I agree that 2 tbls. of mustard is a bit much for the amount of sauce this makes, so I scaled it back to a heaping teaspoon - just enough mustard to give the sauce a tangy flavor. I also added another 1/2 cup of cheese. Also, the recipe states to stir the sauce constantly. Don't skip this step or you will end up with a grainy cheese sauce. The macaroni does get a little dry once it sits for a while, but ALL mac and cheese does that. Have you tried Kraft or Martha's recipe (which I adore, but too much of a hassle for a quick dinner) the next day? They both get dry and need a little milk to make them creamy again. We thought the mustard bumped the flavor up and distracted from the fact that we saved many calories by using the fat free milk. The bread crumbs added crunch which made it seem like the fat laden version that has contributed to my families overweight problem. This is a great alternative to the artery clogging recipe. I admit I did not add the hot sauce, but all the other ingredients went into the preparation bowl. I usually buy the commercial products of Stouffers and Kraft mac n' cheese, and so maybe we are used to their stronger, cheesy flavors, in comparison. And yes, I did salt the water when it came to a boil, before adding the pasta. So I was disappointed that it didn't taste better. First of all, add a couple of heavy pinchs of salt into the water. This will season the pasta and keep it from being bland. Also, if you're going to add the pasta directly into the sauce, cook it a couple minutes under what the package says or so it's AL DENTE or tender on the outside but still undercooked on the inside. This way the pasta won't be mushy once it's in the sauce. |
