My husband and our friend went for seconds within about 5 minutes. I did cut back on the butter and used fat free sour cream and low fat cheddar and they were amazing. These would be great for holidays. My friend called them "grown up potatoes" and he is so right! The peppers and onions added so much flavor and texture - it was delicious. You can fix it for a "mashed potato type dinner" or a "baked potato type dinner" and it will fit right in. You can make it ahead of time and bake before serving or reheat. It makes a good leftover, as well. I found that it was a little too buttery, so I've cut the butter by a fourth and by a half. I liked it better with less butter. But, as if often the case with Paula's recipes, the instructions left a little to be desired. For example, it calls for 1 cube of butter but then doesn't specify if some of that butter should be used to saute the onions and peppers or if the butter over the potato layer should be melted and drizzled or cubed and dotted. I used a tablespoon of the butter for vegetable browning and then cubed the rest and dotted the potato layer. It worked, but I'm still not sure that is what I was supposed to do. It also didn't specify how to "cook" the sliced potatoes. I baked them.
