I have never fixed any casserole with vegetables before. That was my first and not the last time, that's for sure. This casserole is soooo good. I put a little bit of ground red pepper to give a little kick to my casserole and it was just right. But everybody loves different ways. Next time I will try to top it with shredded cheese instead of crackers. Try it, you would love it (if fix it right). Way to go Paula!!!!

It's so easy to cook and very tasty. Did not feel the summer squash, I think it's healthier that way and I use 1/4 stick of butter.

This was absolutely delicious! My family and I gobbled it right up. Even the kids loved it because of the ritz crackers and they normally hate squash! Wonderful recipe that I'll definitely make again.

I was only half listening to Paula put this recipe together. I was actually flipping channels because I thought "Squash Casserole" sounded pretty boring. Fortunately I turned it back to her as she was pulling it out of the oven and dishing some up. The cameras zoomed in and I was shocked! It did indeed look creamy and good. I made the recipe within three days and I cannot begin to tell you how wonderful it is with so few items. I've given the recipe out and I continue to rave on it. Thank you.

I was dissapointed in this one from Paula. It was okay but lacked flavor. I followed the recipe and extra tips precisely, making sure the consistency would be okay by wringing out excess water from the squash. If I did want to make it again, I would definitely add a cup of shredded cheddar cheese or colby/monterrey jack blend.

I used whole wheat bread instead of the white & crushed garlic croutons instead of the crackers--it was awesome! I made it for a bbq & everyone wanted the recipe. Thank you Paula!! :)

This is a great side dish for a meat that is spicy. I have made this twice and I would say the yellow squash is easier to use rather than the star squash. Either way, the casserole is delicious.

I didn't use the bread, but just increased the crackers (I used Ritz) My family loved it. I am always looking for different ways to use things from the garden. Paula did it again!

Loved this recipe, although I sauteed the onions and galic in 1 TBS. butter and 1 TBS. olive oil, and added an extra clove of garlic. I used Ritz cracker crumbs for the topping and used very little butter to dot the top before baking. I've recommended this recipe to all my friends, it's the best recipe I've ever tasted for summer squash--even my husband, an avowed squash hater, liked this one.

No one can cook squash like a southern cook. I lived in Albany, Georgia for 3 years in the late 60's and early 70's. There was a woman who ran a boarding house and she would cook for her tenants and also serve customers on the front porch of the house. She would serve the food in big serving bowls that she would bring to the table. I never ate such good southern food before or since. This recipe reminds me of the meals my friends and I would order and my favorite was the squash.

After reading some of the reviews for this receipe, I beleive some of you are confusing this receipe with another of Paulas. This one does not call for sour cream or cheese. She does have a squash receipe that calls for both of those ingredients. You can find that one under "view all episodes" then click on Farmers Market. I have made that receipe numerous times and everyone loves it and gives it 10 stars.

I haven't made this yet but looks great. I can't figure out where someone came up with sour cream for this recipe unless I am missing something? I'll make it as the recipe states with a couple of tweaks. I don't use butter so the crackers for the topping are out what I will do instead is make breadcrumbs and then saute them with a little margarine and extra virgin olive oil. I've used this as a sub in other recipes that call for buttered crackers and it comes out great. Sprinkle a little cheese on top (not fat free because it never melts for me!) But, a little of the real thing goes a long way.

This recipe was delicious. I was afraid of the fat content so I used light sour cream and fat free cheese, and it was still great. After reading the other reviews I can not believe that people thought this was tasteless. Maybe they needed to add more house seasoning. Also, one viewer commented that it was watery: next time strain the veggies longer and squeeze out excess water with a towel like she suggested. What a winner!

Great pot luck dish and several folks wanted the recipe. I added pine nuts and diced sweet red pepper and used crushed Triscuit Rosemary and Basil crackers as the topping. Would also be great with a bit of parmeasean cheese added to the mix.

Maybe it would be better with the PattyPan squash? This recipe came out a little watery and lacked a lot of flavor. I think Paula has a better one in her cookbook with Zucchini, if I am not mistaken?

We made this recipe that looked wonderful while you cooked it on tv. sorry Paula this was not your best... it totally lacked flavor.
