There is no explanation. Crushed tomatoes should not be used in this recipe. Horrible ingredient choice. The pie crust is also confusing. Is there no bottom layer? And should it be circular or rectangular because last I checked, chicken pot pies were circular and not made in casserole dishes. All in all a terrible recipe. I made my own dough, but I think next time I will use refrigerated dough. I am used to a light sauce in my pot pies and the added tomatoes made it more hearty. I left out the wine but it still turned out really great. I didn't have a pie crust on hand so instead I used refridgerated biscuit mix, which turned out awesome--we had to leave it in the oven a little longer, but the juices from the pie soaked up into the biscuits a little and they were so good! The veggies will cook some more in the oven--they don't have to be completely done on the stove top (unless you like really mushy veggies). The leftovers turned out as great as the first night--especially since I toasted up the biscuits. I really really loved the flavor of this pot pie--especially with the tomatoes. It's not a traditional pot pie--it's healthier and yummier than the cream versions out there, imho. I skipped the chopped vegetables and just put in a few cups of frozen mixed vegetables (corn, peas, carrots, beans). I also had cooked chicken that I just cooked for a few minutes to heat up. I skipped the wine and tomatoes (definitely can't put tomatoes in pot pie) - the flavors were really good. I loved how it tastes - and I cut out four little hearts to vent, and then also pasted them on top of the crust too. But what am I doing wrong???!! So my veggies were cooked just fine. My family loved it. I am not a red sauce lover so I may try to change it to a chicken gravy nature, just to give it a try. May not work but...but really if you don't mind the crushed tomatoes, it was a great family meal with a side salad. Instead of pie crust I used crescent roll crust and it was delicious. The crescent roll soaked up the juice and made it less runny. I also added more salt and pepper. And next time will add more chicken, less potatoes. Make sure you simmer the veggies in the broth mixture until the potatoes are tender (if you dice them into small cubes, they cook more quickly). Also, if you omit the tomatoes, it will be more traditional (Mom's) pot pie, but I loved the new twist to the recipe. She looked healthy when she started her shows but I think she looks terrible now. She is way too thin and as a Nutritionist it is very concerning that she is on TV. With all the talk about eating disorders and overweight she is not sending the appropriate message if her weight loss is a nutritional problem. It was very tasty and my family really enjoyed it. It's a healthier version than a traditional cream based dish. I needed to add more broth for liquid to cook the potatoes and carrots. Cooking time was definitely longer than indicated on recipe since potatoes and vegtables needed to be cooked. I thought the thyme was going to overwhelm the taste, but it ended up having a really nice flavor. I only used three potatoes and added more corn. First of all, since when do potatoes cook in 8-10 minutes? Pots should have been pre-cooked. Same with the carrots and the corn. Worked well. I didn't want a tomato-based sauce, so I opted out of adding the tomatoes (which I feel was a smart choice.) Instead, I added about 1/3 cup more wine and 1/3 cup more chicken broth (opted for non sodium-free broth.) Veggies took 20 minutes to become adequately tender. - Added about 1/2 cup quartered mushrooms to the potato mixture. - Added 1/2 cup frozen peas along with the 1/2 cup frozen corn to the pot after simmering the vegetables. I also added about 1/3 cup chopped Italian flat-leaf parsley in with the peas and corn. - Used store-bought frozen pie crusts, but used 1 on bottom of casserole dish and 1 on top (like traditional pot pie.) - Baked for 15-20 minutes. I will DEFINITLEY pre cook the potatoes, carrots and celery. I may also use sweet potato instead of the white. The stew never really thickened for my taste, so I added 3-4 tsp of corn starch. Next time I will shred some of the chicken after it's cooked to add texture. Overall, it was worth the work. It was very tasty, the kids liked it too! The only couple of things about her recipe are: When you're cooking everything till it's tender she doesn't tell you how long and it took longer than I thought. The potatoes and carrots were really hard after a few minutes so you need at least 20 minutes for everything to get tender. Also, I would add more carrots and celery and less than 4 potatoes--3 were almost too many but mine were big potatoes. Would defintely make again!
