I don't always have as much time to cook as I like, so I used a whole precooked rotisserie chicken from the store. I stripped all the meat off (I used both the white and dark meat). I also used a package of premade pie crust from the refrigerator section of the grocery store. I also blanched the frozen pearl onions along with the carrots. I'm glad I did, they were cooked perfectly. This recipe is so flavorful. My family loved it! I want to make the real homemade version when I have more time. Even with my shortcuts, this recipe is a winner!

Oh Holy night. This recipe is to die for. I usually don't like food like this(hearty man food I call it) but it was wonderful and so flavorful!! The blanching of the carrots ensured done-ness but also left them with a bit of a crunch instead of soggy. I loved the pearl onions too. The best idea of it all is to salt and pepper the pastry so it forms a nice, seasoned crust. My picky picky picky fiance gobbled it up! **A note to reviewers who get angry about the "fattening ingredients": Read the ingredients before making the recipe and if you dont like the caloric content of what goes in, DONT MAKE IT. Don't give a recipe a negative review because you dont like the content of the ingredients. Just dont make it. It's really pretty simple.

I DONT EAT POT PIE, I MADE FOR MY HUSBAND AND DAUGHTER, BUT I TASTED THE FILLING TO MAKE SURE IT HAD ENOUGH SALT AND I COULDN'T STOP EATING IT. YOU COULD EAT THE FILLING BY IT SELF. This recipe is awesome. It had my 14 yr. old daughters highest praise. She said it was the "best ever!". I asked her why and she said it was the creamiest and most tasteful. I did make a few changes and used a whole chicken instead of breasts (and used the homemade broth) and used puff pastry instead of homemade. Will DEFINITELY make again.

This was a great recipe. When you are short on time, you can buy a rotisserie chicken instead...just as good. You can also use the pie crust recipe for other pie recipes...for a sweet pie just sprinkle the top with sugar...and for the bad review...this is not something that you would make everyday.

This recipe was time consuming and made a mess but it was so worth it. I made a shortcut and used puff pastry for the crust, I baked it seperatly and topped before serving. I would omit the pearl onions if I made it again, after an hour of cooking they were still hard. http://cookingdunkinstyle.blogspot.com/

This has become my new standard for making chicken pot pies. I used the recipe to produce one large pie (with crust on top and bottom) and a smaller "single-serve" bowl. The taste is second-to-none, and the full-sized pie froze well and warmed to perfection in an oven just like it was fresh. To the gravy mixture, I did at a bit of herbes de Provence just for a little more flavor. Overall, a fantastic and easy recipe...look out Marie Callender!

Very, very good, I used rotisserie chicken (they were on sale yesterday) so the grocery store cooked the chicken for me, and I pulled off the skin and deboned, this saved a lot of time. I also used puff pastry....excellent. My prep & cook time for the filling was about 30 minutes or so and baking time in the oven was 40 minutes. I did half the recipe and it still made a lot of filling, enough to feed at least 6. Will definitely make this again.

This was soooo wonderful. I regret that i did not have time to make the crust from scratch. I did buy two sets of premade crusts from the grocery store and it was awesome. (I made two pies.) The chicken cooked wonderfully on the bone. I didn't alter the onion content and it was AWESOME. (I love onions.) My only complaint is that 2 teaspoons of even kosher salt seemed a bit much (and I like my salt) in the filling. But a total homerun overall. My Dad said that he liked it better than my Mom's chicken pie. Ouch.

I am new to cooking and even my pot pies came out delicious. I added potatoes and mushrooms and only used one large yellow union (no small frozen onions). To save time I used skinless boneless chicken breast fillets which only took 15 minutes to cook in the oven. My family and husband loved it. It was so filling too. I could have easily served 6 people with 6 smaller pies instead of 4 larger ones. Very yummy.

First attempt at Pot Pie and will 100% make it again! Very easy and perfect homestyle taste and yummy leftovers!. I read many reviews and took some advice - added garlic and celery with the onion step - reduced butter by one tablespoon and added chicken/olive oil pan drippings - added frozen corn and potatoes (par cooked potatoes with carrots) and DID NOT add frozen onions (YUCK- can't think of anything frozen whole onions would be good in). Guests really liked it and wanted recipe. Thanks Ina and reviewers for tasty tips.

I have been making this recipe for awhile now. I have family members who demand that I make it when they come to visit they love it so much. I even used this recipe to make small chicken pot pie pockets (using pastry dough that I cut out into 4" circles; added filling and then folded over to make the pockets) to serve at my sisters baby show, it was a hit! Just really really good comfort food.

I made this dish for company; it was enjoyed by all. I did make a few minor modifications -- I used one very large sweet onion in place of the two and used a package of frozen peas with pearl onions. I don't like to bite into pearl onions, so it seemed like the right amount. I did use the full 6 split chicken breasts and will cut that down to 4 in the future. It was a lot of chicken for 4 servings (which ended up being more like 8 servings). I don't really like making pastry, so I baked the chicken mixture in individual baking dishes for 20 minutes, and then covered the tops with puff pastry (brush with a little egg yolk/water mixture for a nice, golden finish) and put back in the oven for 40 minutes. Nice, hearty winter meal. I took the leftover chicken mixture, heated it and put it in a small casserole, made (Bisquick!) drop biscuits for the top and baked the whole thing off in the oven.

I have made this recipe time and again. It's the best I've ever had. Since broiling the chicken breast, I've never boiled chicken again for any chicken recipes. Broiling gives it so much more flavor.. I always salt to my taste, because Ina likes things a little to salty for us.

This pot pie is delicious. I used 8 oz of frozen green beans and 8 oz of frozen stew veggies to trim down on time. I also added 8 oz fresh mushrooms and used one refrigerated ready-made crust (Pillsbury, I think). I also cooked in one large casserole on 375 for about 50 min. Oh, and it took about 45 min to cook 4 large bone-in breasts. Very rich tasting with lots of flavor layers. Yum!

I know I'm in the minority here, but I have to somewhat agree with the one-star rater: this recipe is just so heavy. It does taste good (I added a little basil, oregano and garlic), but even a slightly more biscuity topping would help. I made this for a meal that another woman also brought chicken pot pie to--hers seemed to taste just as good (maybe better), but she only used 5T of butter in the filling. One of the guys there said he could actually taste the butter in this recipe--not cool.

I've made a fair amount of cpp in my life and I have to say this was among the best. I did tweak the recipe a bit; eliminated the boullion cubes, changed the heavy cream to half and half, eliminated the pearl onions, added cubed blanched potato. The sauce is heavenly and uncomplicated; no funky herbs either...very straightforward...just like Ina :-)

I am defenitely making this recipe again. My husband loved it. I used (2) 9 inch pans. Instead of fresh carrots, I used a mix of frozen carrots and pea's and put some potatoes in it. It was very easy to make and even tastes better the next day for leftover's.

This is quickly becoming a regular at our house because it's so good. I make it a little easier by buying a rotisserie chicken breast and cutting the meat into cubes, I also use a Pepp Farm puff pastry dough and have had great success with it. My husband's comment is that it's one of the best things I've ever made! Thanks Ina, for always being sure your recipes really work!

I have a very picky fiance that does not like things made out of a box, plus he is allergic to many different types of foods. I am just starting to get into cooking this from scratch and figured I would try this since he has been asking me for some pot pie. I made this last night with a few changes and he loved it! I omitted the pearl onions, only used one chopped onion and used celery and carrots! I also used a 9" pie crust (bottom and top) and it came out perfect. I did have to put foil on the edges after 30 minutes, but 10 minutes later it was finished. It was such a nice, warm meal on a cold night! I would highly recommend! Thanks Ina!

I have made several chicken pot pie recipes for years and this is one of the best ones I have come across. If you have the time to cook up the chicken breasts and make the pie as soon as they cool with the other ingredients it is just an incredible, warm and comforting dish. Great fare for a cold, snowy day. Even used puff pastry as well.. works well if you do not wish to make homemade pie crust...

I'm not one for cassorole-type dinners but I watched this recipe one morning and decided right there and then that I HAD to make it. Good thing my husband is a big chicken pot pie fan. Made some adjustments for my own tastes and time (used boneless breasts, soaked in a cold water salt brine for a couple of hours and roasted it with garlic EVOO and garlic and herb seasoning), omitted peas... stuff like that. SOOOOOO good! I had enough for one 9x13 dish and I have the leftover filling in my freezer, waiting for next time. I think I'll make enough one this weekend. Thanks Ina for a great recipe!

However I did use a store bought pie crust to speed the process up a little and also read a lot of the reviews and added only 1 cup of the pearled onions. I made this for New Year's Day and it was a huge hit. Followed the recipe exactly as written, minus the frozen onions, which I couldn't find in my grocery store. Also, I used a pre-made, frozen puff pastry, which worked out just great and saved a ton of prep time. It was super delicious, hearty, creamy and fantastic! Heads up - I believe the portions are more like for 6 people, rather than just 4...

We love this one - especially the terribly finicky toddlers and youngsters in our family. We make it often for family events so the children will enjoy their dinner while eating healthy food. (And the adults sometimes prefer this over our turkey or roast or steaks entrees!) We substitute & add veggies in addition to the carrots (we use chopped onions instead of the whole ones, we add frozen green peas &/or broccoli, peeled & chopped potatoes, etc) And we often use a 5 qt enamelled cast iron baker to hold the huge pie - covered with one pastry shell on top brushed with milk prior to baking. And we've found that we prefer cooked chicken thighs to the breasts (boiled, skinned, pulled into large pieces.) So thanks, Ina, we love you and this yummy, buttery-rich & versatile recipe!

This is the first time I have tried a pot pie and my family loved it! I used puff pastry as I did not have time to make the dough. Very easy. My kids were not fond of the small onions so next time I will leave them out and substitute mushrooms. I may add some diced pototoes.

I made this pie last night and it was delicious. I tried to make the puff pastry but my machine was not working. I had a refrigerated pie crust in the fridge and it worked great. I cooked for 30 minutes then I put a piece of tinfoil on the pie, so the crust wouldn't burn, and cooked for the remaining 30 minutes. I put in extra carrots and celery. I can't wait to try this as a beef pot pie. Great for winter nights. I do recommend letting the pie rest for about 20-30 minutes so it sets nice.

I thought that this recipe was a good master recipe with some changes. I think that there are too many onions, the second time I tried this I cut the onions at the beginning in half and added some chopped garlic to the butter also. In addition I added some diced potatoes which I also blanched.

Nothing to say that hasn't been said. This recipe is versatile - I add potatoes and celery, use fat free half and half for the cream - and most of all delicious. Make your own pastry just once, it is a bit messy and time consuming (but not hard), and is so very good and quite impressive.

I have hated chicken pot pie since my evil step monster made us eat the frozen ones when we were kids... but after being asked by my World's Greatest Husband to make it, I chose this recipe! Now he thinks I am World's Greatest Wife! And for Ann from WI and her concern for her heart and arteries... I put this recipe thru the Weight Watchers website and with a few changes (half and half, margarine, store bought pastry...) you can get this to 8 points per serving! Ina, you are the best!

I have made this a few times and each time I try to add something to make it even better. I leave out the pearl onions and peas. I prefer to substitute celery and potatoes. Makes such a hearty meal. I also add two cloves of finely chopped garlic. Wow what great flavor. I'm not crazy about my crust so I have used puff pastry and this time I made biscuits and placed them on the top and baked as a casserole. Comes out perfect. I look forward to the fall so I can make this all winter long. I honestly love you Ina. I watch you everyday. I just think you're wonderful!!!!! My family and I love your recipes!!!

It was very good and easy to make. I could not believe how easy the pie crust was, and I am a crust novice. I bought some puff pastry just in case I ran into trouble, but it came oout perfect. I would highly recomend this recipe. A family pleaser. Leftovers are great too.

Okay, Ina. Maybe you have a wanton disregard for your heart and arteries but I don't. Two and one half sticks of butter, 1/2 cup of vegetable shortening and 1/4 cup of heavy cream????? No wonder the reviews are mostly great but why do you have to use butter and cream to flavor the dish. Chicken pot pies can be quite tasty without all of the fat, cholesterol and calories.

So easy to make, from the dough to the filling. I used extra light cream in place of heavy cream, and also used margarine and vegetable spread in place of butter and shortening to save calories. Mine came out a bit salty but it was such a hit.

I follow this recipe loosely. I use the leftover chicken that I always have when I buy a store bought rotisserie. I am sure Ina would cringe. I always throw whatever veggies I have on hand.

This is absolutely the all-time best pot pie recipe. It is thick and full of tender chicken that almost melts in your mouth. I make it over the weekend and freeze several of the servings to eat during the week. My husband used to be a Marie Callender's pot pie lover. Even though he picked out all the peas, he wouldn't eat any other brand. But since I made this recipe substituting fresh green beans for the peas and adding frozen corn, he's announced that I don't need to BUY any more pot pies for him. He wants me to make several batches and freeze them for his meals for when I work late...that means he's "cooking" his own dinner and I don't have to!

I followed the recipe exactly (it took about 2 hours from cooking the chicken to taking the finished project out of the oven), other than using a frozen puff pastry. On a cold, rainy day in April in the Pacific Northwest, I decided to try this. It was great. The only thing I did different was to buy a package of petite peas and pearl onions mixed, and being pressed for time, I made a buscuit mix and put it on top of the pies. Turned out great, but next time I'll try the right topping. It's a keeper.

I had guests over during the winter season, I did not want to make a normal everyday chicken dinner so I was watching Barefoot Contensa The night before and seen her recipe for chicken pot pie and thought this would be great and it was. My friends always want to come to my house for dinner because they love my recipes I am sorry Ina but they thought this was my creation, can it be our little secret that it was yours. I get alot of ideas from you and the other food network cooks, I usually add to it with my own Ideas. I must say I'm proud of myself for actually making the dough from scractch (a first), and although the results were pretty good, this was waaay too time consuming (almost three hours from start to finish!) The taste was fine, but dare I say you can get the same flavor from the frozen Pepperidge Farm or Boston Market pot pies. Perhaps on a special occassion I will make this one again.

This is a really great base recipe. I use leftover roast chicken and add the leftover gravy I have to the stock (gravy: pour chicken drippings from roasting pan and separate the fat. Saute 1/4 cup onions or shallot, chopped fine in one T of the fat, until soft. Add back the jus.) This makes for a really rich tasting stock. I then add carrots, asparagus & peas. I can't find frozen pearl onioins, so I just add extra regular onion. My family loves this chicken pot pie. Thank you Ina! :)

This recipe is amazing! It is very time consuming, and I would not recommend it if you don't enjoy spending time in the kitchen. However, if you do, it is well worth the effort. I followed the recipe in every way except adding a little diced potato, a little frozen corn and I omitted the sauteed onions, because my husband is not a fan of onions. These pot pies were truly delicious, and made about 5-6 very large individual pot pies.

This recipe is easy to follow, quick, and absolutely delicious. I changed it somewhat by adding a bottom crust and baking it in a deep dish pie dish but the flavors were just delicious. Since my son loves potatoes in his pot pie I cooked potatoes and cut in chucks and added to pot when adding the chicken and other veggies. I will definitely be making this again & it is definitely good enough to serve to company. Also, I had so much filling left over you can serve another meal & change it up a bit by serving over rice or noodles.

Not only did my husband (who is a very picky eater) devour this dish but my 5 and 3 yr olds loved it as well. The preparation was not at all difficult. And I'll credit my kids as they claimed it was "Yummy". And to get a yummy out of them when there are no sweets involved is a challenging thing. It was fun for them to eat through the dough. My boyfriend & I have always wanted to make chicken pot pie. I decided since I had the day off from work today, I would surprise him when he came home from work. I automatically went to food network for help and came across Ina's recipe. I've tried several of Ina's recipes, all of which have turned out wonderfully. This was no excpetion. It turned out perfect and I can't wait to share/make this for friends. The flavor and consistency was exactly what I was looking for. The only thing changed was: added diced potatoes (which I peeled and cooked beforehand), I added frozen kernel corn and eliminated the frozen small onions. Since the grocery store was out of puff pastry and I didn't have the time to make my own crust, I bought Pillsbury flaky layered biscuits and placed them on top of the filling before placing in the oven. I had plenty of leftover filling which I placed in the freezer and can't wait to use again. My boyfriend & I highly recommend this if you're looking for a classic, traditional chicken pot pie!

This is a really good recipe for Chicken Pot Pie. I made it for my Bunco group and everyone loved it. I served it in individual crocks (the kind used for onion soup) and topped with mashed potatoes instead of pastry and loved the way it turned out. Just heat in the oven for about 45 minutes. Sprinkle the tops with Parmesan Cheese about 5 minutes before taking out of the oven.

As everyone else has said, this is very good. We made the homemade biscuits and followed the recipe exactly. My only change was that I felt this could have benefitted with adding diced potatoes. I also thought the pearl onions were a little too much since there are 2 cups of chopped onions already in the recipe. Still very good, just a personal preference. Made plenty of leftovers too!

Ever since I was a kid, I have always loved chicken pot pie. This is just the recipe that I have been searching for years! It is great! I did not use the frozen onions and added mushrooms. Also I took the advice of some other reviewers and cut back on the salt and doubled the pepper. Don't read anymore reviews, just go make it!

I tried this recipe alone first, as an experiment that, if successful, would be repeated later for the family. So I nervously halved the ingredient quantities, hoping it would turn out half as well as it looked like it did on the show. Oh my god, this recipe is absolutely spot on! The only thing that needed to be adjusted was the cooking time for only 2 pies vs. 4; but everything else was perfect. While it's time consuming, it's easy and worth it, and now that I've done it I'm sure I will make this often and it will become a family favorite.

I am not surprised, as Ina's recipies are always incredible, but this is no exception. Delicious, easy to make, and a bit time consuming but not at all hard. My husband was blown away. I used a pastry cutter instead of the food processor to make the crust and it turned out fine, and I also halved the recipe but kept the dough the same so that I could do bottom crusts as she suggested on the episode. Will definately make again!

My family and friends love the recipe. I also use the puff pastry and add celery, no pearl onions. (too much!) BUT I put the filling in the small aluminum tins that you get at the grocery store, freeze them uncovered then food saver them. They store great and I can usually get about 10 pies per recipe!

Due to time constraints, I altered the recipe by using frozen puff pastry shells and spooned the filling over them. Per some suggestions, I added more pepper and potatotes. I was out of peas so I put in fresh mushrooms. The recipe is very forgiving. My whole family loved it!

This came out so good.If you follow the ratios of flour,butter and stock the thicknes of the filling is just right. Puff pastry works great except that it cooks faster than the filling so I had to cover it with foil half way through and remove it 10 minutes before I took them out and they were perfectly done. My husband says it was the best chicken pot pie he ever had. I froze the leftover filling and will use for a fast and easy weeknight meal.

I was worried about the quantities for filling and top crusts-I made 5 pies and should have made 6, and there would have been enough easy-to-use pastry per recipe, an my bowls were about 8 " diameter, and the pastry was so simple to work with. I added celery, omitted final onions (cooked extra chopped onions to begin with) and added some frozen "southern hashbrown" potatoes as they are par-cooked and diced, and LOVED the results. I also think mushroom would be delicious in this recipe. This is a keeper for company as well! Thanks Ina.

This is by far the BEST chicken pot pie recipe I have ever made! It definitely takes some time, but oh so worth it! I left out the pearl onions and added celery and potatoes, and even a little cheddar cheese. Note: If you are making this for company, you definitely want to make individual pies because as a whole pie the first piece is runny and hard to get out (even if you let it rest awhile), but after the air gets to it, it thickens up real nice. I had enough filling for two whole pies, so we had it again the next day! It's that good!

This is a wonderful recipe for family and guests. I have found that when timing requires a short cut,if I utilize the time honored frozen, not tubed, Pillsbury biscuits rather than taking time to make a crust, it works wonderfully. Also, I utilize the pan oil and flavors from baking the breasts as part of the butter to saute the onions. This enhances the flavors even more. Ina's recipes are the greatest, however they usually make for very large portions, which in this case is great for leftovers. I also line a greased ramacan with plastic wrap, fill it with the leftover amount required for one serving and freeze it, then remove from the ramcan and vacuum seal it and store it in the freezer for later use.

I followed the recipe exactly. They were wonderful. Like all of Ina's recipes, it was perfect. For me, the recipe made 6 - 16oz. pies. To the person who had soupy results, don't add more stock because when you bake the pies, the vegetables will release water. I froze the extra pies and baked them a couple of weeks later. They tasted just as wonderful as the first ones.

I saw this recipe done on the show and I am not typically a fan of pot pies however, I made the filling and then poured it over a croissant and served it with stuffing/dressing - wowsers! It was the best filling i have ever had!! and it hoenstly took me 10 mins.... I used left over turkey and a can of peas and carrots!
