I did not like the recipe. The cakes were like dough and not flavorfull. The fish had a lot of flavor but you really ahve to like the herbs in order to enjoy it. The recipe looks good on TV but does not measure up to the taste.

As for the fish too much mustard. I even tried scraping some off before cooking and was still too much. i also don't see the point in deep frying this. All the flour came off. Might as well just baked it then it would have been healthier. I did like the black-eyed pea cakes. Was a nice change from just cooking them the regular way.

Loved this recipe. Hubby thought it was a winner! I am not a big fan of as much mustard as this called for so I just added a small amount, brushing it on with a pastry brush. The mixture of the mustard and the herb was wonderful. Am going to try it with different herbs each time I make it to see how it works with different flavors.

Too much thyme on your hands!

User: Kathie from Hobbs, NM    User Rating:
There was way too much thyme in this! Half would have been more than enough. Also I would have liked some tips on how to know when it is done etc., as I rarely fry fish.

Oh so good!

My only word of caution is that if you have acrylic nails....please use gloves as not to stain your nails.. other than that you will surely not be disappointed with the fish or the pea cakes.

Tasty!

I didn't want to deep-fry the fish, but shallow pan-frying worked just fine. If the fillets are thick, finishing them in the oven might be a good idea, too. I also skipped the thyme and opted for seasoning the flour with cayenne and garlic powder. Also spread only a thin layer of mustard over both sides of each fillet. Delicious.

These were really good! I forgot to mash the peas, which kinda resulted in a goopy mess before frying them, but once in the pan, they stayed together fairly well and were delicious.

I followed the instruction to the "T" but I was not impressed with the flavor of the fish. Too much thyme, I guess. My presentation did not look like the one of t.v. I know there are differences but there was too much mustard on the fish when I took them out of the fridg. I had to wipe the 'goo' off the fish before I fried it. Maybe I just don't know what good taste is, but I didn't like the flavor.

I didn't have thyme, but any herb could do, actually I didn't even taste the herb, the mustard complimented the taste of the bottom feeder fish,,delish and half a pound was easy on my budget 80 cents....and i would eat this again! Next time I think I would buy more than half a pound! Addicting!

I have never tried a Paula recipe that I didn't like, but I had to make a comment on this one! I never would have thought to use mustard but it really makes this fish delicious. The cole slaw that she also featured on the same episode is YUM! Both are easy to make too.... and my kids never eat fish but the LOVED it!

BLACK-EYED PEA CAKES: AWESOME!!!

User: Dawn from Gainesville, FL    User Rating:
The Black-Eyed Pea Cakes were like nothing I've ever tasted and they were soooo easy! We have decided that they will be our contribution to the next family gathering. It occurred to me that, if I drop them by spoonfuls into the oil, they would make a delicious bite-sized treat for a big group of people. My husband made the catfish and it was delicious as well (although, I admit, I'm still partial to good ol' catfish nuggets in grits). Also, the coleslaw that was featured with this dinner was SPECTACULAR!!! I cannot wait to make it again as well. (I think I might put some green apple in it!) Thank you so much, Paula Deen. You're home cooking is great for our home, too! Love, Dawn

This is a great catfish recipe. Catfish is my favorite fish and I love learning new ways to make it. I got to wondering how this recipe would work on chicken and guess what ... it's great. I have to admit ... I add basil along with the thyme and mustard and it's good too, but then again, I love basil in almost anything. Thank you for this recipe, Paula. Have a Blessed Day

Can't wait to try it with the fish!! The pea cakes were a wonderful complment to the chicken! Very different but with a wonderful flavor!!

Not the best catfish
03/20/2006 at 04:41pm
User: Russ from West Hollywood, CA    User Rating:
I didn't try the bean cakes. As for the fish, for my taste there was just too, too much yellow mustard. The fish fried up nice and crispy, but the yellow mustard overpowered everything. I grew up in the South and this dish was strange to me. I think I'll go back to a brief soak in seasoned buttermilk for my fried catfish. I almost gave this recipe only two stars, but I figured Paula was entitled to a miss or two with me. I think she's a terrific lady.

Thanks Paula for this great recipe! My husband usually doesn't like cat fish but, especially loved this, especially with the black-eyed pea cakes. At first he asked for the tarter sauce but, I told him he wouldn't need it. The mustard/thyme marinade did the trick. I will definitly make this again.

Too Die for Catfish

This resipe is a real winner. My mom used to fix one like this, she got it from an aunt in Alabama. I passed up the B.E. Pea cakes,as one fried food on my plate is enough. I seasoned the fish with coarse sea salt and pepper to taste. I also seasoned the flour with Salt, seasoning salt and pepper, lemon pepper and garlic powder. Serve with cooked fresh greens or well drained Black Eyed peas and corn bread for a really good southern treat.

Just yummy!!

I made just the pea cakes but with a little tweaking. Instead of peppers I used diced white onions and also put a little of the grease from the cooked bacon into the mixture. Very Good.

Coating fell off of fish
01/05/2007 at 12:34am
User: Bonnie from Silt, CO    User Rating:
I have made this recipe twice now. The first time, I didn't have enough oil in the pan, and didn't have an instant read thermometer, so the oil temperature was too low and the coating fell off when I had to flip to get both sides cooked. The second time I did it in a wok with plenty of oil, and used a thermometer. The coating didn't fall off completely this time, but it still pulled away from the fish a bit. Once it's fried, I really couldn't taste the mustard/thyme that much. The black eyed pea cakes were good, even though I used canned beans both times. They took longer to cook than I thought, so the fish was ready before they were. The kids weren't crazy about the pea cakes, but they aren't big bean eaters anyway, so that wasn't too surprising.
