported Parm is very nutty. American Parm is more rubbery & non-tasting - it just melts. Perhaps this is some of the bland complaints. I go to Trader Joe's and buy their 22-month aged Parm in small wedges costing about $3.50 and hide it! That way no snacking by kitchen foragers. Then I can add the good cheese to the meals & always count on it being there. I used half and half instead of cream to save calories (and since too much cream upsets my stomach). I don't understand the "bland" and "too dry" reviews. Don't be stingy with the parm or salt and pepper, and use your reserved cooking liquid if it needs more moisture. This would be a great meal with a sliced grilled chicken breast on top or extra veggies thrown in. Comes together very quickly and is adaptable to many variations. I halved the recipe and still had a lot for 2 people. No shallots, so I substituted about a good slice of finely chopped sweet onion. Cut the cream to about 1/4 or 1/3 of a cup. And I didn't bother thawing the peas, just stirred them in at the end and let them sit in the heat a few minutes. Smooth, creamy, velvety texture. Don't skip the peas - they add just the right amount of sweetness. My family didn't care for it as much as I thought they would but they did like it. The recipe was rather large though and I had tons of leftovers. I will have to halve the recipe in the future. The next day I added sauteed chicken & mushrooms, baked asparagus, thawed frozen carrots and sharp cheddar cheese (just stuff I had in my house already) and reheated it to serve as an entree with fresh baked french bread. Again, I enjoyed it buy my family isn't big on leftovers and were bored with this dish by then. But overall I think this dish is a winner and will make it again in the futre, in smaller portions that is. To add more flavor, I cooked the orzo in chicken broth. For the sauce, I used half of a white onion, plenty of garlic, canned diced tomatoes, and half & half instead of cream. I used Asiago cheese, because that is what I have on hand and it worked wonderful. I used the peas, but next time may use the asparagus if I don't have it as a side dish on its own. After the initial shock (or lack of) I readjusted my expectations of this recipe. It's a recipe for kids. The flavor doesn't need to be so strong. So be wary of that before you try this recipe. I also ended up using much more parmesan, salt, and pepper for taste. After all that I felt it was a nice and lightly flavored dish.
