much better than expected

Tuna cassarole always brings childhood memories of tuna helper, YUCK! My husband talked me into making it, WOW. This will be a go to for quick and easy meals. I did add a bit of tabasco for zing and may try slivered almonds in future instead of potato chips

Caution: Choose Potato Chips Carefully!

This recipe really was great, but the potato chips I used were a little too done/dark. Initially, they tasted great, but when I heated up the leftovers they had a real burnt taste to them...we ended up throwing away most of the leftovers. If I did this again I'd use plain old Lays chips.

Needs more Tuna (and peas)

I followed this recipe exactly and it was good. But...for the quantity of noodles, more tuna was definitely needed and for those of us needing a fix from the past, you can't omit the peas!

Great alternative to turkey.

I tried this recipe for my friends at work as an alternative to the usual turkey tetrazzini and it was a big hit. It has great flavor and the potato chips on top are a great way to get flavor and crunch on the top. The chips get soft when not eaten right after baking, but the dish still tastes great as leftovers.

WOW, What a great recipe. I made it just as written the first time and it was great, but the second time I used crushed RITZ crackers instead of Potato chips and it was just a bit better.

Tasty Tuna Tetrazzini

I thought that the dish was very flavorful. Since I didn't have all of the ingredients, I used whole wheat rotelli for my pasta. I didn't have chips either, so I mixed parmesan cheese and a little olive oil and spread it on top of the casserole. Instead of baking it, I broiled it for about 3 minutes. I made sure that I had thoroughly warmed everything in the saute pan before putting it under the broiler. I usually don't measure out my spices either, but I used the spices that Emeril suggested, and it was so delicious.

Long and short

Usually I use a quick, cheater's recipe involving canned cream of mushroom soup which takes about 30 minutes to bake. This takes more time in favor for a start-from-scratch approach to the cream sauce. The thyme also adds added flavor to the dish that was missing in my "cheater's" recipe. The results were delicious and far better tasting than when using cream of mushroom.

Awesome, but use fewer noodles!

Excellent recipe, and even tastier the next day. We felt there were too many noodles, however... the 8-ounce bag would have worked better than the 12-ounce. Just a thought...

Fab-o Delight

My husband and I enjoyed this recipe until the casserole was gone; it lasted for 3 days. We used Salt & Pepper Kettle Chips on top - tremendous flavor - and used macaroni instead of egg noodles. I thought the dish was creamy and loved the flavor from the white wine. This recipe is definitely a keeper!

Comfort food at its finest

With the start of fall, my husband and I were hankering for a comforting casserole. This did the trick! It was perfect as written - we added peas and twice the mushrooms to up the veggie content and we went back for thirds. The sauce is creamy and delicious. Easy to make and will definitely be part of the rotation.

Easy and plenty of flavor

I recommend this recipe, it makes alot so there will be plenty of leftovers. Kids will eat it up, I added a little more of the Essence seasoning mix and a little more cheese. Everyone enjoyed it.

This is too rich! No, not the tuna tetrazzini, I mean the 3 star rating and comments from "Good, but not GREAT" from Katie of Morgantown, WV. With all of the substitutions and editing you did to the original recipe, you do not have the right to comment & judge - please don't write a review if you haven't made the dish.

okay I suppose

I was really excited about making this dish. I didnt really care for it but my family loved it. I think the potato chip crust is what turned me off of the dish. However you should try it if you like it.

good, but not GREAT

I thought this recipe WAS good, however I honestly didn't think it tasted very different from the college-student version I made years ago with canned cream of mushroom soup. However, it was tasty. It makes a huge amount, though, so if you're cooking for a small bunch, I'd recommend halving it. I subbed 1/2 vegetable stock, 1/2 mushroom broth for the chicken stock and wine amounts, and used 1% milk rather than heavy cream, to keep it on the healthier side. Also halved the parm and used the other 1/2 amount in Gruyere. Had a good, deep flavor, but nothing really stand-out.

This blows every tuna cassarole dish that I've ever had out of the water! No more regular tuna and noodles for me...I would suggest to make sure you prep all items first...because of there being so many steps adding this and that, it got kinda stressfull prepping right before adding to saute pan...ALL in ALL, if i didnt know any better it tastes like a dish out of a 5 star establishment!!

yummy

the only thing I would change with this recipe is not to bake it in the oven. It got a little dry next time I will serve it right after I mix it together.

This recipe is absolutely lovely--It's simple to make because Emeril walks you right through it, just as if he's right there in your own kitchen! Sometimes, at the very end before you pop the casserole in the oven, I sprinkled "salt n vinegar" potato chip crumbs over it, just to compliment the tang of the tuna in this dish! It's a success every time!

Amazing!

I substitute cooked chicken for the tuna and it turns out great. My husband, who despises anything that even looks like a casserole, loves this. Very flavorful and worth every bit of effort - definitely a keeper!

Loved it. What a nice change from the usual boring tuna casserole. Loved the spices. My husband dislikes mushrooms, so I omitted them. Was still very good. We will make this again.

Best ever! I never knew canned tuna could really be this good. Everyone should know this recipe by heart, it's so flavorful and best is you'll probably already have what you need to make it w. in your pantry. Rock on.

A lot of ingredients. I put too much of something hot, maybe the pepper or the Emeril essence. I used 2 cans of broth because to use the required amount you have about a quarter cup you'll need to toss.

wonderful

My husband cooked this dish. He doesn't like mushrooms so they were omitted. He also cut back on the amount of green pepper used as our 8 year old doesn't like them. Even with these omissions the recipe was delicious. This is going into my recipe box!

Wow! This is really fantastic. The lemony taste from the thyme really adds a tasty twist to the albocore tuna that really distinguses it from more 'basic' tuna noodle versions. Its certainly more elegant and is a 'designer comfort food.' :) I would definitely serve this to company, and not just the family. I served it with steamed brocolli and rolls, and people when back for thirds and fourths!!

This dish was received very well by the entire family. Perhaps you would ne interested to know that my husband watches all the cooking shows, particularly Emeril's, and he is always the cook for these recipes. He won't touch the computer so I am acting as his secretary and taste tester.
