As for the cake being too dry, I thought the suggestion of apple sauce was a great one, but it's also important not to beat the mixture too much after the flour is added. Try to have everything prepared and beat just enough to get the ingredients combined and then stop. If you over beat the batter, the cake will turn out stiff and dry. This was so delicious! I will say, the cake itself is very heavy- the texture and taste is very close to a pound cake, but, the overall taste was excellent and after everything was put together, even with a heavy cake, it balanced out very well. I did not change one thing. It is very fattening but, is desert suppose to be good for you? I love making homemade cakes for special occasions...But a year ago this past October I was diagnosed as Type I Diabetic so I have to watch my Carbs and sugar intake. So when I bake I tend to use more Splenda than sugar. So for the cake part I used Splenda. And for the filling I used 1 cup sugar and 1/2 cup Splenda and it came out great. But for the frosting I used 1 cup sugar and 1/2 cup Splenda. I should have used all sugar...the frosting never "Set" really. It stayed pretty soft, and I'm sure it was due to the Splenda. At Christmas time we tried to make fudge with marshmallow fluff and chocolate chips and Splenda(instead) of sugar and the fudge never set right either. It stayed pretty soft. But everyone loved the cake...even my six year old nephew, who at first didn't want cake and ice cream, but when he saw the cake he changed his mind! First of all, if you have a problem with any of the ingredients, substitute something that you can use that will work. Example, I am allergic to whole eggs so I use the egg substitute -- as Rachel Ray says, what's not to like -- it works just fine. For the lemon filling, I will buy lemon curd at the grocery store, and use a cream cheese frosting. Doesn't toasted chopped nuts sound just great in the frosting? Or coconut? Or just plain cream cheese frosting? In essence, you make do with what you have. It doesn't have much flavor though. The only real flavor comes from the lemon filling and I don't think there is enough to flavor the entire cake. I knew I couldn't stop with it so runny, so I kept on stirring. The cake itself was a little drier than I expected, but not unlike the kind our grandmothers used to make. Since I haven't made this yet, I was wondering: what could I substitute for self-rising flour and could I make this in a 13x9 pan? If so, for how long should it bake? I'd rather ask you guys before experimenting and messing up what looks like a great recipe. I poked long skewers down into all three layers to hold the layers from slipping after the lemon filling went on. Next time I would place the filling on the layers when they're warm and poke holes to let it drip into the cake. I'm not a fan of the 7 min. frosting so I would frost the cake with whipped cream. None of my family liked it and I took the left overs (1/2 cake) to work and after 2 days, there was still 1/4 of the cake remaining. I didn't like the hard, crusty "frosting". Hate to inject reality into this but butter, sugar and eggs form the base of most cakes, period. Angel food is probably the only nearly fat-free cake out there. Eat that if you're worried about fat and calories. Better yet, don't watch Paula's show. When has she EVER made a recipe that didn't have butter in it somewhere? The only thing that I could find wrong in any was was that the 7-minute frosting was a little gritty. It was sort of humid when I made it so that could have possibly had something to do with it. I had difficulty with the lemon filling which never set up. I wound up adding 2 tbsp of instant lemon pudding mix to get it to set up. Had the same difficulty with the frosting, but had nothing to add to get it really to set up. It sort of oozed over the top of the cake. Cake was NOT as pretty as the one Paula did, but it had a fantastic taste. Maybe next time I make it, it will come out better.
