This is a wonderful recipe, but with ONE caution. I made this salad for 20 people and yes, I used 7.5 lbs of garlic. If you make it for that many people, make SURE you have the windows open in your home! You can't imagine how my eyes watered when I took the garlic out of the oven! I don't cook much...so I didn't realize how powerful that much garlic could be. After I put on my swimmer's goggles to see...everything went great. It was a big hit at Thanksgiving with alot of laughs about the 7.5 lbs of garlic I roasted!

The salad dressing is absolutely amazing. The recipe makes enough for 3 - 4 large salads and lasted for three days. This is now a favorite recipe!

I love garlic but I thought this recipe was just completely overpowering... it was just too much at once. I also thought it was pretty bland. I usually love emeril's recipes, but I really did not like this one.

I made this when a chef came to our house for dinner...I wanted to impress him. Well, I do believe I did, but whether or not he was truly impressed, I sure was. This recipe was easy, incredibly tasty, and looked good on the plate. Emeril--you have saved my arse many a time with your recipes-my hb is an incredible cook, so I have to show him up sometimes! He uses Emerile's recipes as adjunct chef for the local restaurant here (Sunset on Main) - *Brava*!

i made this for my dad for father's day and my mom's kitchen still has a tinge of garlic smell to it after roasting the garlic. the croutons were so yummy will definetly make those again and the dressing was awesome too, but i gave it four stars because squeezing out the garlic was not as easy as it sounded. it was more like squirting out the garlic it was so mushy. it was a really messy job. don't know if it was worth all the trouble.

This was my first time ever making my own salad dressing, and it was pretty easy. I loved the roasted garlic taste of this dressing. It definitely adds a level of flavor I've never had with store-bought dressings. And I used the lowest fat mayonaise (probably lite miracle whip) as the base, with no (apparent) loss of flavor. Otherwise it partly negates the whole purpose of a salad to slather it with full fat mayo.
