I have made this four times since it aired on TV. I was afaird to cook a whole chick and this receipe walked me right through it. The gravy on this is to die for! Once I didn't have the frozen orange juice concentrate and I used regular orange juice. It came out almost exactly the same. This is a keeper for years! I've wowed many guests!

I really enjoy this recipe. However, I use fresh orange juice instead of a concentrate (it's probably less "orange" flavored than using concentrate, but still very good and I use the leftover sauce and chicken in a pot pie for the next day's dinner).

Quick, easy, and very tasty!

This recipe was awesome! I made a few adjustments. I only used half a lemom. I also poured the remaining orange concentrate and lemon juice in the pan after the chicken was done, let it cook all the way down, used the juice as a marinade, and put the chicken under the broiler after I cut it up. It was great! It was also very easy to prepare and inexpensive. You cannot go wrong with the recipe.

I made this tonight for myself and my husband and it was wonderful. I have made other recipes and not really tasted a difference in flavor, but I could definitely taste the citrus flavor in this chicken. A very simple recipe that is easy to make. I did make the sauce to go along with it, but the chicken was already so moist that we didn't end up using or needing it.

humdrum

This recipe did nothing for me. The ingredients sounded so full of flavor, but the chicken really didn't take on much of that flavor. The sauce was just ok. Certainly nothing to share or write home about. Burning in the bottom of the pan was an issue for me as well, but I caught it just in time. I prefer simple baked chicken.

Juicy but lacking flavor

User: Sarah from Benbrook, TX    User Rating:
Don't get me wrong...this chicken was tender and juicy and had great flavor. BUT I was expecting much more garlic and citrus flavor out of this. The recipe calls for an entire head of garlic which I was excited about since I LOVE garlic. But I was a little let-down from the lack of garlic flavor. Like I said, this chicken was tender and juicy and has good flavor, just not enough of it. I do agree on the timing issue too...I cooked it for 1 hour 30 min at the temp. set in the recipe and it came out perfectly cooked. I will certainly cook this again because it was great, but I will put more garlic in the chicken an probably some cracked garlic under the skin.

Amazing Flavor

I was so bored with chicken but this recipe is so favorful and because of basting with the broth it is so moist. The left overs are also great, they make great chicken salad sandwiches.

I just have to say that my husband loved this chicken. If he loves a food than I know it's a keeper. The chicken is very moist and flavorful easy to prepare but you do have to keep on eye on it after you start basting it with the sauce because it could burn easily. After I started basting it I had to cover with foil because it was browning too fast but worth the effort.

Perfect roast chicken!

My favorite roast chicken recipe! The citrus adds just enough tangy flavor to the meat and skin without becoming overpowering. The meat is juicy and tender, and the skin is golden and crispy. I've made it numerous times and it always gets rave reviews.

I made this dish last night to rave reviews! My 5 year old even ate it with the gravy sauce! Unbelievable! The whole family really enjoyed it. It was so tender and the gravy was really tasty. I served it with mashed potatoes and steamed green beans. I did take another reviewers advise and cooked it at 350 but I have a convection oven. I did watch it carefully so it didnt burn. I kept adding chicken broth to prevent the drippings from burning.

Roast chicken is one of my favorites! Unfortunately, the addition of orange added too much sweetness and basting in the the orange juice made the skin too sweet and difficult to crisp.

This is such an easy recipe for such great taste. Just slice and stuff! My fiance won't eat white meat, and this even got him to go for all of it. The gravy that is made is so good with mashed potatoes or some steamed veggies. We make it all the time and make chicken salad out of the leftovers (if there are any!). Fantastic!

4 stars, could be better

User: koko from New York, NY    User Rating:
I gave this dish 4 stars as an average score between my husband and I. My husband thought it tasted great and give it 5 stars. I thought it was ok (at least it was moist) and give it 3 stars. This was my first time roasting a whole chicken and quite honestly, I found it to be way too time consuming and way too much work. I now know roasting whole birds is not my thing. Usually, Giada's dishes are much easier - you pop it in the oven and you're done. I think this is the first dish by Giada that's not 5 stars in my book.

Loved it!

Would make again, with adjustments
09/24/2007 at 12:30pm
User: Angela from Smyrna, GA    User Rating:
Like others, I rated this one less than perfect (usually, Giada's wonderful recipes ARE perfect) only because I felt the instructions could use some tweaking. Especially for less experienced cooks, I think this one could easily get burned (and pan sauce thus ruined) if you aren't aware of a few things. Only a quick lining of the roasting pan (already burnt) saved our gravy :-) First, the temp was WAY too high for roasting a chicken. Not sure if Giada was going for a shorter cooking time or what, but the temp immediately burned the first pan drippings. When I say burned, I mean within the first five minutes, there was smoke pouring out of the oven...I found the recipe on the web and in one of Giada's books, and neither set of instructions advised to *begin* with broth in the roasting pan. Further, as others have said, in order to prevent burning (at least if you are using a large roasting pan, as I was) you will need to baste *frequently*, to the point where you are letting so much heat out that cooking is further slowed. Still, flavor was amazing so I will definitely make this again with a few adjustments - temp at 325 (just roast longer), wait longer to begin glazing with the OJ mixture (which burns FAST, even at a reduced 325), and of course I'll start with broth in the pan. Our first attempt also ended up slightly undercooked in places, even though temp indicator said it was done. I think this was actually because I overstuffed the cavity (was trying to get all that yummy looking fruit and garlic in there!) and I think the heat could not circulate inside the cavity as a result. So I would not stuff it quite so full next time. All in all, however, this gets 4 stars for flavor - wonderful combo and meat was very moist. I served with roasted rosemary yukon gold potatoes and french green beans in butter - everyone in our family loved it.

I was so excited to try this recipe I saw on her show. I have to say it was very easy to make - and it was pretty good. The only thing I was disappointed in was that I didn't taste the orange lemon or garlic in the chicken itself..I did like the fact that the chicken was moist but not undercooked.

User: Amy from South Bend, IN    User Rating:
Whenever my husband and I try a new recipe, it's pretty easy to tell if it's going to be a repeat or not. I just wait for the "mmmmmmm" and the contented look of euphoria on his face. Quickly followed by "This is definitely a repeat." This is just that kind of recipe. Don't be afraid by the name, it's really not that citrusy or garlicky.... just a hint of flavor. But the fruit inside the cavity really help to keep it moist. It even reheated well in the microwave (low heat)!

User: LORI from Brooklyn, NY    User Rating:
I love all of Giada's recipes usually. But this was my first roast chicken (I am not a big chicken fan, but my partner is, so I gave this one a try) and obviously I did something wrong. I had to use a 4 lb chicken b/c I couldn't find a 6 lb free range one. I roasted it, basting every 15 min or so, for 1 hour, 30 minutes (since it was a smaller bird). The skin was dark brown and the thermometer said it was done, but when I let it rest and then cut into it, the breast was cooked but mushy (how did that happen?), almost wet, and the thigh/leg was still bloody. So I guess I didn't cook it long enough, even though the temp said it was ok when I put it in the thigh. Help anyone? I am willing to try it again, since the sauce was yummy and my sweetheart loved the mushy breast meat. ;)

A bit disappointed

User: Mark from Borger, TX    User Rating:
I was really looking forward to a knock-out chicken dish here, but this is not it. The bird takes a lot more work than it appears on TV, so be ready for that. You cannot just pop into the oven and then go shopping as someone said above... Ha! Must be glazed every 5-6 minutes and the broth replinished about every-other glazing... broth evaporates quickly, especially in the begiining. Tenting with foil is a MUST! I had a somewhat small chicken at 4.69 lbs. and it still took 2hrs. 30 min. to cook. Even then my chicken was not completely done. The frequent opening of the oven to baste lets out a lot of heat, I presume. Breast meat was done, tender and moist, but in the thigh area, juices still ran pink-bloody. Yuk! I love garlic, but in my opinion, there is way too much in this recipe. Could not taste anything but garlic and more garlic! My house smelled of garlic for 2 days afterwards. My advice: DO NOT test this on guests, make it 2 or 3 times for yourself first, and make adjustments. Cut back on the garlic... Add a bit of flour to the sauce during the reduction process. I think I prefer a traditional roast chicken, sans citrus and garlic, with a traditional country gravy. Sorry Giada, I was let-down with this.

User: Brent from Farmers Branch, TX    User Rating:
To the folks who say the chicken is not moist....please make sure you are using a 5-6 pound roasting chicken. Also, if you have a lower end stove (GE, Maytag, Kenmore, Whirlpool, etc...) You have to use your thermometer on the bird more often to check for temp. as these ovens don't have good internal thermometers to keep temp. properly.

This chicken was super moist. My husband asked "what did you do to make it so moist and tender?" The flavor was also very good. I didn't, however, eat the skin as Giada had mentioned in her show. I was having an impromptu birthday party for my husband and at the last minute decided to bake a chicken. I saw this recipe and thought that it would work well as we have a blood orange tree in our yard. Instead of orange juice concentrate, I used blood orange juice with honey and used the blood oranges in place of the oranges for stuffing the cavity. The chicken was golden and smelled great, but I was a little nervous when I made the sauce as it was the first time that I had used this recipe. I served the chicken with macaroni and cheese and sauteed mixed vegetables. The entire family raved about the meal and claimed that the chicken with the sauce was the best. I made sure to print a copy of the recipe and save it in my recipe box. I will definitely be adding this to my cooking repertoire.

What a delicious recipe, great change from my usual boring roast chicken. After reading the reviews, I tweaked the recipe a bit. I crushed 2 garlic gloves and added them to the cavity with the whole garlic, lemons and oranges. I started the oven at 400 degrees, then lowered it to 375 when chicken went in. After 1 hour, I put a meat thermometer in and lowered the temp to 350 degrees for the basting portion, and baked until 180 degrees (about 45 minutes for a 5 pound chicken). No burning! The chicken was moist, delicious with the subtle flavors of orange/lemon and garlic. My fiance loved it! This is a definite keeper! We didn't do the pan gravy this time, but this is a great company recipe, and we will definitely make it then!

This has become my familys' new favorite roasted chicken recipe. The chicken is so tender and flavorful. The last time I made it I deleted the glaze part, basted the chicken with chicken broth and was able to make a really yummy gravy from the juices using a roux. Thanks Giada!! Joy South Casco

I roasted a 6 pound chicken for an hour and 50 minutes and it came out very moist. I covered it with foil after 1 hour because the skin starts burning. I did not taste much of garlic or citrus in chicken itself but the pan sauce had a very good citrus flavor. I am not sure if I want to make it again though.

Chicken came out great; it was super moist and had plenty of citrus flavor. Note, I covered / tented mine with foil once I began glazing to prevent burning as others had recommended. It worked, perfect golden skin. Cook time, about 2 hours. However, I like old-style chicken with good-ol' normal chicken gravy. This recipe was nice for a change, but I probably wont make it again. Not a favorite of mine, but good.

I just made this tonight. The aromas were intoxicating to say the least. It came out looking picture perfect, but took a good 2 1/2 hours or better. I have an oven only a few years old, but it's nothing special. Maybe it had a hard time recovering from heat loss due to the door opening so often for basting. Other than that, beautiful, smelled wonderful and was so flavorful and juicy. 5 stars on the chicken itself...4 only due to my timing issues....I really do love Giada and almost every recipe I make of hers...and there are a lot!

OK....so I'm a rookie...and what a way to begin! I love citrus, so I knew this was the recipe for me - my one mistake was forgetting to add the olive oil to the thawed orange juice concentrate - I think that would have prevented my chicken skin from turning very "dark"...ok...blackish - (but my boyfriend loved it that way!) The meat was juicy and SO flavorful...definately will do it again. I roasted potatoes and asparagus in separate dishes....nice dinner.

For a long time now I have stuffed my chickens with citrus and garlic but never basted them. The basting sauce for this recipe was awesome and making sure to salt and pepper the inside as well as the outside really brought out the flavors. My husband adored the simple sauce that went with it and it was just as good the next day heated in the oven.

This is my favorite "whole" chicken recipe. The flavors are amazing. My dvice though is to use a thermometer and use your better judgement. I had to stick it in the oven just a little longer because I thought it was done when it started to blacken a little. It needed about ten more minutes for me which would have been the time the recipe said it would take. Silly me. Well worth making. Very simple with extraordinary results.

I made this was a 4 lb chicken and it took 2 hours and 15 minutes. Use a meat thermometer. I did not use one and pulled it out way too early. It was beautiful and brown and LOOKED like it was done however if I left it any longer at 400, it would have burned. I plated it only to discover it was still quite raw! The glaze makes the skin burn, so I suggest lowering the temp to 350 and covering it with foil. I would attempt this again though...

I try new recipies for chicken from time to time and many of them are lots of effort for not much additional flavor. This one is very simple to make, and the sauce helps keep it moist and flavorful. I tasted a spoon of the sauce on its own and didn't think much, but on the chicken it was excellent. We don't eat the skin although I had meant to taste it and forgot. I will make this one again.

I only had frozen limeade, so I used that instead of orange juice. Lime and lemon worked well and I'm sure orange would great too. There is just something about the way the citrus and the chopped garlic and the oregano blend that just makes this soooooo fabulous. I don't know if it was my oven or a timing issue, but my chicken finished early. As with any recipe, I suggest checking it for doneness when you think it should be 90% done (based on timing provided in recipe). That usually helps me avoid overcooking whatever it is that I'm making.

At the end i didn't cook down the remaining juice to one cup, I actually added some orange juice concentrate to it. That way i was able to have more sauce for the left overs. And the next day, it was even better...

I have to agree with everyone else that as written you will end up with a horribly burnt bird. I did end up covering mine with foil after the first baste and it still got a bit bitter and dark in places. The sauce was excellent though so I think with some modifications this could be excellent.

It only took about 10 mins. to get all the pre-work done and get the bird into the oven. As it turned out some good friends were invited to dinner (last minute) and I was worried because I had never made it before. They absolutly loved it- the sauce that especially! It really is so different from any other chicken sauce that we had ever tasted. I highly recommed that everyone try this recipe because it is cheap, quick, easy to prepare, but best of all it tasteed so grest. Thank you Giada!!!

I've been cooking or years, but for some reason, have never roasted a whole chicken before. This was my first and quite a debut it was! As someone else said, it's so good it'll make you moan! My 5-lb. bird cooked up in exactly 1 hour & 45 minutes. After the basting, some of the skin did get a little black, mostly near the wings, but it wasn't an issue. There was quite a bit of evapoaration of the chicken stock, but I took care of that in the deglazing phase by add a few splashes of dry white wine. Good thing, too, because as tasty as the chicken is (falling-off-the-bone tender), it's the sauce that really makes this dish. I plated it with sliced lemons and grapes (see a picture here: http://pics.livejournal.com/moochia/pic/000h74ba) and served it with a simple pasta and marinara sauce. Between the two of us, we nearly finished off the entire bird! Whether you're a seasoned cook or a newbie in the kitchen, you must try this!

I am not a big chicken fan like everyone else in the country. In general I think chicken can be rather boring. I must tell you, I will make this over and over again - it was absolutely the best roast chicken I ever had. I did tweek the cooking time and temp so maybe that helped too. First I had to adjust the amounts of fruit/garlic for a smaller chicken (about 3.75 lbs.) and then, since I had to run to Target - I only did the 400 degrees for 45 min., then I turned down the oven to 325, added two cups of broth at the bottom and basted with half of the marinade - covered it loosely with foil and cooked it for an additional 1.25 hours while I shopped. Came home to a fabulous aroma and the most delicious meal I have had in a while (I served it with the recommended pasta recipe, though any side dishes will do nicely - maybe next time asparagus). I had a thought - I think I might actually try this whole recipe with that method for our Thanksgiving turkey this year! Thanks a million Giada, you rock.
