I'm surprised Rachael didn't suggest pumpkin pie spice to replace all the individual spices. You can add more or less of your favorite (ginger, nutmeg, etc.). Pampered Chef has a version with dried, ground orange peel. Great stuff.

Very delicious recipe for something different in the waffle category. Definitely very filling and recipe makes a lot of batter. The only thing I might do next time is cut the molasses just a little bit. We ate it with maple syrup but next time I think I'd go for some whipped cream.

I made these gingerbread waffles with the mulled syrup, Ina Garten's sourcream banana pancakes and Emerils breakfast burritos, EVERYONE loved the food!! This waffle recipe makes a lot of waffles, it's always better to have leftovers than run out....right? Thanks Rachael!!

I made these for Christmas breakfast along with our plain waffles and they were a HUGE hit with everyone in the family. Even my husband enjoyed them who likes just plain waffles. Definately a keeper in this family.

I like plain old homemade waffles just as much if not better than this recipe and they use a lot less ingredients. The mulled maple syrup recipe is wonderful though and gives plain waffles a bit of extra flavor. I think that is the way I will go next time.

I loved this recipe! It was very easy to do and my family loved them! I made a substitution of 3 tsp. pumpkin pie spice plus 1 tsp. cinnamon because I was out of ginger and it worked very well too. My whole house smells like Christmas!

Rachel Ray has truly perfected the art of waffles. THese are so flavorful and yet not over-powering. They have the most wonderful moist, almost creamy texture because of the pumpkin puree in the recipe. Make no mistake, this is what I'll be making on Christmas morning!!!

I did the whole recipe without changing a thing (which is sort of unusual!), and it was fabulous! Had some waffles left over for the freezer, even after eating the first few right after they were ready...they dip in that syrup so nicely! =) And the chicken sausage is great, too!

Tried these on this snowy day today with the chicken sausage patties. They passed my boys' taste test - wasn't sure with the pumpkin. On first bite the flavors seemed subtle but they ultimately were very flavorful and to my surprise we didn't mind the softer texture (we usually like waffles somewhat crisp). Next time will try with the mulled syrup.

Waffles are my son't current favorite, and these were GREAT! I used some whole wheat flour instead of all the white flour, and it still worked very well!

They fill the kitchen with this wonderful holiday smell. You can really taste/smell the pumpkin in them. Great with real maple syrup and maple sausage. We had them for dinner, what a treat! Rachael does it again.

I just made these yesterday morning, and my family LOVED them. I make waffles quite a bit, and vary the types and ingredients. This is a great recipe for them, they come out thick and soft, a bit heavy, but I expected that. I didn't have molasses, but I don't think that made a difference. I will use more pumpkin next time, and the molasses, my husband wants me to add pecans as well. I added a pinch of cardamon and ground cloves - I'll probably leave the cloves out next time, but it wasn't bad.

This recipe is a hit. I used whole wheat flour, rye flour, barley flour, and oat flour ( I have a mix of all in one bag for added nutrition). With all the "gingerbread" flavor, you can hardly tell they are whole grain waffles. LOVE IT and so do my 5 kids!

This is a great recipe for the holidays or special occasions (like when the kids come home from college). These are good, filling waffles, and the scent of ginger, cinnamon, and maple gives your house a real feeling of "home". We are on a low carb diet and substituted flour with whole wheat flour and sugar with Splenda. Highly recommend.

Though this recipe is slightly more complicated than regular waffles, it's definitely worth it. This makes thick, fluffy, filling waffles. They're really yummy and good for you too! (pumpkin is a superfood!) We had them with REAL syrup and fresh whipped cream and they were delicious.

My friend and I got together for breakfast and we substituted half of the all-purpose flour for whole wheat flour. We then used the batter to make pancakes instead of waffles--they were absolutely delicious! They get nice and thick on you so make sure you spread out the batter a bit on the griddle. Try it with boysenberry syrup, but any kind of jam or syrup would be excellent.

I've made this a few times for different gatherings of family members and they have ALL loved them!!!! The muled syrup is also delicious! Oh, extra's freeze well and make a great breakfast for rushed mornings, just throw them in the toaster to warm them up.

Have made this recipe twice now. Didn't have molasses but used honey and karo syrup. used pumpkin pie spice and added extra cinnamon and some vanilla. Makes a wonderful waffle and keeps well in fridge to use for several days. Makes enough for 10 4-section Belgian waffles - a lot more than recipe says. Perhaps my waffler is smaller? My 14-year-old loves it as well as the rest of us.

I was so exciting about making this recipe that I went out in the storm to get the required pumpkin that I didn't have. I made the recipe that was way too much for 3 people. I would still be making waffles if I haven't just stopped. The batter was not sweet enough and the pumpkin was a little overwhelming. Not a repeat recipe.

My husband and I started a tradition to have waffles every Christmas morning. I saw this recipe and thought what a nice touch it would be to have all of the added spices. It was more than a nice touch. With all of the wonderful ingredients, the waffles embodied all of the smells and tastes of the entire holiday season. And by mixing the dry ingredients the night before, this recipe took no time at all. Thanks for making our tradition tastier.

These are to die for!!! I highly recommend this dish complete with the chicken sausage and mulled syrup. I made this dish over the holidays and everyone was amazed. The only thing I would do differently is leave out the hot chocolate. If you have a VERY big sweet tooth -- go for it. But was far too rich for us on top of the rest of the b/fast. Simply fantastic!!!

Made them for my roommates at college and they loved them. Didn't have a waffle iron so I made them as pancakes instead by adding just a little more milk and they came out great. Will definately make again.

This was awsome I tried it for our family over the holidays and everyone loved it. Since it was gingerbread I was slightly concerned that the waffles would be crisp but, not so they were soft and flavorful. Just enough to be fab. All 3 children asked for seconds. I also did the sausage with turkey and they were all eaten, Iwish I could say that it only took me 30 min.

These waffles have a yummy taste, one batch makes 12 or so waffles. They aren't light so make sure you have 3-5 hungry adults. Would make them again
