A long-time Alton fan, I had seen this recipe on an episode of Good Eats (My Pod). This Fourth of July, my grandparents called up and asked my family to bring a dessert to accompany the dinner they were preparing. I have always loved Creme Brulee, and was curious to learn how to make it. This recipe was easy to follow, and the result was the best Creme Brulee I have ever tasted. I recommend this recipe to anyone with a sweet tooth, a vanilla bean, and a little bit of time on their hands. You can't go wrong with Alton Brown!

Chat w/man@HomeDepot tool section4torch

My son actually made Alton Brown's recipe and was his first experience as a non baker. He did a great job.The setback for the finale was the small torch he borrowed from his co-worker.So he ended up using the broiler of the toaster oven. The end result was very much like a torch, except the custard got heated too long and lost it's chill. My custard had the raw cane sugar which I did find more tasty than the vanilla sugar.Anyways,I went to the Mission Viejo Home Depot a week later(Jan19,2008)&ended up purchasing a propane cylinder with an attachment torch for about $13.00 or so to use for the sugar carmelizing, but only after I'd had a chat w/a man(customer in the tool dept.)He had settled my inquiry about using that torch for food.I mentioned using Alton Brown's creme brulee recipe, and finding it on the foodnetwork site.I'm curious if he did & hope he sees this and leaves word here on his feedback. Can't go wrong with Alton's recipe.

This was the first time I made creme brulee. It was delicious and easy. I will buy a kitchen torch for the next time because the broiler made the custard runny. We still ate it though!

I had never made creme brulee before and was nervous about picking the right recipe. I tried this one because I love Alton Brown, and I was definitely impressed. It was really easy to make and extremely tasty. I couldn't find vanilla beans, but I added real vanilla extract (not the imitation kind), and I imagine the effect is the same. The torching was fun and much easier than I had expected. I used a mini-blowtorch from a hardware store - no need to spend more on a culinary version.

A good recipe and the flavor quite pleasant. I just can't stand Alton's childish, not funny antics that are so distracting. He's so good at cooking and educating. He must think his demographic are junior high boys.

I always thought creme brulee was very difficult but not with this recipe. We have made it several times and it always turns out great. The only thing is, you can very easily burn the sugar if you're not careful. But that just means practice and more practice.Thats fine with me!

SOOO good!

I've always thought it'd be too hard to make these "fancier" desserts but it was SO SO easy! I made it 2 weeks ago and EVERYONE loved it. It's really simple to make. I didn't prep ahead of time, so I couldn't make the vanilla sugar. Instead, I put some vanilla extract into the MIX. But to top the dessert, I used PLAIN SUGAR. It came out great great great and I'll make it again!

I have tried a number of recipes for Creme Brulee with inconsistent success. I have made this recipe more then a dozen times with consistent success every time. It?s especially impressive using the torch in front of your guests. That way you can show off your cooking and power tool skills?.

I received a kitchen torch for a gift, and couldn't wait to try this recipe! I didn't have any vanilla sugar made, so I used regular sugar in the cream mixture. I saw another recipe that recommended using turbinado sugar for the top, so I substituted that and it worked very well. My ramikins are 4oz, so this made 8 servings.

We made this for our Christmas dinner -- my 9 year old son got a kitchen torch for Christmas so we put it to use. This is a wonderful, easy recipe with superb results. The custard is creamy with a wonderful consistency; using the torch is really the way to go, as we have tried the broiler method before to rather disastrous results.

Bland

User: Dee from staten island, NY    User Rating:
I made this recipe based on the stellar reviews it received. I was disappointed. Although the consistency of the custard and crunchy topping was great, overall the taste was bland. Also, the recipe should tell you how to make vanilla sugar. I had to go look it up and was surprised to find it takes TWO DAYS to make. Considering that a single vanilla bean costs $11, this was a costly "experiment" and one I will not be repeating.

I LOVED IT!!!

Surprisingly easy to prepare for my boyfriend's birthday-- i had it set in the fridge the night before! All I had to do on the night I served it was sprinkle the sugar on top and let him do the torching, which he got a kick out of :) Worth the time to make the vanilla sugar and use the bean instead of the extract. My boyfriend said it was the perfect consistency, as well-- soft but not liquid, and stuck to his upside-down spoon. Thanks for the recipe!

SOOOO sinful but SOOOO good. Not sure why they rate this recipe as medium difficulty - it's like falling off a log. I've tried creme brulee before with pretty lousy results - it's all about the TORCH! Make the investment. It makes all the difference in achieving that fabulous crunchy top. Although, I'm surprised Alton recommends a torch since as far as I can see it is the ultimate "uni-tasker" - which is a big AB no no.

Exquisitely simple to make and sheer heaven to eat. The texture and flavor of the custard are a perfect foil for the slightly bittersweet caramelized sugar cap. I followed the baking time although I thought the custard needed more time in the oven. I was wrong. 40 minutes in my gas oven was just right.
