This recipe takes some time to make but the end result is worth the time and effort. I did it yesterday for a dinner party and everyone liked it. The sauces are excellent, and it is really a great alternative for when you have more than 6 people coming over for dinner.

"Crunchy Brisket"

This looked great on the show, but the meat was TERRIBLE. I'm not sure if this is simply what is to be expected with brisket. Both my husband and brother commented that part of it was crunchy (from the fattier part of the meat). I will make the gorgonzola again, would be yummy on a filet (half the mayo and didn't fully blend it). The salsa verde also good, but I recommend only 1 shallot, and half the olive oil.

Our guess were very please with our dinner

I made this dish for several of my family members. We all thought it turned out ok, but the sauces were crucial. The meat turned out a little dry. We did eat it all, though.

I fixed this this today and enjoyed it very much. I probably cooked it an additional 30 minutes more and added a bouillon cube, and it came out wonderful. Everything kept a perfect color and tenderness. The sauces...well, I loved them both. They are so different and yet compliment the meat so well. The gorgonzola with the hint of Dijon mustard really hit the spot and I am sure I will use it with other dishes. The Salsa Verde, what can I say, the ingredients all compliment each other so well and I can even see it being used with a fish dish because of the capers. All and all this is an excellent dinner. To all....try and enjoy.

Wonderful flavor

I cooked the brisket a bit longer than called for and didn't need a knife to cut it. Important to reduce the stock by half for a wonderful concentrated flavor. Didn't have gorgonzola so I made the salsa verde which I didn't care for. Frankly the reduced stock was flavorful enough without the added sauces.

Just ok!

Brisket was tender, but did not have much flavor. Thank goodness for the sauces.

I made this over the weekend with a 3 1/2lb brisket and my husband loved it! I added some cajun seasoning to the meat before browing it for a little kick. The gorgonzola sauce was great but next time I'd use less mayo. I'd definitely make this again.

I have never made beef brisket before and saw this show over the weekend, decided to try it myself during the week. I added a New Orleans spice rub that I've come up with in addition to the salt and pepper and it provided just the right amount of bite that I like. The gravy was very flavorful, the Gorgonzola sauce was excellent (I added a tsp. of horseradish sauce for my own taste) and the meat was mouth watering and succulent. I am very pleased with this recipe!

This sounded so good so I gave it a try. Bought a nice brisket. Only seared it about 3 min per side as I may have gotten it a tad hot. Anyway it turned out so tender and tasty. My kids loved it too and asked for it again. The gorgonzola sauce was a real hit.

dried out!

this recipe was terrible! the BEST part of it was the gorgonzola cheese sauce, which i will probably make again when i grill steaks. As far as the meat and veggies for this recipe, it was like eating leather! i used the top round, not the brisket, dont know if the brisket would be better (couldnt be worse!)The gravy that the meat cooks in is SO bland, needed "something" to give it some kind of a kick. will never make this again!!!

HORRIBLE!!!!!!!!!

What a complete waste of time, money, and effort. The only good thing about this recipe was the sauces. Even my 14 year old son, who will eat everything, wouldn't finish.

If you like pot roast, you'll enjoy this recipe. I made it using the exact recipe and it turned out beautifully. The only criticism I have would be the salsa verde. That was bad news in our opinion but we loved the gorgonzola sauce and I don't like that kind of thing ordinarily. Thanks!

Awesome recipe for the lovers of roast beef!

I used an eye of round cut of beef, rather than the recipe's brisket, because it was on sale. It turned out beautifully! Make at least 4 lbs, because it makes great leftover ideas: sandwiches, quesadillas, salad, etc. Umm, umm good!

Christine from Grosse Pointe Woods, MI. The recipe clearly states that this brisket should cook for 2 hours not 1 hour. I've made this and it is wonderful. 10 people raved about it and there was nothing left. The sauces are awesome.

Good but not as great as I eas expecting.

I didn't want to make this for 10 people (there's just 2 of us) so I bought a 2-lb. rather than 4-lb. top round and cut the recipe in half. I reduced the cooking time by 30 minutes total. The veggies came out fine and the flavor was good but the meat was tough. I will try it again reducing the cooking time a bit more. The Gorgonzola sauce was incredible and I'll use that on steaks.

Bland, bland, bland

Wow, what a big disappointment. I had seen the show and with the way she was describing this dish, it was a winner. The blame to be truthful is mine - just read the recipe. Any reasonable cook should quickly spot that this will be bland - boiling a piece of beef for two hours??? This must be a classic Italian dish, because I found something similar by Mario. As other reviews have pointed out, the sauces are very good, but they are necessary to save this dish...

Where's the red color?

When I saw Giada do this, the sliced brisket looked really red (like corned beef)which could mislead folks. Mine was brown-the color of boiled brisket. I must say that we really enjoyed it & especially liked the 2 sauces. I subbed some low-fat sour cream for some of the mayo in the gorgonzola sauce. We will do this again. Two hours was plenty of time for the 2 lb. piece I did. Thanks, Giada

I don't understand this recipe

How is it that you can only cook a brisket for one hour. I cooked mine like 3 hours and it was tender. I am not convinced. I may try this with a sirloin tip roast and in the crock. I know it is not the same recipe, but I will vary it.

I am not rating this recipe. I didn't know any other way to reach you. I would like to know why it is so hard to "find" yesterday's recipes. They used to be listed by date order and very easy to obtain. Now, I spend so much time just trying to find your recipes. Please, please let me know why the change.

I am not the cook in the family, but I saw this episode and thought I could handle it. I followed the recipe to the letter and it was fabulous. Everyone loved it and ate the leftovers the next day. The sauces were a huge hit. We use the gorgonzola in place of hollandaise on eggs benny and we use the salsa verde with everything. The macaroni and cheese from this episode was great too. Thanks Giada, I was able to impress the cooks in this house!
