A bit too much onion for my liking, and I think I'll put it through the blender next time for a more creamy texture...hope that works. But, if you like cheese soup, you should try this recipe. But it was great as just a nice cheese soup then after removing those things (still glad I cooked with them). Next time I'll expect to do it that way and just double the recipe to make up for less volume. I may try to use the blender and see how it all tastes like that. I prefer my cheese soups to be more of a thick puree texture. Even my husband who does not like soup liked this soup (with more crumbled bacon added). I also used roasted red bell pepper in place of the pimiento, used a bit too much as it somewhat overpowered the cheese, but was still excellent. I used a mixture of sharp cheddar and pepper jack cheese, 1-1/2 cups total. I agree totally with what another reviewer said about making sure you cook the cream mixture low and slow to achieve that creamy consistency. I've made Bechamel/Mornay sauce several times before and have always had a problem with it coming out gritty. So, I was worried about the soup doing the same since that's basically all it is is jacked up Bechamel/Mornay sauce. This soup was smooth, creamy, rich, and satisfying. Perfect for a toasty, crusty piece of fresh bread for dunking. Endless variation possibilities. Great winter soup, great lunch idea with salad and fresh bread. Very easy and quick to prepare. And although it seems like alot of onion - sauteeing it as long as she says - I never even could feel the onion on my tongue - it was like it melted into the cheese creaminess! I did not use the onion, but used 4 green onions instead. Saute' the white part & 2" of the green with the red peppper and reserve remainder of the green part for garnish. Red bell peppers are so close to pimentos in taste that I used a red pepper and roasted it first to give it that fuller roasted flavor. I increased the cheese to 2 cups, and the dash of cayenne turned into 3 dashes and it was perfect. This recipe was by far the best I had ever eaten. I made it while I was on the phone talking to my mother in law, that is how easy it is. I did leave out the pimentos and put in diced roasted red peppers instead and added broccoli crowns at the last minute. I also added three times the amount of cheese! Oh my dear governor this was so scrumptious, had a big bowl today for lunch. Next time I am going to eliminate the broccoli and put in cauliflower and then again another time put in potatoes. I wish I had read the reviews before I made this and I would have added the red bell pepper. I was thinking next time of adding some beer or white wine or maybe even some sherry. I was unsure how it would be with the pimentos. I've never used them in a recipe before. I actually used the canned pimentos and they were great. I also used a little extra cheese and didn't use any green onions because I didn't have any on hand. I think the cayenne pepper gave it a kick. I don't like pimentos so I did not use them. I love garlic so I added a teaspoon of minced garlic with the onions. I also added about 1/4 cup more cheese. He said it was boring and too cheesy. I couldn't find pimentos in the store so I left that out, but I think next time I might add some broccoli and potatoes for a little more variety. I added a mexican twist in later batches by adding canned green chilies and corn. I cut corn tortillas into strips and deep fried them to garnished the soup. I served this version at a party. I added a few red potatoes that I microwaved a couple minutes, real bacon bits, and a little extra cheese. I'll use less onion next time though. Also, it's important to not cook the cream mixture too fast and hot or it won't turn out with that perfect, smooth consistency. Great Recipe!
