I thought this recipe might be a little too much, with all the butter, sour cream, bacon and cheese. But Paula knows best. We made this with grilled steaks one night and it was amazing. Everyone loved it and none was left. It is a family favorite that we make on special occasions now.

This is an amazing side dish. Its even great as leftovers, my roommates even had it for breakfast the next morning. There was one change that I made to the recipe, though, and I think it made it taste even better. I added a block of cream cheese to the mashed potatoes that were used in the bottom of the dish.

I made these this past weekend for a casual dinner with friends - they went crazy over them! My husband and our friend went for seconds within about 5 minutes. I did cut back on the butter and used fat free sour cream and low fat cheddar and they were amazing. These would be great for holidays. My friend called them "grown up potatoes" and he is so right! The peppers and onions added so much flavor and texture - it was delicious. I will DEFINITELY be making these again very soon.

I just made this dish. It was okay; nothing amazing about it. It lacked flavor - even after I added 3 cloves garlic to the onions/pepper mixture. The worst part, though, was the 1/2 inch of butter/grease left in the bottom of the casserole dish. Definately NOT something that I would want guests to see on my dinner table!

great size easy to fix. The dish is a little on the bland side by the recipe. I added some garlic salt and some more butter, but thats just me. I love this dish for the night after mashed potatoes.

We loved this! I used mushrooms rather than the peppers and added cheddar cheese atop in the dish. I used baked potatoes for the second layer and then added more cheese. Excellent!!!

This is fantastic. Everyone I've served it to has loved it. You can fix it for a "mashed potato type dinner" or a "baked potato type dinner" and it will fit right in. You can make it ahead of time and bake before serving or reheat. It makes a good leftover, as well. I found that it was a little too buttery, so I've cut the butter by a fourth and by a half. I liked it better with less butter. It is a wonderful side dish with prime rib!!!

It was simple and fantastic! I didn't have time to cook and slice potatoes so I used a box of Betty Crocker Seasoned Skillets. I cooked the potatoes as directed and omitted the season packet. Saved time. Was a huge hit at dinner. Next time I will not use as much butter.

We enjoyed this dish. But, as if often the case with Paula's recipes, the instructions left a little to be desired. For example, it calls for 1 cube of butter but then doesn't specify if some of that butter should be used to saute the onions and peppers or if the butter over the potato layer should be melted and drizzled or cubed and dotted. I used a tablespoon of the butter for vegetable browning and then cubed the rest and dotted the potato layer. It worked, but I'm still not sure that is what I was supposed to do. It also didn't specify how to "cook" the sliced potatoes. I baked them. But all that aside, it is a tasty dish.

This was just OK. I would have preferred a stronger sour cream flavor, and I added more to my own serving after I dished it but I still felt it was missing something. I used instant mashed potatoes instead of mashing them from scratch for ease of preparation because I didn't have leftovers, but that didn't seem to cause any problems. My mom complained that she didn't enjoy the peppers in this, and she added extra cheese to hers. With adjustments this could be improved.

At the Church I work at here in Storrs, CT, we have a weekly staff luncheon. Support staff and the clergy all gather in fellowship over a multitude of homemade dishes from each person in attendance. I recently brought this potato dish and it was the hit of the luncheon. Fr. Jim Stated? these potatoes are heavenly?. Not bad coming from a Priest!

My family loved this! I made a few minor changes,like cutting back on the butter and I used my own spice blend in place of the house seasoning,but followed the recipe otherwise.It was delicious,there wasn't one drop of anything left in the casserole dish. My husband asked me to make it again very soon. It takes a little work to put together,but it is well worth it.

I don't understand the butter ingredient in this recipe. Do you saute the onions and peppers in the 1 stick of butter? Or is this saute step using extra butter? If it's extra butter, do you then melt the 1 stick of butter or just cut it in pieces over the sliced potatoes?

This was just dellicious, especially paired with Paula's beef stew. I did use light sour cream, which didn't seem to hurt in any way. I also remembered to put one cheese layer on top of the sauteed vegetables, which Paula evidently forgot to mention in her recipe and admits to having forgotten to do on the show. I'll be making this one often!

I made this casserole for Christmas dinner and everyone enjoyed it. Has a great flavor to it! I would suggest baking in a 2 to 2-1/2 quart cooking dish, and add another two cups of mashed potatoes at the bottom (for a total of four cups, instead of two cups). This feed 6 people....yummy!!

This was simple and tasty. I was a little hesitant with the idea of onion and peppers, but it made it delicious. I made this and substituted fat free sour cream for the original sour cream and it tasted great. There was too much butter and next time I would use a lot less, maybe 4 tablespoons. This would be great with other cheeses as well as meat and used as a main dish. Will definitely make again.

This is a great recipe to use up holiday leftovers. I used leftover horseradish mashed potatoes as the base, and hash browns for the top (I didn't have sliced potatoes handy) and it was a hit.

My daughter doesn't like peppers but she did tried this dishes because she said it looked and smelled good. It was very easy and went together fast I made the dish for our christmas dinner. My husband went back with his plate three times and we only had enough left over for two people and I doubled the recipe.

Paula, you're our new best friend! I'm going to include your sons too, just because they are really cute :) My family and I absolutely LOVE this recipe. Perfect the way it is, but next time I may experiment and substitute the peppers for sausage, mushrooms, or really anything you like could be added. The only thing I did change was instead of using your House Seasoning I used Tony Chachere's Creole Seasoning. Keep up the best dishes Paula. We Luv Ya !!

This is a meal within itself. It is a very filling side dish but it is so good you want to just eat it by itself. I made this for my finicky family and they ate it without complaint! That is a feat within itself! This is a recipe that I will be using for years to come. I have added it to my holiday meals and it is a total hit. I would suggest it to anyone. It tastes like a complicated dish but is so very easy to make. People will think that you are a whiz in the kitchen even if you are not.

Found this recipe easy to make and very tasty. If you plan on making it ahead of time and reheating it later I would suggest cooking it without the cheese and reheating i later putting the cheese on it at that time.

I really wanted to like this but every ingredient was so rich my husband and I could not eat very much of it. It was way too much butter even though i only used 1/2 a stick. All that with the cheese and the buttered mashed potatoes with sour cream on top was total overkill. Even the onions in the middle that could have cut the richness a little were swimming in butter. My husband said it looked like one big conglomeration and not very appealing.

I haven't tried this recipe yet. But some of the reviews have the house seasoning quantity all wrong. The House Seasoning recipe/quantities are for about 6 months usage (it does say you can store for 6 months). The quantity is NOT for this one recipe. I use the house seasoning all the time instead of regular salt and pepper. It's great!

This was the best basis for the creative mind...with potatoes I have ever had. I love potatoe skins at the restaurants...but find most of the skins are tough and chewy, so this dish is the ultimate...no skins! I tweaked it to my tastes...and it was Heaven on Earth (thanks Paula). I happen to be blessed with an oven that you guess at the temperature and hope for the best..and tis' was truly the right combination and temperature even for my oven. I added cream cheese and fresh parsely to the mashed potatoes...and then red bell pepper, but could have used any color would not have mattered...i thought red was pretty, and then...all the other stuff...but so many things could have been added...e.g. jalapenos, salami, sausage...and Chipolte Jack cheese/Colby/Longhorn/Cheddar etc all mixed together....what a delight. I have to admit...I read the recipie..and when I made it..I went by what I...the cook felt like putting in it...did not measure one darn thing! Paula..keep on cooking..and thanks for the memories! I made this for a company picnic and just loved it. It's different than the typical hash brown potato casserole we usually make and the combination of potatoes was delicious. Next time I may use a little more mashed potato on the bottom layer to build it up a little but it was still very, very good!!!

I just loved this recipe. I think Paula is the best chef ever and i was shocked to see the reviews of some of the members. How can anyone put the whole mixture of house seasoning in 1 casserole. This dish was so good! My family - even pickey 13 yr. old daughter - loved it. I will definitely make it again. The only things I changed were that I used all mashed potatoes - next time I'll try it with sliced except I think I'll put the sliced potatoes on the bottom. And I left out the peppers.

These were a nice change from the typical hashbrown casserole. The only change I made was I used a red pepper instead of green. The only thing I would do differently is mix the sour cream with some cream cheese so it doesn't curdle next time... great blend of flavors - thanks Paula!

Sooo goood! To change it up, you can use any veggie you like on baked potatoes. This is a recipe that will be used so much that a few easy variations will be needed. Change up the cheeses, add some heat, like peppers or red pepper flakes and some various meats. Great recipe, Paula!
