Easy to prepare, but the taste was extremely disappointing. Not very cheesy, a little dry, and the flavor was a little weird. I would recommend against using frozen spinach.

My two year old daughter loves this recipe, and has been eating it since she started on table food. Don't be put off by the "spicy" in the title if you're making it for kids. You can leave out the red pepper flakes -- but even if you include them, it's not hot.

...Try using whole tomatoes in a 28 oz. can as opposed to the diced tomatoes the recipe calls for. Just use a wooden spoon to break them apart or use your hands. Here is a good tip: Use the tomato juice in its entirety that is in the can and pour all over the macaroni. It almost serves as a sauce itself combined with all the cheeses and of course the nutmeg- a wonderful finishing touch. This should make the pasta more moist OR use some of the pasta water AND the tomato sauce. Overall it's a great recipe that I use often for family dinners sans the mushrooms (I'm allergic.)

My husband and I made this twice and we were just as disappointed the second time as the first. This recipe is big enough for company but I wouldn't recommend it if you want to get an honest complement.

As per the train of reviews,(I should have read them first) it was a little dry. I added some water and more cheese the day after and it was perfect. THe nutmeg was a really nice twist in the flavor. We took the leftovers on a vineyard picnic the next day and one of my guests had FOUR helpings! I used portabella and crimini mushrooms which gave it a really nice flavor.

My husband loved this dish, saying that is was one of his favorite. I on the other hand thought it was a little dry. The next time I make it, I think I will add another can of diced tomatoes like another reveiwer recommended. I also used diced tomatoes with garlic and basil just to add a little something extra to this dish.

My boyfriend asks me to make this all the time. Everyone in my family loves it. I follow the recipe exactly as it is, but I like to use cellentani pasta instead of elbow macaroni. Even if you think you don't like nutmeg, use it anyways. I don't like nutmeg in most things, but it fits so perfectly into the flavors of this dish.

Everything was great, but it was a little dry. I didn't add extra tomatoes like other said because I figured the mushrooms would add liquid. When I used the leftovers, I added more cheese, mozzarella and provolone (it's what I had) and it helped!

Well, I listened to oter reviewers, and tried to compensate for dryness by adding tomato sauce into the mixture. It seemed OK prior to cooking, but I found that it baked up dry...not chessy and gooey as I desired. The breadcrumb topping layer seemed to be the dryest (even with dots of butter). Maybe I'll mix the breadcrumbs with EVOO first (before adding this final layer on top), so that it stays moist and bakes up crusty and golden instead of a dry top layer?? Everything else about it was good. Nice bite from red pepper, and I added marinated artichoke hearts as a twist. Have to try this again, I think.

This recipe is SO yummy but too big for my household. I make all of the the vegetables from the master recipe, and freeze half. Then half the macaroni (use 1/2 pound) the bread crumbs, the cheese, etc. I actually use more cheese in the half recipe and it's fabulous. The veggie mixture freezes really well for a quick repeat of this great recipe.

When you're looking for a great, hearty and tasty dish-this is it!! My family (who by the way doesn't really go for spicy dishes) ate their whole plate and all 3 of my kids age 1,3 and 5 loved it!!! Its also a great entertaining dish to wow the company!! Must try!!

I made this for my family and after I put it together it looked so dry that I added another 14 1/2 oz. can of diced tomatoes. The family loved it but I thought it still needed more tomato sauce. When I heated up the left overs I added some jared marania sauce and that did the trick. Next time I make this I will add 1 jar of marinara sauce instead of the diced tomatoes.

This recipe was very good but I had to add a little more salt. I flavored each layer- veggies, tomatoes, and pasta with a little salt and pepper to taste (but the recipe didn't say to do this) and it came out GREAT.

Our family prepared the entire meal from the show where this recipe was featured and it was fantastic. We served Red and White wine to complete the experience and it truly was an incredible meal. We were celebrating a soldier returning from War and this was the perfect meal for such an occassion.

This dish was awful! It had no flavor and you'd think with all of these ingredients it would have had some. I added two cans of tomatoes and it still was dry and you might as well leave out the cheese because you can't taste it. Joan in San Antonio

I've made this recipe several times for my friends and they keep asking me to make it again. This dish is rather easy to make, has an elegant presentation, and tastes great. Despite the name, the dish is not "hot," just a little hint of spice. More pepper flakes will turn up the heat. If you don't like it spice, use a bit less pepper, but I wouldn't reccommend leaving it out altogether. The pepper adds a lot of flavor as well.

This recipes didn't have much flavor at all. I was very disappointed. The recipe doesn't even call for salt. Maybe that is a typo. Couldn't really taste the cheese. No one in my family liked it.

I set out to make this recipe last night, and found myself adding additional vegetables and meat to the sauce as it simmered. In the end, I added andouille chicken sausage, pancetta, res peppers, capers and some kalamata olives, as well as more red pepper flaked. I simmered the sauce a little longer on low heat, and added some pasta water and pecorino cheese, and thought this made a DELICIOUS dish! My advice to people who have found the exact recipe dry or bland is to not be afraid to make the sauce your own, and add more veggies and flavors. My boyfriend loves all things spicy, and the little extra heat made this dish a huge success :-)

I even cheated by using Kraft macaroni and chese as a starter. Then I reduced, only slightly, the amount of cheese I added from there. Even people that don't care for tomatoes or spinach loved it. I added turkey sausage cut in 1" chunks. It seemed to be a comfort food that fit everyone's tastes.

I've made several of Giada's recipes and have loved them all, however this one is by far my 11-year old's absolute favorite! It's not too spicy but spicy enough to give it alittle kick, and it's a great way to get kids to eat their veggies!

I think part of being a good cook is adding things into a base recipe so that your personal tastes will appreciate it more. My family loves tomatoes and their flavor so along with the diced tomatoes I added almost a whole 14oz can of regular tomato sauce to my mixture and the noodles were coated and had excellent flavor. Also before I baked it I sprinkled some water over the noodles to keep them moisturized while baking. It's a keeper!

I too added an extra can of tomatoes, and the dish was hardly dry. The rustic taste of the nutmeg with the mushrooms was such a treat. I had my mother and stepfather over, who are "spicy" fanatics, and the touch of Pepper flakes was perfect for them, yet not to hot for the others. Was perfect when reheated for leftovers. Another superb dish by Giada!

I had to give it a 3 because I think that if it's made as written, it would be incredibly dry. The alterations I made bumped it up a bit. I added a cup of skim milk to the vegetable mixture and let it come to a good bubble to incorporate all of the flavors. I also threw in about 1/2 cup of ricotta because I had it on hand. Reduced the amount of pasta too, to get the ratio right. I think that this is one of those recipes that you need to play with and everyone can mold it to suite their tastes. I applaud Giada for making me think about adding veggies to what is essentially a baked mac and cheese dish.

I love this recipe. It's not at all a traditional mac and cheese--so don't expect that. It's very sophisticated, much lighter than traditional, but still rustic and hearty at the same time. I used the dried gourmet mushroom blend from Costco (rehydrated)--and forget 1/4t. red pepper flakes if you want spicy...I did 1/8c (2T) red pepper flakes...now that's spicy (don't do that if you don't have a high tolerance for spice!). This is a keeper! Just like that.

I followed the reviewer's suggestions, and added Italian sausage to make this a main dish. It was great, but I think I will add another can of tomatoes next time. I also did not put the bread crumbs in the bottom of the pan, but just on top. Next time, I will cut the bread crumbs in half. All in all this recipe is a keeper!

This is an excellent dish. As suggested I used Italian sausage in the recipe to make it more of a main dish. My family loved it! Husband had 3 helpings and the kids (although the dish was a bit spicy) loved it too. I will definately be preparing this for my family in the future.

Of course, being from Louisiana, I can't follow a recipe exactly. We have to add a little this and that and change it up a bit. I used fresh spinach and cooked it down. (HATE FROZEN)Used a splash of white wine, extra garlic and at the end a little cream with a extra dash of red pepper. TURNED OUT WONDERFUL. KIDS ALMOST FINISHED OFF ENTIRE DISH. THANKS GIADA!!!

I made this the same day that the show aired. I really liked the addition of vegetables. The mozzarrella cheese because it was in cubes didn't melt evenly. If I were to make this again, I would shred the mozzarrella cheese instead of adding it in cubes.

I really liked the quick simple steps to this dish, and the smell while cooking was fantastic. Very tasty, although, my husband and I thought it was sort of dry and could use more tomatoe or perhaps chicken stock. Overall pretty good and great as a leftover. Probably wouldn't serve for a dinner party though. I love Giadda'show, style, and recipes.

Not like the traditional mac and cheese, I think the title is misleading. More like a sauceless pasta. Better the next day, but I added twice the tomatoes and cut recipe in half, still made a lot. I added tomato sauce on leftovers and it was better. Probably could use some garlic too. I wouldn't make it again.

Everyone is saying this is dry. I believe it is supposed to be this texture. It isn't a "saucy" pasta. The flavors are great and you can feed a lot of people. Also very easy to make. A new family favorite!

Blah and bland are the only words I have to describe this dish. We were greatly disappointed with this mish-mosh of ingredients whose individual flavors all got lost in the mix. I even increased the amount of garlic and included some smooth-melting Fontina with little improvement. I would have much rather made a pasta sauce out of these ingredients by increasing the amount of tomatoes and garlic. We did not need the heaviness the cheese added because you could barely taste it. It was indeed dry as others noted, but I did not listen to them and increase the tomatoes! I probably should have. This recipes is not one for your recipe box and I would not serve this to company.

i read the reviews on this before i made it, it just came out of the oven and it was not bland or dry. i used 2 cans fire roasted diced toms, i also used less of the pasta and modified it by using more salt and pepper in the mix with the onions, spinach and mushrooms. then when i added the diced toms i used some of my homemade marinara with it. i used more cheese then the recipe called for and it was just the right amount. i didn't use the mozz cubes though i just used shredded mozz cheese and that was fine for the breadcrumb i used less mixed it with parm chz, salt, pepper and melted butter, mixed it all together. mine came out just like american chop suey but it was much better.

I've made this recipe several times and after the first (when we thought it dry and not flavorful), I decided to add some things much like other reviewers have mentioned. To the sauce I add 1/3 cup marinara, then some sugar to cut the acidity, then a little garlic powder and 1/8 cup minced red bell pepper. I increase the Parmesan (do not care for Romano) and I add a bit of reserved pasta cooking water. And the leftovers are very good too!

A few reviewers said it was dry, so I added a 1/2 ladle of pasta water to the mixture and baked it covered. I also melted the butter and mixed the breadcrumb s and cheese in it and put on top for the last 15 minutes or so uncovered of course. My family loved it.

This was hands down the best macaroni recipe I have made. To all of these people complaining that it lacks flavor or is too try- use common sense and make adjustments accordingly! I used a lot more cheese, garlic, red pepper flakes and nutmeg. Add a bit of water, kosher salt, white pepper, basil and fresh spinach instead of canned. Also, I mixed the sauteed vegetables with macaroni in the saute pan to retain and evenly distribute all of the oils and juices from the veg and olive oil. I added a layer of spices and cheeses to each layer of mix I spread in the baking pan. The outcome was an earthy, creamy, spicy, delightful dish...mmmm.

Fantastic flavor and truly yummy! I personally left out the red pepper flakes and the recipe was amazing without them. The nutmeg is the secret ingredient that adds an unusual complexity although most people don't even realize what they're tasting. Nothing was left at the end of the meal, the baking dish was empty(The true test if everyone likes it). It seems to be a very versitile recipe as well, probably tastes great if you chopped up a couple of boneless chicken breasts in it as well to make it a full mealcasserole. Giada is a GENIUS!

Made it last night for the first time. It was good. Pros: tasty and full-flavored. Cons: a bit dry, a bit complicated. I plan to try it again, but with a couple changes that I'd recommend: less macaroni than in the recipe (half pound instead of full pound), more spinach (the bag we bought was 16oz, will try the full bag, rather just just 10oz), and I will add the full can of diced tomatoes (including the water/juice, to perhaps make it less dry). Great recipe, but I'll try tweaking it.

I made this for my picky eater in-laws and parents one weekend and they kept eating the leftovers all weekend! It keeps well for about 3-4 days in the fridge, so if you want a dish to nibble on during the week then this is a great choice. We subbed some sharp vermont cheddar in place of the mozz to give it a little more kick. It surely can handle it.

My Mom and I were watching the show and decided to give this a try. I'm a vegetarian so it seemed perfect...it wasn't. It was pretty bland, pretty dry and overall not great. It may have made a decent side dish, but definetly not a main course. Mom says "Awful! Dry, bland and not worth wasting expensive cheeses on."

This recipe is one of my favorites from the Everyday Pasta book, I have always made the recipe "as-is" with no need to substitute ingredients or make any modifications. The red pepper flakes give it just a little heat, and the nutmeg gives it that "wow" factor and taste that makes guests wonder what the secret ingredient is. Even if you're not into spicy, this recipe really isn't that hot. I usually make this a day ahead of when I want to serve it and chill it overnight. Like Giada says in the book and like other reviewers have stated here, it always tastes better reheated or microwaved the next day.
