What's more, the instructions seem to imply that the 8 hours on low in the slow cooker will cook the beans. Not so. They need to be precooked for a few hours on high for a good result. My only suggestion is that the instructions are a bit vague. FIRST, be sure to take the bay leaves out before blending and serving. SECONDLY - The garlic head instructions baffled me. I did cook it in the soup, peels and all, but I took it out before blending and serving too. Next time, I may use that garlic that I took out of the soup in the mojo sauce instead of re-cooking another few cloves. I will definitely make this again! I even had my sister try it, who'd never had black bean soup before & she loved it! I put it on before I left for work and came home to a meal ready to eat! It was a tad on the salty side, so next time I make it, I'll cut back on the salt. I also used smoked turkey legs in lieu of pork ribs which could have added to the saltiness. It was very easy and the Colts fans loved it! I agree with a previous reviewers advice: remove the bay leaves and garlic before blending the soup. And i think next time i will only blend about half the soup mixture so there is still some whole beans in the soup. And you have to add the mojo which makes it really good. |
