I saw Bobby make this and wanted to try it right away. I had everything except Farmer's Cheese, but I did have cottage cheese. It worked beautifully. I did it in the blender because my food processor was in the dishwasher. That worked fine too. It really needs the tsp of salt. Don't skimp. The fresh basil and lemon zest really work in this. It's soooo good!

I would like to know if a cheese other than Farmers cheese can be used? The Bruschetta is very good. Ella
