Fuses perfectly with cheese -- even with smoked mozzarella and sharp cheddar! You could probably get by with a bit less sugar than the recipe calls for. No ripe pears so I used dried peaches. I omitted the lemon and lemon zest because it tasted so terrific without. I loved making such a delicious dish which could be made ahead and which does not have lots of fat and other bad things.
