It was great! So tasty and crunchy and soft inside. I added a bit of worcheshire sauce to the mayo. I used some no name brand stuffing/bread crumbs that I had left over in the pantry. I was a little short on the crumbs and did a few too many potatoes so I made a bit more of the mayo mixture and ended up just smearing it over some of the wedges by themselves without breading and it turned out great and tasty as well. To make coating stick better DO NOT use your hands to dip wedges in mayo or dressing. Paula used a spatula on her show. I used a plain old serving spoon to both coat w/ mayo & press into dressing (spoon helped to heap dressing on too). The spoon gets more mayo on wedge (& not hands) making coating stick better. If you cut wedges smaller they cook faster & go further. I made them with Paula's BBQ pork chops & dipped the wedges in ample remaining BBQ sauce. YUM! Thanks Paula! I actually doubled the recipe and made chicken strips and corn on the cobb to go along with it. Double the recipe feed 5 nicely as a side dish. IF it was taste only, it would have gotten a 4 star. But with the prep of spreading the mayo on each tater, one by one was a bit time consuming and messy. Perhaps I would get better at it the more I make them? Also, I had trouble rolling the tater in the cornbread mix (found it slippery) so I held on to the tater tightly on one end and spooned the mix over each spud. That said, my family really liked them and I will try it again. Only this time I will cook it just a bit longer to crisp them up and I will use half the cornbread mix as a good amount was wasted. The first time, I only (barely) hand-crushed the stuffing, and the topping was too big, and did not adhere to the potato wedges. The next couple of times I prepared these, I ran the stuffing in my food processor and got extra-fine crumbs, which really made a difference! I did add more hot sauce and used Pepperidge Farm herb seasoned stuffing (crushed) instead of the cornbread stuffing. The cornbread stuffing lacked much flavor. I would have much rather just roasted the potatoes in the oven with salt and pepper. Crunchy & flavorful on the outside and tender on the inside! I used StoveTop Cornbread stuffing - remember to crush up the stuffing mix so that it will more readily stick to the potato wedges (I put the cornbread mix in a gallon zip-lock baggie and ran the rolling pin over it several times.) Doing this will increase your prep time by another 5-7 minutes, so remember that. I may even try this using different flavors of stuffing, not just the cornbread kind. The key to getting the stuffing to stick is to make sure you are using enough mayonnaise. It was way to salty! I recorded the show when Paula made these and she said to use 1/4 tsp onion powder. The stuffing did not adhere to the mayonnaise mixture well. Paula's breaded potatoes appeared the same way on her show. Perhaps it would be better to food process the crushed stuffing into a little more finer texture. Also, on the tv show Paula states "onion powder", however, the Food Network written recipe lists "onion salt." I used onion salt. Perhaps this was a step that I missed.I also did not use the house seasoning; I like salt but the wedges would have been much to salty with the cornbread mix that I used.
