I tripled this recipe and made it for a holiday office party - what a reaction! Everyone loved them and they were the perfect size to grab and go. The platter was empty in no time.

I saw Giada make these on her show and decided to make them for Christmas. They were a huge hit. Not one sliver of carrot was left. The recipe is so easy and takes about a New York minute to make. Not sure how this recipe got such great reviews but it's pretty bad. Used good balsamic and olive oil to no avail. It all went into the garbage.

I made these for my Bunco group and they all liked them. Maybe not as much as I did, but they were a hit. It was fun to have something different they hadn't tried before. I love these, personally. The taste is a bit different from anything I'm used to, though. Thanks for a great idea and I would recommend trying them!

When I brought these to the table at a weekend BBQ, I was asked by a stranger (to me) if I were a professional chef, even before trying them. She and the others at at that table dove in for a couple each. Loved 'em. (So do I!) Simple, elegent, but not inexpensive when you make 30 which was exactly 1 lb of well-sliced proscuitto. Oh, yes, there were a few left over, but once refrigerated they got BETTER. Moral, make 'em ahead and chill 'em a bit. They seemed moister and chrispier. Thanks Giada!

I HAPPENED TO LOVE THESE CUTE LITTLE BUNNDLES BUT SOME PEOPLE THOUGHT DIFFERENTLY! MORE PEOPLE LIKED THEM THE DISLIKED THEM! WOULD DEFINITLY MAKE THEM AGAIN! INTERESTING TASTE!

Sure these little guys are perfect as finger appetizers, even as cold hors d'oeuvres but after tasting one, I munched down the rest and called it dinner! I used a little extra vinagrette as the recipe may not be enough to coat all the shredded carrots. Also used a mandoline to shred the carrots as per the show, as a food processor would probably butcher them. As one who sees the word "health" in a recipe and runs the other way I can say this shattered that stereotype. Healthy or not, these are wonderful little snacks of joy!

I've used this recipe for a fast easy, fulfilling snack, yet also to entertain as a quickie hors d'oeuvres for small dinner parties at home. I love the balsamic carrot 'slaw' that compliments the Prosciutto di Parma that I used. Thanks so much for this... multo bene!!

These bundles are an interesting mix of flavors. Next time I'll use more carrot and less vinegar. I made this as a side dish for the filet with gorgonzola and porcini sauce, but it would also work as an appetizer.

I'm always looking for fresh ideas like this one. It's easy, original and tasty. I personally am not crazy about vinegars, but it was yummy none the less. I would like to try this recipe with ranch in lieu of the vinegar & oil.

I agree, this would be an excellent appetizer, but also goes great as a side. I found that I needed a lot more than 1/2 cup of the carrots, though. (More like 1 cup at least). Great flavors! Easy to do! Definately a repeat.
