I also used Marsala cooking wine instead of the brandy and it worked fine. My only complaint is that the egg noodles don't soak up any of the yummy sauce, leaving the noodles sorta bland. You will need a spoon to eat the sauce because it is really good, but go easy on the orange zest, a little goes a long way. I cooked it in the oven because I don't have a crock pot. Used convection at 190 degrees fo the first four hours and then lowered the temp to 175 for two more. I cooled it down and refrigerated it as we were invited out that night. Reheated in a 300 degree oven the next day for about half an hour or so and it was delicious. I also used port in place of the cognac or brandy as that's what I had available. I had to use Marsala wine instead of the Cognac but still excellent. I think I would leave out the orange zest tho', didn't mix well with the Marsala, might taste better with the Cognac. I prepared as directed in the recipe and then roasted in a 325F oven for about 2-1/2 hrs. Delicious and tender with great layers of flavor. Definitely a keeper. Happened to have nearly all the ingredients except for the Sun dried tapenade (which was easy to find at the store). It takes some time to cook, but required no effort on my part since the slow cooker did most of the work. I must say I was a bit leary to try this dish at first since there was no ratings. The final product came out pretty good. I enjoyed the taste of it. It was even better the next day. The orange zest gave something extra to the sauce. A definite keeper.
