Some even say this recepie is better than local restaurants. Now I always serve this when I hae a group to impress. This one is a real winner. Thanks Robin!!!

This chicken was fantastic. I did not have capers on hand so I did omit them and I added a little cornstarch to thicken the sauce a bit. Otherwise this recipe was delicious, healthy, and super easy to prepare. My family loved it!

I was looking for an entree I could make with chicken and marinated artichoke hearts. I finally settled on this recipe but I made it differently. I used chicken breasts and coated with egg and then bread crumbs and the spices. I actually did this in my wok , then poured out the oil. I mashed the artichokes, with zest , lemon juice ,salt and pepper broth, capers. I did not use this in the rice but poured this into the wok with the chicken and the broth etc and let it simmer slowly for a bout 30 minutes . I must have used the right amount of lemon , lemon peel and the capers as the sauce with the chicken came out just tangy enough without overpowering the artichoke. It made a great sauce and permeated through the chicken. Like I said,my wife who loves artichokes but is picky, said right away to make this one again!

Chicken Piccata w/capers * artichoke & lemon
04/09/2008 at 08:43pm
User: michelle from gaithersburg, MD    User Rating:
This taste better as a left over as the sauce tends to marinate the chicken and inhance the lemon flavors. White chicken meat can get dried out using too much acid (lemon). Capers are your sub for salt, you don't need to add salt. I would recommend doubling up on the sauce-it is fantastic! I added a touch of toasted pine nuts for crunch-but just a touch!

User: Shelley from Bham, WA    User Rating:
I thought this was one of the worst things to use these ingredients on! I was not happy w/ the sourness. The artichoke hearts, capers and the lemon juice was way over the top. Possible nixing the artichokes may make it better? Not going to make it again!

just average.....

User: Sheila from Burtonsville, MD    User Rating:
I was excited to try this based on other reviews but was disapointed by the outcome. The sauce just did not thicken at all. I didn't think it was really lemony, despite using fresh squeezed lemon juice. It was ok, but overall, this wasn't my favorite dish.

I'm a total beginner - but aspiring cook. New kitchen - pots and pans, yadda yadda. This was the first thing I made - minus the chicken broth (I'm not a fan of sauces) - or the artichoke hearts (because I didn't have any). Put that all to the side - it has been the best meal I've made (4 in total so far - 1-1/2 weeks). Definitely would make it for guests...and it was an inspiration. I imagined "wow" if they all taste this good - I can't "wait" to cook!

I prepared the chicken according to Robin's directions with the exception of using a little less capers. Instead of the suggested side dishes I made mini penne with an artichoke/lemon pesto garnished with a basil chiffonade and fresh tomatoes for color... I don't normally rate recipes (lack of time) but this was so fantastic that I had to comment! Michelle, Kingman AZ

I don't usually make Robin's recipes because I love the process of cooking and have the time to do it, so shortcuts are far less important to me than exquisite flavor--but this was really good. I did halve the lemon zest and juice, & added a touch more wine, but otherwise made it as written.

This recipe was undeniably delicious, and the leftovers are wonderful as well!!! The only change I made was the addition of some cannelini beans for extra protein(add them with the chicken stock, etc. so they have a chance to soften/cook). I served everything over pasta and with some simple french green beans and it was a perfect meal. My only gripe is that it took a little longer to prepare than I'd anticipated.

I've always loved chicken piccata but didn't know how to make it. This is the only site I could find with all of the key ingrediants: lemon, wine, artichokes AND capers. This IS how its done in fine restaurants. So I made it for the first time without practicing (and I am by no means a cook) for 10 people. One of whom was my 83 year old master chef grandfather. His compliment was that it tasted like I had been making this dinner for years because it was so delicious! I take no credit for that with the fool proof recipe. In fact, I even added just a little more lemon...It was perfect. Thank you Food Network and Robin Miller. Can't wait to serve this dish to my dear friends tomorrow night!

Valentine's Day is also my anniversary so I wanted to fix something wonderful for my husband. This dish not only made a beautiful presentation but it was incredibly easy and delicious. It was so good, the next day I skipped lunch at work just so I would be hungry for leftovers. We warmed it up and had a nice salad with it the next night and it was just as delicious. I will be fixing this many times in the future. We couldn't have had a better Anniversary dinner if we had gone to a five star restaurant and it was much more reasonably priced.

AGREE WITH "TOO LEMONY, NEEDS A LITTLE BUTTER" REVIEWER
01/21/2007 at 04:52pm
User: JACQUELINE from Buffalo, NY    User Rating:
I'VE HAD CHICKEN PICATA OUT & IT WAS NOT AT ALL THIS TART. I AGREE, IT COULD HAVE MAYBE USED A LITTLE BUTTER @ THE THICKENING STAGE, OR PERHAPS A LITTLE LESS WINE. I TRIED NOT TO DEVIATE FROM THE RECIPE, BUT I DID USE LEEKS INSTEAD OF ARTICHOKES, WHICH SHOULD NOT HAVE MADE A BIG DIFFERENCE. STILL, THOUGH MY HUSBAND REALLY LIKED IT, & I DID NOT. WILL LOOK TO ANOTHER CHEF'S RECIPE NEXT TIME.

This is my husband's and my favorite recipe; it is simple yet so fulfilling in every way. The lemony flavor along with the spices permeates the chicken so that for the first time, I actually enjoy eating chicken breasts!! I've substituted frozen peas for the lima beans and this dish just hits the rights spots: flavor, balance of spices - tart, salty, it's nutritious and even better, takes about 30 minutes to prepare and cook like the instructions indicate.

I loved this recipe. Chicken piccata is one of my favorites and both my husband and I enjoyed this one. Artichokes were great. Some people complained it was too tart, but I had to substitute chicken broth for white wine (since I had none) and it was perfect. Like another reviewer, I also had to add a little flour to thicken; I actually added a little water to the plastic baggie I coated my chicken in and got the leftover flour and seasonings.

The recipe was a little too salty and tart so I will try it again with less capers and lemon. My husband, a man that does not like to try new things, did like the dish but not the artichokes. He described it as "different, but needs gravy". Oh well, can't please everyone.

This is the first recipe I've tried of Robin's and it's definitely not going to be the last! This was such a great, tasty, quick & simple recipe! Perfect for a busy weeknight. The capers & artichoke hearts (even my husband who's not the biggest artichoke fan enjoyed it) added so much flavor to the light overall taste. We made some slight modifications... Found that we had to thicken the sauce with a bit of flour. My husband is not fond of lima beans, so we used canned (drained, rinsed) butter beans instead. And finally, we just made regular brown rice with low sodium chicken broth in the rice cooker, rather than instant rice on the stove top. Try it - I hope you love it as much as we did! :)

Elegant and inexpensive too!
