Reminded her of the rationing of rice and the thin bland Jeok she had to make for my wife and brother in laws to survive. With the cream and broth, I added the entire mushroom mixture into the Polenta instead of individual bites; she loved it. Have made it twice, both as an app per the recipe and as a full side mixing everything and it's always been a hit. I had just returned from the grocery and had planned to make polenta but not with cream. What a difference the cream makes in this dish. I used enough lemon to suit our taste although I think one always has to do this because of the variaence in lemon size and juice. Took the leftover polenta, spread in a pan cut into pieces then pan fried in butter for breakfast - that was really yummy. They are listed as expert prep but were a snap and well worth the effort. Color, aroma, texture and flavor were all top shelf. At first the idea of making it with cream was unthinkable. I looked at the calories in two cups of cream and decided to try 2 cups of half and half. Other than that I followed the polenta recipe. It was delicious. My 1 year old daughter gobbled it up! The mushroom sauce was also a hit. I served this as a main course for a late dinner and I added onions to the caramelized mushrooms, but I have to say that if I were going to make it again I would leave the lemon juice out completely - it overpowered the mushroom and wine flavor and didn't go well with the creamy, chicken flavored polenta. The only thing I had a little trouble with was the polenta...too soggy but the mushroom taste made up for it. I served it on porcelain soup spoons, made for excellent presentation. Will definitely so again. |
