The pesto did spice it up a lot. Next time I am going to add some fresh herbs and incorporate shredded mozzeralla cheese instead of the chunks. I added 1/2 cup green onions chopped finely and 1/2 lime (squeezed over potato mixture. I then followed the rest of the recipe and served with shredded mozzarella cheese and chives on top. It was a BIG HIT! The left overs the next morning we reheated in the microwave and placed a poach egg (cooked in rice vinegar, water and garlic powder). BOY THAT WAS GOOD TOO! It is just the two of us, so I used two potatoes, which made one decent size cake for both of us. Also, I had a packet of Knorr pesto sauce in my pantry, so I just used that. I did use fresh mozzarella for the middle of the cake, but I used the mozzarella in a bag for the top. This is one of those recipes you could make every week and never get tired of it! |
