This was amazing! I reduced the wine by half and only had 4 ounces of pancetta on hand and it was fabulous. I will be making this again for sure. I also wrapped some asparagus in thin cut spicy genoa - very yummy.

This recipe was fantastic!!!! I took veiwer, Melody's, advice and reduced the wine down before I melted the cheese in. It was perfect. The flavors were awesome! We dipped french bread, rosemary olive bread, and spicy sausage. I will be making this real soon!!!

Many complained there was too much wine and that the recipe was runny. She didn't write it explicitly in the recipe, but she wants you to boil the wine down. I reduced mine by 1/2 before moving on to the next step. Many complained the wine was overpowering. I guess it's because it wasn't cooked down as mentioned before, but she also specified Pinot Grigio which is one of the lightest-tasting white wines out there. A Chardonnay would be too much! For people who had lumps...You were impatient. Add the cheese SLOWLY. Melt a little at a time. OK, I hoped that helped. And don't skip the pancetta, it really gives it a great flavor.

At first when I was whisking, I thought that it wasn't working. But, I kept whisking for a good 5 minutes, slowly. Sure enough, it started to bubble and come together for a really nice fondue texture. It may have been too salty if you add too much pancetta. Just needs few tablespooons of it. Topped with fresh cracked pepper....yum! I halved this recipe and it worked great. The wine amount was just right for me.

This was so good that I made it twice within a month! I did change it up a bit and used 8oz of Swiss, 8oz of White Cheddar, and 8oz of Gruyere; therefore I increased the amount of cornstarch and pancetta(well, I used bacon instead), but I kept the wine measurement at 2 cups. It was absolutely fantastic. My husband and I both thought that this was the best fondue we've ever had!




Would give 6 stars!

I made this a couple nights ago and the fontina that I used smelled really strong, in a bad way, not like the fontina I am used to. The fondue was so thick it was stringy kind of and just hardened on the bread once I dipped it in. I may try again with a better fontina but I;m not sure thats going to make it more smooth and silky.

This fondue was so easy to make and delicious to eat! I didn't use pancetta and I added swiss cheese and a clove of minced garlic. I served it with bread, broccoli, asparagus and salami. It was delicious!

I chose this recipe for my contribution to a 'pot-luck' fondue party. It was the hit! The Fontina adds just enough of a different taste that sets it apart from your general cheese fondue recipes. After reading the reviews, I did let the wine reduce a bit and it came out perfect - not runny at all

I made the Italian Cheese Fondue for the Super Bowl and it was a huge hit. Easy to make, the combination of fontina and gruyere cheese and pinot grigio was excellent. Fennel was a nice dipping veggie that added a different twist and taste to the fondue.

I felt that the wine was a little overpowering. I used turkey bacon instead of pancetta. It was just so so.

The cornstarch is the secret to keeping the cheese from separating which had been a problem for us in the past. We had cubed apples and pears with this recipe which was a great pairing.

I don't know what I did wrong. The fondue did not come toqether. it was lumpy and did'nt even smell good. It would not normaly bother me but this was an expensive disaster

Very easy to make, but wine is way too overpowering! I would cut wine back to no more than one cup and add a couple tablespoons kirsh and nutmeg next time. Just too strong.

Never cook with wine you wouldn't drink was never so evident. Unfortunately, the wine completely overpowered the fondue. Will try again with better wine, perhaps one cup of wine and one cup of chicken broth.

this has amazing cheeses in it- but it calls for 2 cups of wine which makes it like water! we even doubled the cheese called for and it still was so runny! next time i would only add a splash of wine to keep it nice and thick (or a cup of wine like all other receipets call for). also, i left out the panchetta, didn't think it needed it with all the yummy cheeses. a pinch of nutmeg is a good idea too. i don't know what giada was thinking making this so runny! doesn't stick to bread or fruits!!!!!

This cooked very easily and we even heated it back up the next night. It was good, but not my most favorite fondue. I did really like the texture, it was smooth & great.

The fondue was far too salty with all of that pancetta. I would instead buy it as a garnish like the chives and maybe add something sweet to the fondue, like dates, and a drizzle of truffle oil, if you have it. I think the saltiness of the pancetta really overwhelmed the flavors of the cheeses and wine. Also, a pretty expensive ingredient for it not to be as good as i expected. i will make it again with some changes.
