This was a yummy, smooth cheesecake. It was light, rather than the heavy, super rich version. Great for summer. I would put a little of the caramel sauce on the bottom as well.

This is a great cheesecake. Not as overpoweringly sweet as I anticipated it to be (I went easy on the sugar though), and I don't even like apples that much but didn't mind them in this recipe. However, I'd say that it needs to be baked longer than the 30-35 minutes stated, probably at least 45 to an hour. My cheesecake didn't set as much as I would have liked. I left out the pecans since I'm not a nut fan and someone in my family is allergic and I didn't miss them at all. I also used dulce de leche syrup instead of caramel topping since that's what I had on hand, and it turned out fine. I used a 10" crust instead of a 9" and the batter filled it perfectly, whereas it would have more than likely overflowed on a 9" crust. Everyone that tried it really seemed to like it though!

We loved this cheesecake, it is easy to prepare and taste like it must have taken hours. The first time I made it I didn't have a ready made crust so I had to make my own and used a spring form pan. I am making it today using the ready made crust. This recipe will be made for years to come.

I served this following a game-day lunch of spicy chili. What a treat! My entire family thought it was extraordinary. I must say I disagree with the reviewer who recommended not putting the apple-caramel on top. The only change I made was to drizzle a little extra caramel over the top of the cheesecake. Easy and elegant! Even those who aren't crazy about cheesecake will love this.

Hi I am Erika from Costa Rica, this recipe is excellent, in fact I made a mistake and added 2 cream cheese jars and to my surprise it turned out incredible, but I had to cook it for about an hour more. The normal recipe is just as good, I really recommend you do this for any occasion. Congratulation Paula

I made this for Thanksgiving and it was so good my family had me make it for Christmas and requested for Easter too! I did find it was better for the pie to mash up the apple pie filling so there were no big chunks of apple. Other than that, this is a delicious dessert!!

This was such an easy recipe to follow. I have not baked anything in years and attempted to make this cheesecake for a Thanksgiving gathering. The cheesecake was simply delicious. It was the first thing that was gobbled up on a table full of other desserts.

I made this following the direstions exactly with three exceptions. Being the night before Thanksgiving the store was out of pecans so I used walnuts instead,I measured out the aples for the topping and left them whole but cut up the remainder in the can with a knife and I didn't heat the caramel topping I just mixed it straight from the jar. It looked like a million bucks and tasted better. Even the finickiest of cheesecake "experts" that reside in my house loved it. Now everyone wants one for Christmas. One piece of advice it is best served straight from the fridge after having been completely chilled. The first I put out on the table and it sat through dinner and the filing was not as solid as the second one I served straight from the fridge. Try it and you'll see for yourself.

Cheesecake and caramel apples: what a combination! I'd use a ten-inch pie crust because this recipe makes a lot of filling. I'd also cut the apples into smaller, bite-sized pieces. This is very easy to make, tastes creamy and crunchy at once and looks beautiful (like you worked much harder than you really did). It's a great special occasion dessert!

i make a lot of cheesecakes and this is one of the simplest i've ever made. i only made one change - i used a 10" crust based on others' recommendations and the filling *just* fit. other than that i followed the instructions exactly. unlike others, i didn't have an issue with the topping leaking all over everything. i did refrigerate it overnight and that could be the difference. i also used regular (not fat-free) caramel. i've noticed the fat free doesn't set up like the regular. i had quite a bit of caramel sauce left over in the jar, so next time i think i'll swirl some caramel into the cheesecake too. this was so easy i would gladly make it on a weeknight, and am going to put this on my list of potluck recipes. everyone loved it!

Our school had a pie tasting contest, and I used this recipe, only tweaking it by making my own apple pie filling. It was well enjoyed, and now my kids' teachers all want a pie for Thanksgiving! This was a real winner!!

This was an easy recipe to fix. You can reduce some of the calories by using low fat cream cheese. I also found an apple pie filling with Splenda. I used sugar free caramel topping and this still came out with plenty of sweetness and richness.

Great recipe!!! I adjusted it and used fat free cream cheese instead.Also, used Splenda instead of sugar and "no sugar added" apple pie filling. Didn't use caramel and used 2 pkgs of 6 mini pie crusts instead of a big one. (May have to adjust baking time) This adjusted recipe was perfect for me!!! Fat:5g per mini pie Sugar:8g per mini pie

I like taking this to potlucks because you can make it the night before, chill and then grab it and go. One suggestion I would make would be to use an extra large pie dish because following the recipe makes too much filling for just a regular size pie crust.

I love a great cheesecake. When I first saw the recipe I knew I had to try it. When I made it, my family was afraid to cut it because of how beautiful it looked. That didn't last long. It was gone in a blink. I made it again for my sister and her family, she kept my printed version for herself. I love this version of cheesecake.

I cannot believe this dish rated so high? It lacked any real flavor dispite the seemingly great ingredients. The apple,cheescake and little swirl of caramel were just too bland together. It lacked something. My husband did not like either. Very disappointing because it looked delicious.

I had never made a cheesecake before and my family and I love Paula so much we had to try it. It was so simple but looks and tastes very complex. Everyone at my house loves it and we take it to most family events. This is a must have in your recipe box (or you may just memorize it after all the times you will use it).

I normally don't like fruit in stuff, I know silly but I loved this it was yummy. I do agree the pie crust is better bigger and to cut up the apple pieces. I am making it again friday and I am using this New already Granola pie crust. sounds good. I think i will try putting the caramel over the apples on the bottom because on top was to messy. Maybe add some whipped cream to the center on top and drizzle streams of caramel. Hope these helped. God Bless

This is the EASIEST pie (especially cheesecake) that I've ever made. Since I usually have all the ingredients on hand,whenever I need a QUICK dessert, this is the one I turn to. I sometimes make 5 at a time just to give to friends and family. The thing I like the best is being able to change flavorings and 'fillings' to suit our tastes. GREAT IDEA:use hot fudge for the flavor. This is DECADENT! but super-delicious. THANKS PAULA!

I love this simple and elegant ..and yummy! cheesecake...I have tried to make cheesecake before and i could NOT get it right, until I met Paula! I have tried another version of this cheesecake and it is simply delightful! I substituted cherry pie filling for the apple and instead of caramel I used Hot fudge sauce...top it with chocolate covered cherries for garnish and youve got yourself one yummy cherry chocolate cheesecake! Whenever I am invited to a party..im always forced to bring the dessert! and guess what I bring every time...something from Paulas Kitchen! its ALWAYS the hit of the party...with or without friends haha!

This cheesecake was perfect. It was not too sweet. The recipe was easy. The only problem was I had good bit of left over cheesecake filling. But, I created so mini cheesecakes with it. So, I guess it wasn't a real problem.

I took this cheesecake to work and everyone RAVED about it. They thought I slaved over it (if they only knew how SUPER EASY it was to make, and I have never baked anything in my life). Everyone especially liked the layer of filling baked between the crust and cheescake. This is a DELICIOUS change from plain ol' fruit topped cheesecake. I agree with previous reviewer who thinks you should wait to apply topping until ready to serve.

Sorry, but I had to lighten the recipe up a little. I've lighten it up with egg substitute, sugar, lite cream cheese and even the carmel topping because we are runners, but a fabulous cheesecake and can't wait to make it for friends. The cheesecake has a great consistency even with the reduced products.

Paula Dean has done it once again! My family has raved about this dessert so much that it is now a request for my sisters birthday party dinner. I also love the fact that I can find a lower fat and sugar substitute for every ingredient in the grocery store. Not only was it so easy I now have it memorized but my husband that doesn't eat desserts ate the whole thing. If you are one for desserts made easy this is one for the recipe file. I tried this recipe immediately after watching Paula prepare it. It was extremely easy to make and you talk about something that was scrumpdelicious----well this is! My husband and I ate this cake (it took us 5 days) and we normally share our treats with other family members.....but we had to keep this one for ourselves. Yummy to the tummy. I did make one adjustment to it....I used sugar free apple pie filling, low fat pie crust and low fat cream cheese and omitted the sugar. Please give this recipe a try. It is sooooo good.

The caramel is NOT too sweet - unlike other toppings like strawberries, the caramel apple topping is a perfect blend with the creamy cheesecake. I would only add the pecans if you like that flavor - i dont care for them, but my hubby thought it was the best!! Thank you PAULA! Love u!

I made this for my Bunco group last night and they went wild!! I never would have thought about mixing cheesecake and apples. Great job once again Paula! This Texas girl loves your Southern cooking! Butter rules!! I did make one change and took the advice of an earlier reviewer. Use a 10" graham cracker crust instead of the 9". It was the perfect size and all of the cheesecake batter fit perfectly. Enjoy!

I made this cheesecake for a sweet ending to my Super Bowl Party this year. It was so easy and such a great hit. One of the best cheesecake recipes I have ever tried. I offered to make a dessert for a fundraiser at school and changed the recipe a bit by doubling it, making my own graham cracker crust and baking it in an 11x 7 pan so it could be cut into squares. This worked well, but next time I would use a 13 x 9 pan. Thanks Paula!!! Joy South Casco, Maine

I must be missing something here. . . this was the worst thing I have ever tasted. First, mine took nearly an hour to cook through. Second, the flavors were just awful. Apple and cheesecake just don't mix. Apple and caramel don't either in this combination (filling and ice cream sauce). I used brand names of everything. I tasted it before I served it to my guests, then decided I couldn't go through with it. Told guests the story, and they said they wanted to taste anyway. They agreed it was awful!!! I mean, just horrible. I made it exactly as the recipe states. There are plenty of other recipes out there for quick, easy cakes and pies. I highly suggest using one of those. This was, in a word, PUTRID. Sorry Paula, but it was totally inedible. I cannot for the life of me understand how some of you are saying this was the best thing you've ever eaten. UGH!!!!!

I made this, following the recipe to the letter, excellent. The next time, I didn't heat up the caramel and the apples and it didn't run all over the top of the pie, put it into the freezer right away to retard the running, it it was going to run, but it didn't. Put it into the refrig after awhile. The next time, I doubled the cheesecake recipe,mixed in chopped apple pie filling with the cheese, poured chopped up apple pie filling and caramel sauce on the crust, layered the cheese, another layer of apples and caramel and so on in a big spring release form pan, cooked it in a water bath, for a little over an hour. After cooling, topped it again with the unheated topping and apples. It made a huge 4" thick cheesecake big enough for an auction fundraiser or at least enough to feed 15 people. Excellent recipe.

I too read the reviews before making this cheesecake. I cut the apples into little bite size pieces as I imagined it would be odd with large apple slices on top of a smaller piece of cheesecake. I also used a 10 inch pie crust and even that was as full as it should have been. I used walnuts instead of peacans because of the cost, and added a little cinnamon to the topping while I cooked it. Turned out beautiful!!!

My family went crazy over this dessert and now expect me to bring it to all of our get togethers. I cut the apple slices into smaller pieces to prevent the cake from falling apart when being served and put the entire can of apples on the bottom instead of reserving any for the top. I've made this recipie several times at my family's request. Also, I make my own crust and reserve about 1/3 of the graham cracker crumbs (cooked at the same time with the formed cheesecake crust). I use the extra crumbs for decoration on the cake - I line the outer circle of the cake and it looks beautiful with the apple topping in the center.
