This soup was really good. Next time I make it I will use less tomatoes and 1 cup lentils instead, but the main thing was my kids loved it. I want them to try new things and them being so picky I was a little worried, but they're happy.

I've never cooked with lentils before, so I was unsure about how this would come out and how I would like it. I was pleasantly surprised. I did make the following changes to the recipe: 1) I used 4 cans of low sodium beef broth and 2 cans veggie broth, 2) I substituted dried rosemary for the fresh, 3) I only used a 14.5-oz can of tomatoes, 4) I skipped the parsley and extra salt at the end. I know the recipe says this makes 6 servings, but it actually makes more like 10! We ate about half and then I froze/vacuum sealed the rest to save for later. I really enjoyed this though, the flavor was good overall and the meat was really tender. This recipe is not fancy, but it is a good, hearty, affordable everyday meal.

I wanted to try this recipe because it looked so good on tv. I loved the flavors even though I did not put any garlic in because garlic doesn't agree with me or my husband. I bought the wrong kind of tomatoes and it made the soup too thick so I will be more careful next time. I also would only put in one cup of lentils. The recipe is a little unclear because it says 2 cups of lentils and then also says 11 oz. which is a little over 1 cup. I used a inexpensive cut of beef and I will try this recipe again for sure.

Okay, I am not a soup lover. My husband was sick and I thought I'd make something hearty for him while he gets better. I love this soup. We both do, it is sooooo good. Try it and you won't be dissapointed.

Delicious and easy to make. I added extra garlic salt and garlic powder at the end because the soup seemed kind of bland. Like Giada says,season to taste. I like things a bit tastier. I also added red potatoes diced in large chunks with skins on. The meat was very tender. I liked the added texture the lentils gave it.

I used grass-fed beef and all organic ingredients including the beef stock. The flavor with these ingredients was out of this world. Of course, the stock had a lot to do with the overall characteristic of the soup. I wonder what it would be like if I made the entire soup from scratch without the use of the stock. Absolutely delicious. I can't stop eating it. The rosemary and parsley complement the soup perfectly. I'm glad for the quantity since I live and cook alone. It's a time waste for me to only cook one meal and I'll be putting this away in the fridge for the next couple of days and the freezer for later. Next time I think I'll double the recipe unless I choose to make it for company... for which it's definitely good enough.

I really enjoyed this dish. I did add a few quartered new potatoes and that gave it some more texture. I read that it made a lot so I cut the recipe in half and that was plenty for 4 people.

This was a really delicious soup to make. I agree with other reviewers that it took quite a while, but there was also alot of down time during which I did alot of other things. Following the suggestion of other reviewers, I reduced the amount of lentils to a little over a cup and found it to be the perfect amount. I also added a little barley (I was trying to clean out the cabinet!) and it was a good touch. This is a hearty soup that goes a long way. There are two of us and there was definalty enough for four dinners. I froze a bunch for nights when I just can't muster the energy to cook!

This soup is wonderful. It came out wonderful, it's a nice hearty & healthy soup. I added a little extra beef broth because I bought two large cans of beef broth which left plenty of soup to dip my Italian Bread. This recipe is definitely a keeper. Giada, I love your recipes. THANKS!!

I love to make various soups and this is one I will make over and over. This recipe makes a lot of soup, but it freezes well and I will be able to enjoy it several times. I changed the recipe slightly by reducing the amount of rosemary to 1/2 half tsp. which in my estimation is more than enough. Since others had commented that there was not enough broth I used two 48oz. cans of beef broth and only 1 and 3/4 cups of lentils. This resulted in a hearty soup with sufficient broth as to not be confused with a stew.

This soup is terrific! It's very Italian due to the oregano - excellent! I've made many soups and this one is one of THE BEST! It isn't hard, and it is economical. The soup is very delicious. I left out the rosemary because my mom can't tolerate it, but followed everything else closely. My beef, pun intended, was about the prep time. Chopping the meat into cubes took at least 20 minutes and then more time to chop the other ingredients. The cooking time was more like 2.5 to 3 hours. Nonetheless, the soup is good and definitely a keeper.

I made this yesterday and it was delicious! I'm not a huge lentils fan so I used 1/2 the lentils (1 cup) and the soup came out perfect. Even my husband loved it and he normally doesn't like veggies or lentils.

I have made this recipe over and over since I first saw it aired over a year ago. I immediately decided to make it that night, but all I had on hand was ground sirloin. It was so delicious, I have never made it any other way. The only other change I have made was to add two large strips of orange peel to the pot while simmering and then a squeeze of some of the juice to top it off at serving time. It really brightens up the flavor and everyone in my family loves it, even the 9 and 11 year olds!

This soup was very simple to make and packs a lot of flavor. No additional salt needed. Simple flavors blended together. I thought about adding a little pancetta or bacon initially and you probably could for a little bit more of a smoky flavor. Excellent just the way the original recipe is.

This was good but made way too much. I would say halve the recipe for sure but keep the onion and garlic the same for flavor. I will also add 1-2 Tblspns. of Worcestershire sauce for a bit more zip. This is a good hearty soup but it really made way too much. Served with garlic bread and a salad.

You won?t believe this story: I was born and raised in Baghdad, Iraq. Every year in Muharram, the month with which the Muslims begin their new year, a traditional and authentic meal that includes this soup is made by our Sunni?s neighbour on the 10th day of that month (the day is called ?Ashura? meaning 10th in Arabic.) This authentic meal is a huge meal (yield: over 40 people) that will be divided into many large portions and then will be sent (given away) to the neighbours, each portion size is dependable on the size of the neighbour?s family. When I was little, as the Islamic New Year gets closer I get excited and awaiting for this soup, because my Mom does not know how to make this soup. But now I guess it?s easy and yet very delicious with thanks to Giada.

I used half chicken stock and half beef, since that's all I had on hand, I added Worcestershire sauce to add back a little more beefiness, and threw in some dittalini pasta at the end because I like my soups more like stews. I left out the fresh rosemary because I didn't feel like buying it, and added dried pasta seasoning blend (basil, oregano, marjoram, rosemary, etc.) from my spice rack instead. It was really good, and my picky husband even said he'd have it again tomorrow night--good thing, because it makes a ton! It's a very hardy, nutritious, filling meal that is kind to the old grocery budget!

This soup is not only easy to prepare, but it's delicious, to boot! The longer it cooks, the better it gets. I used a different cut of meat than Giada called for in her recipe (I used cut-up sirloin steak), but as it's meant to cook and tenderize, I'm sure that most cuts of meat would be good. The lentils add a terrific flavor and make this a real "stick-to-your-ribs" dish. Get yourself a nice, hot loaf of French bread and you'll be all set!

I was a bit skeptical because I had never cooked lentils before (hint: the 2nd time I made this recipe I cooked the lentils ahead of time according to the package directions) otherwise the lentils in the recipe came out firm. Other than that minor change, I thought the recipe was GREAT and I will continue to make it.

This recipe could be made with or without the beef and it would still taste good. I doubled all the seasonings and added a few extra secret ingredients for flavor. The next time I make this recipe, I will use a left-over ham bone for the extra kick it needs.

I used leftover beef from a Sunday Sirloin roast and this was fabulous! Everyone loved it from my 'I'm not really a soup eater' husband, to a few kids under the age of 5. I did tell the kids that the lentils were small pasta-small fib. I even skimped on the lentils, only adding about 1.25 cups since I was not sure how they would be received, but next time I intend to add the required amt. Great winter soup. yummy.

I really enjoyed this stew. I also used just a cup of lentils - which I found was the perfect amount. I used 6 cans of low-sodium beef broth. I like that each individual can adjust the stew to his/her desired saltiness. I added some seashell noodles at the end, which made it a perfect stew for dinner - no need for bread. I was surprised that it tasted even better a few hours later when I went back for a little snack. I will definitely make this stew again. The recipe was easy to follow. Thank you!

I had never made a lentil soup before and planned on following the recipe exactly, but misread it and only bought one can of beef broth, so I dissolved 8 or 9 beef boullion cubes in about 4 cups of water and added that in. The only other thing I did different was I forgot to add the parsley at the end. The rosemary flavor seemed a bit strong to me, but maybe the parsley would have balanced it out. As others mentioned, the meat came out very tender, and made it a meal instead of an appetizer. My husband gobbled it down, and my older son gave it a thumbs up. The younger one didn't finish his, but he is a very picky eater, so don't take it personally, Giada!

The prep time is a real stretch, but the recipe is good. We added more garlic, a pkg. of (dried) wild mushrooms (reconstituted) from Trader Joe's. I had no beef broth handy, so used 3 beef bouillon cubes per 1 c. of water and included the hot water from the mushrooms. Also, I had some pancetta which needed using, so I cooked it and drained and added. Coeur d'Alene Jane

This is the first Everyday Italian recipe that left me a little disappointed. It was an easy soup to fix. The meat was wonderfully tender, but it was not spicy enough. In serving I had to add a lot of extra pepper to get the soup to wake up. It's very possible that the broth had something to do with it. I am used to using homemade stock but this time had to use store bought. On the other hand, it didn't have as many spices in it as other recipes had. So it was hard to say. Will probably not make again.

This was a relatively quick soup, an alternative to another favorite, Beef & Barley Soup, and was easy, healthy, and most of all tasty. If you aren't too fond of rosemary, thyme would be a great substitute.

This is a really hearty soup. Very simple to make with lots of flavor. I did add the whole package of lentils (16oz) but didn't notice much difference in the consistancy of dish. I will most certainly make again.

This was made by a fellow co-worker who brought in to share. We both love to cook. I found the soup to have a great taste. I think some of the reviewers who found it bland may have been expecting something different, something more bold in flavor. To me it was a perfect balance. True comfort food.

I made this with the baked pasta for friends, and they are raving about it! Having lived in Mediterranean Europe (where lentils are a staple) for a bit, I can appreciate a good lentil soup. Instead of the stew beef, I used sausage and added some extra lentils. Really great flavor! And the best part is....a bag of lentils is $0.81 at my grocery!

This is the first time I have rated a recipe, but not the first time I have made something of Giada's. This soup was wonderful. Being from the South and a family of two (my husband & myself) I did take some liberties with the recipe. I halved it for the two of us and substituted a can of Rotel for the diced tomatoes and it came out wonderfully hearty and spicy! Thanks for a great basic that was easy to embellish!

I used homemade beef stock and Bob's Vegie Red Mill mix which included green and yellow split peas, barley, lentils and baby alphabet pasta instead of all lentils. It worked out great.

I made this last night...I cut down on the broth and the lentils, and seasoned every step of the way as I sometimes find Giadas recipes to be a bit bland. This turned out fabulous, especially for a healthier dish! Great way to eat lentils!

Fantastic recipe-- I followed it exactly, just scaled it down for a two-person meal. The meat came out really tender-- almost like pot roast and while I considered just omitting the lentils, I'm glad I didn't because they added an unexpected heartiness to the soup. Served it up with crusty French bread and it was a hit-- not to mention very welcome as leftovers on a wintery day!

This recipe made a big batch, which was a problem as it turned out to be a disappointing soup. I've made several lentil soups, and have rarely had trouble getting the kids to tuck in. This soup just didn't have a lot of flavour. I put the leftovers in the freezer and will use them up when I need a quick fix for lunch, but won't use this recipe again.

So flavorful that even those who dislike tomatos or celery in their soup will find it satisfying. While the recipe calls for a lengthy cooking time, I found that even shortening the simmering time didn't take away from the flavor. The recipe was easy to make. The hardest part for me was the sizzling splatters from accidentally letting my stove get too hot.

This soup is just amazing. I made it just as directed and it was just superb. If I make it again I will probably subsitute 1/2 of the broth will lower sodium beef broth to cut back on some of the salt. The herb and tomato broth is delicious but a bit on the salty side for my taste. I did not lower my rating of the recipe because of this because the recipe itself was so good. Thanks for a keeper for many winters to come!

I made this soup and felt 2 cups of lentils were too much - I decreased to 1 cup and it worked better for me. Also the tomato was a bit overpowering as well - I might leave it out altogether next time and add more beefy broth taste. It definately needs something - maybe more salt or some other taste such as thyme or some small pasta would work - more like a minestrone.

Everytime I serve this soup, it gets rave reviews. I like to serve it with a crusty italian or sourdough bread and it is always a hit. I also add 2/3 cup elbow noodles to it in the last 10-15 minutes of cooking...excellent!

I was channel surfing and came across De Laurentiis making this soup. I tried it the next night and believe me, it is out of this world. It was very easy and ingredients were not out of the ordinary. I did have to cook it longer due to living at high altitude. It made a HUGE amount, but it was so good, who cares? I'll make it from now on, especially during Wyoming's cold, cold winters.

I just went by the show and didn't have the reciepe on hand. After I made it and had the fist portion I realized I forgot the tomatoe and parsley opps! Still tasted very good, then I add both ingredients and it was wonderful. Will be making this again for sure!!
