For those who don't know, kale is used in the official famous New Orleans Antoine's Oysters Rockefeller recipe that has never been disclosed, not spinach. That said, I've made countless recipes for creamed spinach, but never for kale. I would have never thought of using caramelized whole shallots. To the non-American reviewer, this recipe has French origins. Don't give low ratings because you aren't "used" to a flavor.

I think maybe there's too much water in the kale to hold up to a thickened milk sauce, because my recipe turned out soupy even though I drained the kale well. I think cream, or even a blended cottage cheese, might work better.
