This recipe was excellent, I have made this over and over again, could not find my recipe and have started thinking about the upcoming fall season, so I had to come back a print it again! I have added a little extra spices, however I did find that you may have to cook it a little longer. But that is what cooking is all about. Paula your recipes rock!!!

These were a HUGE hit over our thanksgiving. We couldn't get enough. I ended up making 2 batches over the weekend. I added a good amount of semi-sweet chocolate chips and that made all the difference in the world (everything is better with chocolate!)

Pumpkin Bar Disappointment
03/27/2008 at 03:45pm
User: Anonymous    User Rating:
I had problems with the recipe. I cooked it for the amount of time suggested and let it cool. After a couple of hours I went back to the kitchen and discovered that it was not cooked enough in the middle of the pan. I had to take out some of the pumpkin bread and recook it in the oven. (Perhaps our oven needed to be set at a higher temperature because it isn't working properly.) I think that the recipe should have included directions on how to check the doneness of the pumpkin bars--such as putting in a toothpick a certain amount of inches from the side of the pan. I am not an experienced baker and I need those kind of helps in the recipe. The overall taste of the pumpkin bars was great after they were cooked a longer period of time. I also liked the icing.

Light and delicious

User: SHARON from Rockville, MD    User Rating:
I baked this in a jelly roll pan so that it was more of a bar cookie. There was plenty of frosting in just one recipe. Delicious - the cake was light and complemented by the sweetness of the frosting. I might add dried cranberries to the cake batter next time.

I saw Paula make this on TV. I decided to make it for my family's Thanksgiving dinner. Needless to say, there were none left to take home. The only complaint I received was that I needed additional cream cheese frosting because my father wanted to eat it directly out of a bowl with a spoon! It's a great alternative to pumpkin pie.

I have made this recipe several times and have always enjoyed it. I do agree that is needs more cooking time and I do add more spices. One Thanksgiving I added dried cranberries and walnuts and we took it on a car trip up north for the family. It was wonderful and more like bread. Traveled very well and keep moist for days.

I have become a baking machine here lately & this moved to the top of the favorite list. Sure, the title is misleading since it is nothing like a bar but who doesn't love a cake?? It's so good & the icing will make your cheeks tingle! YUMMY!!

Soggy Middle

User: Cheryl from Beaverton, OR    User Rating:
I did what some others suggested and added more spice, some ginger and fresh nutmeg. It was very easy but the middle fell and I cooked it for 20 minutes longer than it said to. The edges were getting too done so I cut them off and am cooking the middle for even longer. The taste is however, is awesome and it is very moist. I will make it again.

User: Kathleen from Knoxville, MD    User Rating:
These were wonderful. I just finished making them. I did tweak the recipe a bit. I added one teaspoon of nutmeg and 1/2 teaspoon of ginger just to add more flavor. Also, I just couldn't face adding all that vegetable oil so I substituted applesauce instead (unsweetened). They came out light and moist and tasting like the holidays. Since I used unsalted butter in the frosting, I added just a pinch of salt, because like Paula, I like a little salt with my sweet. These bars are perfect.

User: Brandon from Santa Rosa, CA    User Rating:
This recipe is so delicious that after taking these out of the oven and tasting them we decided to skip the frosting altogether. This is pretty much the pumpkin equivalent of the perfect banana bread. In fact we may never make banana bread again. I'll be taking these to the office party and to family get-togethers as a secret weapon of deliciousness.

You just grease, mix, dump, bake, cool, mix, and ice...then ENJOY! What a great recipe just as it is (EXTREMELY moist and cake-like), or with additions such as crushed pecans, extra cinnamon/allspice/cloves/ginger, etc. It's the mark of a wonderful recipe when you can customize it to your own family's tastes with additions. (*You could also spike the icing with some orange or tangerine zest or juice, etc.*) ~W

If I could give this recipe 10 stars I would! I took these to my family Thanksgiving and they were the favorite of the desserts. They were so moist and delicious I kept getting compliments over and over. I believe the secret is to make sure you mix the pumpkin/egg mixture until it is light and fluffy, as the instructions say. That made the bars so light and yummy. This dessert will be on our family menu forever.

User: Debbi from McLean, VA    User Rating:
This was very easy to make. I held back a little on the oil (I used 3/4 cup) and it was still very moist. It cooked perfectly in the time instructed. The icing is creamy, sweet, and delicious. When I first tasted it after icing it, I thought it was a little bland, so I put it in the fridge overnight and the next day it had much better flavor. I can't wait to serve it!

Not like I thought!
11/22/2007 at 01:18am
User: M.Dianne from Evansville, IN    User Rating:
This recipe required time and technique and much different than I saw on the Food channel. Though it was a good recipe, I thought it was a pumpkin variation of the original cheesecake bar recipe--icing covering a more 'play dough' texture and baked with both portions instead of a cake with separate icing. I wasn't too excited with the results. Because it wasn't as it seemed, I can't recommend it as the best.

User: Cathy from Orcutt, CA    User Rating:
The recipe is simple, straight forward, and yields a fairly tasty, moist, dense cake. But that's just it- it's more CAKE like than BAR like. My husband loves pumpkin bars, so this year I thought I'd make them... unfortunately, this is not a recipe I'd recommend for pumpkin bars.

Absolutely delicious!

I just made these for Thanksgiving tomorrow and I've been picking on them! I do agree that this recipe is more cakelike, but delicious just the same! I also decided to add a heaping 1/2 tsp of pumpkin pie spice for added flavor. I just didn't think cinnamon was enough. The cake is very moist and flavorful. The icing is so good, too! I would definitely recommend this recipe to pumpkin lovers!

Tasty, Easy! You Need To Make These!
11/14/2007 at 03:28pm
User: Anonymous    User Rating:
These are great! They're not flat, dense "bars", but fluffy like a cake. I made them with about half the sugar called for, and that was fine. I'm about to make them again, but this time will add 1 tsp. pumpkin pie spice, to make the pumpkin spice more evident. They were otherwise just a little bland. I sprinkled the cream cheese frosting with cinnamon for decoration, and that was a good idea. These were easy to make! Just don't tell me about fat and calories. I may try replacing some of the oil with an equal amount of apple sauce to help save fat/calories. But at it's original, it's a decadent cake that you can't help but eat huge slices of!

I made these once with whole wheat pastry flour and it jsut required a little more baking powder (to get it as high), but it was still as moist and delicous. I made it with all white too. For the frosting, I use only 1 and 1/2 cups of sugar and added 3-4 TBLS of maple syrup and nutmeg to taste. I got rave reviews and everyone wanted the recipe!!! Great job Paula!

Sorry, I have had much better
11/13/2007 at 12:30pm
User: Kari from Lakefield, MN    User Rating:
These just didn't have the great taste that I wanted. My husband said that they were "okay"; which means that he doesn't really want them again. They should have been sweeter and maybe more cinnamon. The baking time is a little iffy. If you cook them 30 minutes, the middle won't be done. If you cook longer, then the edges will overcook and dry out. Seriously, if people are raving about these, then they have not had really great pumpkin bars. I love Paula, but I am going to have to stick with my regular recipe that I make in a jellyroll pan.

The recipe was very easy, but the name is misleading. This is not a "bar", but its actually a cake. I was disappointed. It was a fine tasting cake, but not what I wanted to make. I used a 15 X 10 inch pan and added a 1/4 tsp nutmeg to add some spice to it.

Definately a keeper for the holidays!!!

These pumpkin bars are delicious! It is more like cake, so you could certainly serve as a cake and decorate the top. It is rich with the frosting, and for my taste, next time I would use less frosting on the cake (a bit too thick), but the cream cheese frosting is very smooth and the cake is deliciously spiced, not too spicy, but perfect pumpkin flavor! Very moist as well! Thanks Paula!

I've made this recipe twice, both times for a group and both times they were devoured. I did notice that the 30 min bake time listed on the recipe was not enough. Each time I made them was in a different oven, one old and one fairly new and both times I needed to add an aditional 10-15 minutes which left them still a little dough-ey. I also cheated a little bit and used store-bought icing, but nonetheless they came out delicious! Once again Paula Deen has proved herself and this recipe will definitely be added to my long term list of croud pleasers. :]

The bars were super easy to make but they just weren't very flavorful. Unfortunately I have had much better pumpkin bars. I absolutely love pumpkin and so was sad that they weren't my favorite. I made them for a party and people thought they were okay but everyone agreed that they had tasted better. As for the icing, that was fantastic and also easy to make. I will actually keep the icing recipe for other things.

I took some of the suggestions of other people who had already made them and did not make the frosting since I was making them for my sister who likes everything lowfat but she loves pumpkin, I think that they were so good without the frosting you do not need all the extra calories. These bars were so moist.

User: Tamaika from Ewing, NJ    User Rating:
These pumpkin bars, coupled with your favorite tea, MUST be what heaven tastes like. They're light in texture, rich in flavor. And you have to experience these pumpkin bars with tea...coffee would be too overpowering. The tea marries all of the flavors perfectly, but the pumpkin flavor is still the star. They're just sweet enough and compliments a nice, warm, spicey flavored cup of tea. My sister-in-law made these for Thanksgiving dinner (on a whim), and we enjoyed them after all the kids were in bed, kitchen cleaned, and the tea was done. DE-licious! And they were so easy to make...we didn't have an electric mixer on hand, but it took no time to whip 'em up. Definately give this recipe a try...you won't be disappointed.

User: Anita from Washington, DC    User Rating:
This was very good. The pumpkin taste is very mild so even anti-pumpkin people can enjoy it. A better way to describe this would be more of a moist spice cake, especially when you add a 1/2 a teaspoon of cloves, like I did. YUM! And putting only half of the recipe sugar amount brought out the cake's taste much better. It was good warm out of the oven, but actually got more moist the day after it was baked, probably giving it time to "rest".

I made this recipe to bring to my mom's house on Thanksgiving. They were super easy to make. My 10-year-old nephew said "These are awesome!" and my mom and dad said that they could eat a whole tray of them by themselves. The cake has a great consistency. It is not really crumbly like an ordinary cake, it is more like a pound cake. The pumpkin taste is not overpowering, it gives it just a hint of pumpkin flavor. Finally, cream cheese frosting makes any cake more delicious! Try this recipe, you won't be sorry!
