Too rich and creamy and unhealthy....
07/11/2008 at 11:29pm
User: Amanda from Lewisville, TX    User Rating:
One of my friends grandmother used to make this for me when I was younger and I loved it. I haven't had it in years. I made this because it is very similar and I didn't care for it very much at all. It is good if you like the creamy, soupy, cheesy stuff smothered over chicken and broccoli. Just too rich for me.

This is a great meal to bring to new moms (add a salad, good bread, and some brownies) -- my friends who have received this treat have all expressed their "High 5's" for the comfort value and yumminess of Paula's Chicken Divan!

Too much using mayo, sour cream, cheese, 2 cans of mushroom soup. Heavy and goupy, the other flavors get lost.

Simple to prepare. My family loved it including our picky 2 yr. old. I served it over rice which made it even better. I will definitely make this again. Thanks Paula for another fantastic recipe.

My favorite dish!

I LOVE this meal. I serve it over white rice that I cook in chicken broth. Also, I use low-fat soup and sour cream and it still tastes fabulous. In order to give the chicken lots of flavor I season it with garlic powder and pepper, then bake it before shredding. One other adjustment is that I use cayenne pepper instead of curry. So tasty!

Oh My Gosh - this is terrific!

My cousin first made this recipe and it brought tears to my eyes. I made it about three times in a row for my family. I like to add a little more curry to taste. It's such a great retro dish for entertaining - people don't expect Chicken Divan and they just love it!

The first time i prepared this i made a few changes, which met with my family's overwhelming approval. I used cauliflower on the bottom of the casserole, then a layer of grilled legs and thighs de-boned, then mixed the cheese with the remaining ingredients minus the and spread on the the top. I also put a layer of cheddar cheese on the top and sprinkled 2 tbs. of saki on the top of the mixture .

this is a good weeknight dinner, nothing spectacular but not bad. i used 1 can of cream of mush and added a little more miracle whip (no mayo on hand) and i didnt have sour cream so i used heavy cream. it still turned out well a little more saucy. i think it could have used more cheese, but then i am a cheesy lovin gal.

excellent

We all loved this dish. I omitted the curry and used chicken broth instead of the wine. I also made it with leftover white meat turkey instead of chicken but it was excellent. My husband asked me if there was any more after having eaten all the leftovers the next day. I will be making it again!

This dish is very creamy and definatley makes a whole lot. Didn't care for it much the first night but tasted better the next. I think I would leave out the mayo though. I think w/the cream soup and sour cream it's rich enough.

I would make this again...My husband LOVED it, and I enjoyed the texture & unique addition of the curry, although I'll probably use a bit less of it next time. (A little goes a LONG way.) It was a pretty simple comfort food to make.

Very Good Chicken Divan

User: SUSAN from Shelby Township, MI    User Rating:
I made this recipe for my family and it was a hit. However, I'm not a fan of curry, so I omitted it. For the chicken, I snagged a rotisserie chicken from the grocery store prepared foods counter and diced it up, saving myself some time and adding another layer of flavor. Without the curry, the rest of the flavors were very pleasant, including the lemon. And, it was great the next day at work reheated in the microwave.

So good...I made it lower fat!

User: Allison from Fayetteville, AR    User Rating:
I used light sour cream and Mayo and healthy request version of cream soups. This should cut quite a few fat grams and calories out of a rich casserole. It still tastes great! I grew up eating this casserole and I can't tell the difference. Paula's version is the best I've made!

User: Christena from Bridge City, TX    User Rating:
My husband and I usually love any recipe of Paula's, but we did not enjoy this one. We substituted chicken broth for the wine. The curry powder and lemon give this dish a very strong flavor. We also felt that is was too "soupy". If I were to make this again, I would cut out the curry powder and use only one can of soup.

Great Recipe, fast and easy

User: Rebecca from Sand Springs, OK    User Rating:
Ok, here is my take on this recipe. I watched this episode and thought it looked wonderful, so I thought I would try it. Mine didn't turn out as pretty as Paula's but it was still great. I followed the recipe to the "t" except I didn't use curry and I used 2 cups of shredded cheddar, I am like Paula on the cheese issue, you can't have too much cheese. I haven't ever cooked with curry, and feeding 3 children didn't want to try it on this recipe. My Chicken Divan didn't come out soupy either and I am the queen of funny taste, and didn't taste anything funny either. My kids loved it (15yr,12yr and 19mo)My husband loved it. I was just wondering on the people who said it was soupy if they didn't mix up the broccoli, soupy mix, and cheese. I almost made that mistake, because when they said layer it, I overlooked the part that said then mix it with a spatula until I almost put the topping on. I cut my prep time in half my adding 3 bigger cans of chicken (from Walmart at $2 a can), instead of cooking chicken. GREAT RECIPE, FEEDS A BUNCH!

User: Kelly from Mooresville, NC    User Rating:
I was excited about the curry and wine mix compared to other recipes I'd tried, but it didn't turn out too tasty. (Husband and I threw out the extras instead of keeping.) Up side - can easily be split in half for a smaller group or can be prepared for a cook one now and cook one later dish. Perhaps I should've prepared the chicken differently...

So Good!!

This recipe for Chicken Divan is so close to the recipe my Mom made for us growing up I can't beleive it...really terrific. I love the hint of curry...I agree with a previous review that cubing the chicken works better than shredding. I have made this dish many times, always to rave reviews...even from Mom!!

too rich

We would definitely never make this again. I should have guessed that it would be too rich with cheese, mayo and sour cream. I also thought the amount of curry was to much. I only used half the amount.

A Family Favorite

User: Anonymous    User Rating:
Just a suggestion to cook (not just thaw) the brocolli slightly before adding, as it was a bit too crunchy as directed. (Just a minute or two more should do.) I also substituted sherry for the wine, and it really pulled together the flavors of the other ingredients. This was a big hit with the men in the house.

Had to Throw Away

User: Anonymous    User Rating:
This was inedible. We threw almost the entire pan out, which was a shame because all of the ingredients made it a fairly costly recipe. All I could taste was hot mayonnaise, which is as unpleasant as it sounds. Will try something else from Paula instead -- without so much mayo!

Very easy

User: Lori from Flagstaff, AZ    User Rating:
I read the reviews for this and decided that poaching the chicken was a good idea-I do this often ahead of time and freeze them when I have extra. Like having rotisserie chicken in your freezer. Anyway, I poached the chicken, used cream of chicken soup (personal preference) and used less sour cream more mayo, also personal preference. We love curry (I make my own) so I doubled it. Also had a handful of frozen cauliflower and threw that in with the brocholi. An excellent addition. I halved this recipe and still there was enough for two meals for 2 people!

This recipe was great! Insted of using Cream of Mushroom soup I used Cream of Chicken. I didn't use the wine but the other raters said it needed the liquid so I put about 1/2 cup of milk. I cut my chiken in big chunks and sauted it with garlic. I didn't use the curry powder but that was because I didn't have any. I may try it the next time.

I made this for the first time tonight and it was a hit, even with my daughter who won't eat anything. I especially liked the fleeting note of curry. It made enough for two meals for the four of us so that's even better! I roasted chicken breasts for the chicken meat so it was extra flavorful. Thanks Paula!

My partner and I enjoyed this recipe but thanks to other reviews, I reduced the sauce just a bit to make it less creamy. I would serve it over rice next time. You have to like curry to enjoy this beacuse even a small bit of curry goes a long way :)

Very Tweakable

User: Lori from Flagstaff, AZ    User Rating:
I also used cream of chicken soup (personal preference). Doubled the curry (I make my own and we love curry). Also used more mayo than sour cream.(Also personal preference). Used fresh brocoli (cause I had some I needed to use) and added some frozen cauliflower cause I had just a little left in the bag. I used garlic bread crumbs but next time I will use plain as it seemed to be too salty. But I halved the recipe and there was still enough for 2 meals for 2 people. Corn would also be good in this.

I've never tasted anything like this!

User: Alicia from Shoreline, WA    User Rating:
Whatever else I may have to say about this dish, the first thing that came to my mind when I took a bite was "I have never in my life tasted anything like this!" My first impression was that might not be such a good thing. This dish tastes so odd that it takes a few bites to get used to. After several more bites I found myself liking it more and more though. I halved the recipe because I'm cooking for 2. However, just half of the recipe makes a full casserole dish. Other than that, I followed the recipe exactly. I didn't have any problem with the dish being too soupy. Since I'd seen that a lot of people had had that problem, I drained my broccoli with a cheese cloth to get all the water out. The biggest problem I had with the dish is it's a bit too flavorful. It doesn't taste as creamy as you would expect it to. I contribute that to the lemon and curry, and also the mayo. I could really taste the mayo. However, matched with rice the dish mellows a bit. Surprisingly, the brocolli really makes this dish. It's the perfect complement to the flavor of the sauce. In fact, I may add a bit more brocolli next time I make it. I'm giving the recipe a 4 because due to it's unconventionality a lot of people probably won't like it and some people will absolutely love it. A 5 for me is something I think everyone will love. I do think it's worth a try though, and I'll probably make it again, depending on how my sweetie likes it.

I never thought I'd write the title of a review as, "too creamy." But this recipe was not a hit with my family. The topping didn't give it enough crunch for all the smooth texture. And the curry flavor was distracting.

I took this dish to a hen party and everyone loved it. I'm not crazy about broccoli so used peas instead. The curry is just enough to give it a different flavor. I also made it a little more figure friendly by using low-fat sour cream and low-fat mayonnaise. It still tasted great.

Made this with leftover smoked Thanksgiving turkey instead, and it was really good. I'm not usually a fan of "cream of"s, but as my husband LOVES casseroles and I needed to use up the turkey, I tried it. I agree that it's pretty saucy and rich, so it needs to be served over rice (and it looks nothing like the picture).

Like some of the other reviewers, I found the tastes in this dish did not come together as well as I had hoped. I followed the recipe as written. Overall, my family and I liked it alright, but thought it had an unusually sharp taste. Maybe cutting out some or all the lemon juice would have made it better? I liked the crumb topping and will definitely use it again for other things. While this dish certainly was far from being a failure, I doubt I would make it again.

I halved this recipe easily, having only two to feed. The first time I did add the curry, and left it out the next adding garlic powder instead. I liked it both ways. The curry does give it a different flavor entirely...try it at least once. I used fried onions as a topping, for low carb reasons...my husband loves this! This is also one of those kinds of casseroles that get better overnight, always even better the next day! Thanks Paula!

I did not care for this dish. It is just to rich for me and I do not like curry. However, I have made it 3 times already for my husband. He loves it. I cut the recipe in half as others have done but it came out too sloppy. Definately have to halve ALL ingredients, including the wine, and measure carefully. I whipped this up last minute last night. Had to use boneless chicken breasts, cut in bite sizes ~ worked fine. Had only 1 can of soup but it was plenty. Added a smidge more mayo and sour cream to compensate for soup deficiency. Also used fresh, steamed broccoli because that is what I had. Also did not have white wine so used a pinot that I did have and it was also fine. Did not have cheddar so used gruyere and a couple of other hard, white cheeses. All in all, it was delicious and proves the flexibility of the recipe. Would definitely make again and would like to add mushrooms and probably more wine and curry. Just personal taste. This recipe can tolerate a good deal of improvisation which is an excellent quality in a good recipe!

This was a really good recipe. I did make some changes to it, that is why I gave it 4 stars. Instead of curry, I used dejon mustard. I also did not use as much chicken as the recipe called for. My chicken was leftover BBQ chicken from the night before, so it had lots of flavor. I also added cooked brown rice to the bottom first before the veggies. It made for a complete meal. My husband almost went back for thirds!!

User: Jason from Eglin, FL    User Rating:
in my family. This is not quite as good of course (sorry Paula!), but still good! Some variations our recipe uses: semi-cooked yellow rice (Mahatma saffron yellow) in bottom of buttered casserole (what else); semi-steamed whole broccoli stalks layered on top of rice; cooked chopped chicken layered on top of broccoli (breasts cooked whole in seasoned water of Holy Trinity and rosemary, thyme, s&p, and a lemon and then chopped); cream of chicken soup instead of mushroom; no sour cream; grated parmesan in sauce mixture that's then poured and smoothed over the chicken; topped first with grated cheeses as hinted, then with breadcrumbs, then with butter or Pam spray. For the curry haters, there is no substitute. It makes the dish! It's even better the next day. Don't forget to drain, drain, and drain chicken and broccoli after they cook or you will have a watery mess in the end.

...but it's sure not Chicken Divan - which is par-cooked and well-drained broccoli topped with cooked, skinned chicken breast, topped with a simple white sauce flavored with S&P, a touch of nutmeg, and a couple of tablespoons of sherry, sprinkled liberally with good Parmesan, and cooked quickly in a hot oven. No canned soup, no cheddar, no curry powder - just a simple, elegant, and DELICIOUS combination of flavors. Takes maybe 45 minutes to make, tops, especially if you have leftover roast chicken. No need to even use a recipe, if you have even the most rudimentary cooking skills. Just trust your taste buds and adjust accordingly. As Chef Gusteau said in "Ratatouille," "Anyone can cook!"

Really Delicious--Even Frozen!!

User: LISA from Northridge, CA    User Rating:
My kitchen is in demolition-mode right now, as we are undergoing a huge remodeling project, so this was one of a few dozen casseroles I prepared in disposable foil roasters then froze to cook in my Nesco Roaster during the renovation. We finally tried this one the other night--oh, my, it was so delicious!! I skipped the curry powder (we're not huge fans of it), used Healthy Request soups rather than regular to reduce sodium and fat (only had one Cream of Mushroom, so I used a Cream of Chicken with it, which didn't hurt it a bit), and low-fat versions of mayo and sour cream. My family likes cauliflower as well as broccoli, so I used a package of each, which happened to be 1-lb each, rather than the 10-oz boxes specified in the recipe, but it was all absolutely wonderful with the slight tartness of the lemon juice and the delicious flavor of the wine. I didn't have fresh bread crumbs, but found Panko crumbs to add a really nice crunch when browned on top with the cheese. We found it to be a bit soupy (could be because I froze it??)even with the extra vegetables, but we ALL had seconds and commented that next time I could either add cooked penne pasta to the mix, or spoon it over mashed potatoes to enjoy with all the sauce. I was so glad to have the home-cooked meal during our renovation, and my family can't wait until the kitchen is complete so I can make it again. One further note: I would substitute cheddar cheese for the parmesan on top, as the topping was rather salty for us. All in all, absolutely delicious recipe, one well-worth the effort. We loved it and appreciated the great flavors. Thanks, Paula, for a terrific recipe!

User: Jessica from Dover, FL    User Rating:
Ok, so second time making it. I cooked my tenderloins (lb package) in the skillet with a vidalia onion, house seasoning, and then chopped them all up. I used a can of cream of broccoli and a can of cream of mushroom. I used chicken broth instead of wine (me and my husband dont like wine at all, so i never have any around the house). I measured like rachael ray, (no measuring utensils) using a little more sour cream than mayo (i hate mayo). And get this, we didnt have lemons, so i added a squirt of yellow mustard. In the end it was really good and I liked it much better than the first time around. Next time I may add some cooked elbow macaroni to hold the sauce better, and definatly a crispier crust is need... french fried onions anyone!? so if you arent a fan of the regular way, try my way, and you may be surprised!

I modifed this recipe slightly. I pre-cooked chicken in the slowcooker so it was very tender and nicely shredded. I only used on can of condensed cream of mushroom soup. Instead of wine I used organic chicken stock and added extra to make up for the missing soup. It was amazing! I also added a can of mushrooms for extra. This is definitely on our monthly list. Not low fat, but delicious for an occasional meal. Everyone went back for seconds. Next time, I'll add more broccoli.

I took out the red wine, since we don't have our use alcohol and just put a little bit of water and it didn't make a difference. I also added a bit more chicken and broccoli to make it a little heartier. The recipe was so simple and easy...it was easier than the other Chicken Divan recipes on here. It was wonderful and gone in minutes! Thanks Paula

I've made this before a couple of times following the recipe exactly and just thought it was OK. Tonight, I decided to tackle it again...I cut out the wine, cooked the chicken in a pan (with butter,EVOO and red pepper flakes), used fresh broccoli, a high quality sharp chedder cheese, and organic cream of mushroom soup (NOT condensed), and panko bread crumbs. Yes, it does come out with a bit of a gravy consistency, but I always make mashed potatoes with this recipe so it was like a little gravy for the potatoes. I (and my husband!) were much more satisfied with these few, simple changes.

It makes a lot, I used a 9 x 13 pan. I have other "Chicken Divan" recipes, but the sauce on this one has a better flavor. Unlike some of the other reviewers, I LIKE the flavor of the curry powder in this recipe. The only thing I will do differently next time, is precook the broccoli. It was a tad crunchy which my family doesn't like. Also, I boiled the chicken, but I think it would be more tender if it was sauted. Thanks for another great recipe, Paula!

Mine came out yummy, and my three year old twin girls loved it.

I would make this again and add chicken stock instead of the white wine and other seasonings instead of the curry powder. Make a ton and I had to put it in a much larger casserole than stated in the recipe. I would half this next time because there are only three of us. This is very rich and creamy with a nice mix of ingredients. Thanks Paula will try again.
