This is a very easy recipe and so delicious. You must squeeze as much of the water as possible from the spinach and I did need a little more flour than 5 Tbsp. Other than that, the recipe is perfect. My husband and I love the lightness of the meal and the wonderful soft flavors. I've made this several times and it always works. Thanks you Giada for another special recipe.

Before making the receipe I read many of the reviews. I added 3 TBS of flour, about 1 TBS each of onion powder and garlic powder, a bit more salt and allspice instead of nutmeg. I refrigerated the mixture for approximately 1 hour and kept my hands moistened with cold water while forming the gnudi and rolling them in the flour. As other reviews suggested, cooking them a few at a time and in barely simmering water until they floated did the trick. They were delicious and a bit hit!

I just made this and it's a big hit in my house. I had a some issues with the first few breaking up a little, but packed the rest together more tightly and they held up fine. I didn't personally care for their texture. Even with sauce on them I thought they seemed a little slimy. Not sure if I didn't dredge them enough or perhaps didn't cook them long enough or didn't drain them like I should have. As I said, they're a huge hit here and I like the taste overall, but I need to figure out something about that texture.

My husband and I liked them, however I will add more flavorings next time, like garlic and more s & p. Coat outside more liberally, I found they help better in the water that way! Otherwise, I will definitly make them again!

Wear your apron! The end results are worth it. Another great recipe. My only complaint is that its not filling...and store bought parmesean cheese probably isnt the best way to make it. I'll use fresh next time.

I made this dish for my family and it was fun and easy and very good but we couldn't help but notice it was missing something and my husband kept asking, "are you sure you added the nutmeg"? We checked the can and the nutmeg had expired in 2001!! This is ironic since I learned about the recipe on Giadi's Spring Cleaning episode which is about cleaning out old spices. We made it again with fresh nutmeg and WOW! A huge difference and an important lesson! Thanks, Giadi!

Interesting recipe. I added more flour and used garlic salt and cooked a bit longer. They looked like they were made with wallpaper paste, so I was relieved that the taste and texture were great. I sauteed leftovers in a little evoo and butter. Don't touch them til they float and cook some more and results will be better.

This had no flavor for me....i didn't care too much for the texture either. I did forget to put in the nutmeg, but i doubt it would have made a dramatic difference. Since it's so easy to make, i'll try again with the garlic as others have suggested.

After seeing Giada made this I had to try it. I read the reviews so I used 6 heaping tablespoons of flour. I made sure my water wasn't boiling, but increased the heat once they were in the pot. I had a stash of marinara (Mario's recipe) in my freezer. Added some sauted mushrooms and flat leaf parsley on top. Found a new favorite!

loved the gnudi! i added a couple of cloves of garlic and more flour. i also chilled the dough in the refridgerator before cooking it. really, really easy and very good. be sure to drain the spinach very well.

These are really good! Both my husband and I were surprised at their great flavor. They essentially taste like stuffed spinach and manicotti shells, just without the shell. I REALLY squeezed the heck out of the spinach, and used 2 TBSP wheat flour, and 3 TBSP regular. I'll probably up the wheat flour next time as you couldn't taste it all. Also, the cheese I used was a mix of parmesan and mozzarella - a great choice because the mozzarella melted and created those delicious strings of melted cheese (like on pizza). Next time I will prolly cut back on the cheese (just for healthiness - one can always sprinkle it on top of the sauce if they want more) and play around with using egg whites instead of so many yolks. I also used low-fat ricotta, and neither one of use could tell. Lastly, I added some garlic powder. As far as them coming apart when boiling, I took other reviewer's advice and let the water be at a really slow boil. Tiny pieces of the gnudi came off, but that has to be normal and in no way did they fall apart or lose their shape. All-in-all, these are really great. A yummy alternative to fulfilling your pasta craving. Don't pay any attention to the people who gave low ratings. Just remember to get as much water as possible out of the spinach and to cook the gnudi on a low boil and you should be great.

These remind me of the ravioli my grandma and I used to make together, just without the dough! They are light and super delicious, and the recipe is really easy to follow. I will definitely make this again.

i have made this recipe twice and both times they have been a hit. i used giada's marinara recipe for the sauce, and made my own ricotta cheese from mario's recipe. really really great, easy to make, fresh, and delicious. i am planning on making these for chirstmas eve.

With very few ingrediants, I loved the way I could whip this dish up in minutes. The flavors are awesome. I've also served it using an alfredo sauce and it was just as tasty. Be careful not to have the water to a rolling boil because it will cause them to break. Otherwise, with ginger care and attention these little patties are quite a conversation piece and melt in your mouth. Wonderful.

If you follow the instructions and really, really drain the spinach, you will end up with a delish dish, we made it kid friendly with a fruit ball scoop and my 2 and 3 yrs. old loved them we called them healthy no-meat balls.

These dumplings don't come close to holding together with just 5 Tbsp of flour: they were nearly impossible to handle and completely disintegrated when placed in the boiling water. I was very excited when I saw this dish being made on TV, it is almost exactly like my spinach ricotta pancakes which however give me heartburn probably due to being fried. So I will give this recipe another shot, but I plan on increasing the flour by a factor of 2.5 (to 3/4 cup) on my next attempt

I had such high hopes for this recipe and couldn't wait to make it. I was a big disappointment. It's easy to make, but I didn't think it was very flavorful - despite all the parmesan cheese and seasonings. It wasn't "bad" but it was just okay. I won't make it again.

This recipe was simple, but messy to prepare. The gnudi were very tasty. A great way to get your veggies. Make sure you cook in batches. They cooked better when they had lots of room to move around the boiling water.

These came out beautifully. I used fat-free ricotta, as I already had some in my fridge (had everything I needed in my fridge, which was a nice change). Not sure why others had problems, but if any of you that had difficulty care to try again it's worth it. Remember to drain, drain, drain your spinach, then drain it some more. And I could see how if the boil was too active, it could rip these apart. As it was, I kept my water on a low simmer, as instructed, the gnudi firmed up, floated, and cooked into firm, yet light, silky little packets of spinach and ricotta. I added 1 extra TBS of flour to the mixture and gave mine 1 extra minute cook time once they floated. And I worked in small batches to be safe. Will make again and may even sub out the 2 extra yolks for egg white to cut down on the fat. Delightful. Chef Giada never fails me.

I added 1 clove of garlic which, I think, made a huge difference. Keeping the water simmering is also very important. They didn't fall apart on me. I made sure to thoroughly dredge the gnudi in flour and shake off the excess before dropping into the water (which needs to be salted well) Topped with a little marinara sauce--and it was delicious. Overall, I loved this recipe but you might need to experiment a little with it to find out exactly how you like it!

The didn't think I made this right the first time because it was just awful -- sooooo, I made it a second time. Unfortunately, it was only marginally better. Basically, all the ingredients are fine, but, cooked together like this --- just not very exciting. I wouldn't recommend this at all.

Within seconds of my gnudis hiting the boiling water, they completely fell apart. To salvage the rest of the mixture, I took another reviewers advice and dredged them in eggwash and bread crumbs and fried them up in olive oil. They were tasty this way, but not what I was looking for.

It is a little hard to get the proper consistancy for the gnudi mix (and not have your gnudi fall apart in the boiling water) but once you do it is well worth it. Delicate and light, it is absolutely delicious. I suggest adding flour and parmesean cheese if your gnudi continue to fall apart in the water.

I thought these were good. They are very simular to Gnocci. I do however think that the recipe is backwards. I'm pretty sure that it should be add 1cup of flour, and use 5 TB for coating. That's what I did. I probably would not use a whole package of spinach next time, mostly because I'm not a big fan of it. I also added fresh garlic to mine and I thought it needed a little more salt. My husband liked it also and said he would eat them again, but maybe it was beacause of the name. GNUDI!

I'm not sure if I did something wrong, but this was a disaster. Instead of the yummy-looking morsels I saw on the show, I ended up with globs of goo. Maybe I made the patties too large, or maybe I used too much spinach (I estimated from two 10-oz boxes). In any case, four minutes of simmering (as directed) resulted in something that definitely tasted raw, but was improved somewhat by a trip to the microwave. A longer simmer for the second batch resulted in firmer globs, but globs nonetheless. Sorry, Giada -- I usually love your recipes, but this ended up in the trash.

These looked so good on TV I just had to try them even though the reviews were not so good. Well the reviews are very accurate, this recipe lacks texture and flavor. I didn't like the mushy texture from boiling them so I baked mine and added Herbs de provence and garlic.

I thought these were terrific. I live alone so I cut the recipe in half and made 6 gnudi. The flavor was excellent. If you use the nutmeg, (I only used a few good gratings,) and reggiano parmesan cheese, you'll end up with a lot of flavor. Mine didnt' fall apartbut loosened only slightly. And one more tip, if you simmer them in chicken broth instead of water, you'll make a much better tasting gnudi.

I wish I'd read the reviews before I started cooking! The gnudi feel apart in my simmering water...an absolute mess. And yes, I had drained the spinach repeatedly until I did not get any more water. Fortunately, I did not put all of the gnudi in at the same time, so I had 4 that were on a plate waiting to be cooked. So, I heated some EVOO in a pan and sauteed them, which gave them a little crust. They were pretty good that way, but could stand a few cloves of garlic as they were a bit bland. Definitely better with the marinara drizzled on top. They were messy to make, though, so I probably wouldn't do them again.

After reading the other reviews I did add extra seaasonings. I used pepper garlic salt. After taking the Gnudi out of the water I drain them on a rack. Then crisped them up in some butter and evool. Also added some shredded mozzella on top of the sauce, put them in a 250 oven to melt cheese. Very good.

If you're wondering if the gnudi really do stick together, the answer is yes... sort of. This is an interesting recipe because it tastes cheesy and indulgent, but is actually quite healthy because of the high spinach content.

The Gnudi was still very good but it did need some garlic to give it an extra kick. I'll be adding that the next time and doubling up on the nutmeg. It's messy but fun to make and I did need more then 5 tbs of flour. I don't know how much flour I ended up using. Very, very good though. I'll be making it again!

This was so easy to make, and just wonderful. My 17 year old daughter loved it, and she says she "hates" spinach. The blend of flavors from the spinach and cheeses was great, but the touch of nutmeg really enhanced everything. Well worth the minimal effort required!!!!!

I read everybody's bad reviews, but these things looked so good and sounded so easy when Giada made them. But you were all right. I don't know if I did something wrong (I probably did), but the directions were too vague. The gnudi completely fell apart in the water. I'm sure if I tried a couple more times, I'd figure out what I did wrong, but it's honestly not worth the time, effort, and wasted food. I'm sure these are great when Giada makes them, but they're too difficult to recreate at home.

I have to say these were very disappointing and I think I did everything right. I even read the reviews beforehand--added extra nutmeg for flavor and was careful to have a low simmering boil. They still came out tasteless! I formed patties out of the remaining batter and browned them in some garlic and olive oil but even they were lackluster. Dishes like this are probably what keeps Giada so skinny!

Though I enjoyed this meal I agree with on review that it needs something. Garlic would be nice and perhaps a little grating of nutmeg. However I'm definely going to try pan frying them in a little olive oil, at slightly crunchy outer coating will make the difference (perhaps dip them back in a egg wash and then roll in bread crumbs).

This was OK, but really seemed to lack some flavor. Needed garlic or salt or something. It was a good way to get rid of some left overs in the fridge. I had some of these leftover the next day and browned them in some olive oil, which helped add some texture and flavor.

SICK! I don't understand what these reviews are talking about. It looked so delicious on T.V. but when I tried it, it was so tasteless, sticky and seemed like they needed to be baked or cooked in oil. Giada's food looks great but most of them lack in favor. The presentation of her food means more to her than the taste, so it seems.

i tried these and now they are a regular fixing in my home. I am diabetic, so I have to really watch my carb intake and these are just perfect. My family loves spaghetti and lasagna and all of those good things but they aren't on the menu much for me anymore, these little darlings more than make up for what I must miss!!!! The only problem is........my husband and kids always want some of MY gnudis instead of THIER pasta! They really ae great!! You can exchange the spinach for cilantro, parsley, I even tried them with chopped up broccoli, chopped up brussel sprouts...try anything in them!!

These were very good. I had several attempts that ended up in boiled mush. Then, I decided to saute the leftover dough in a little olive oil and cooked them almost like you would cook a hamburger. When I did that, they were delicious. Clean up is not fun.

I thought this looked very tasty when she made it on the show. However, my husband and I found it mushy and not tasty. I made mess in the kitchen while making it and then it tasted terrible.

My whole family thought this was delicous, even the one's that hate spinach. I was skeptical even after seeing this made on TV i thought it was going to fall apart in the water. But they didnt and tasted wonderful!

I found the nutmeg to be totally smothered by any type of pasta sauce, not just the spicy ones. I made a second batch and just used melted butter rather than a tomato based sauce and still couldn't get the flavor of the nutmeg (freshly ground) to pop. So I tripled the nutmeg and it's a bit better. Serving with a freshly chopped herb makes these a bit brighter if they've been stored in the fridge for a couple of hours.

My family really loved this recipe. It was easy to make and full of flavor. My daughter, who "hates spinach", came back for seconds. Go figure... Just have to be sure not to have the water boiling too much or have too much liquid in the spinach. As my daughter would say..."This rocks socks." Whatever that means...

I made this last night and after reading the reviews on here I added enough flour to the outside of the gnudis and they did not fall apart and they looked like they did on TV--I was so proud. But... I realized that I do not like soft food-it's too mushy with no crunch or part that holds it together--my husband said he liked it but next time stuff it inside ravioli (I told him not with the flour, etc but maybe without)

A few of mine fell apart, but I used nonfat ricotta and probably did not wring out my spinach enough. I will make this again and add garlic to the dough as others have suggested. It is a beautiful presentation!

After reading all the mixed reviews I was a little scared to make this recipe, but it turned out to be a very good one.I substituted the salt for garlic salt,like someone had pointed out, and also added more flour than what the recipe said.I served it with a spicy marinara sauce which complemented the gnudi very well. You have to be very carefull to have the water just right or they will break down.

My gnudi fell apart. The water was simmering, not boiling. The ricotta was drained and the spinach was wrung completely dry (using the paper towel tip I picked up from the Hearty Boys). So that must be something wrong with the recipe. Instead of wasting the remainder of the batter, I added a bit of milk to it to make it loose and blend it with cooked ziti. Layered it with tomato sauce and mozzarella and baked it. It came out delicious!

As I am the only one in my house to eat spinach, I halved this recipe, and I used 8 oz of fresh spinach which I chopped. It was a little mushy so I added plenty of extra flour and made the balls much smaller than I first started with because they looked like they would fall apart. I added the patties one by one with a spatula which I lowered slowly and seemed to help them keep shape. If I tried to take one out and it looked like it would fall apart, I turned it over and left it awhile longer. So none of mine did fall apart. the texture was still a little different than I expected for some reason and the taste wasn't in your face magnificent like I imagined after seing Giada make it, but I added a little extra garlic to my sauce and they were ok. I ate them. Next time I may put a little more parmesean cheese or maybe some sharper cheese with the it, like a little provolone or feta, as the taste of the chese seemed to come through and make save the taste. Maybe add some garlic to the patties also might help.

On first attempt, I didn't dry my spinach as well as I should. The gnudi fell apart in the boiling water. Still yummy, but what a mess. Second time, I squeezed the spinach as much as possible and the gnudi came out yummy AND beautiful. So much flavor and I love that it's not fried!

So, I didn't squeeze the spinach dry enough apparently, because my mixture was way too wet. When my gnudi balls hit the water they fell apart instantly. So I cooked some linguini, poured the mixture over it in a casserole and threw it in the oven for 20 minutes. Turned out pretty, good actually.

I've made this twice and would continue to make it. You might have to add a little more flour if your spinach is not really dry but I think the most important thing is you let them rest on a baking sheet before you start to cook them. I also put them in a casserole after cooking and baked them without the tomato sauce but with more parmesan cheese and butter.

To be fair, I didnt have frozen spinach so I tried some fresh spinach and a bit of homemade pesto sauce. When I added the eggs it got far too wet to form into balls so I added more flour, but it still was too wet make make the balls and boil in the water so I ended up giving up and tried the mix in rustic pizza instead.

This recipe is great .. but to keep from having them fall apart in the cooking water .. I just bake mine on a cookie sheet sprayed with PAM for about 15 min. on 375 .. then put the sauce on them .. yum ..I'm Italian and learned to cook so similarly to Giada ..I just love her.

What a great alternative to Gnocchi! My husband (who calls himself a Ginker off the boat) is very picky being that all he grew up on was Italian food. He loved the Gnudi and brought the left overs to work the next day to rave reveiws from everyone who ate one! They aren't as heavy as potato Gnocchi but very filling. I did a little alteration--1/2 tsp. garlic salt instead of regular salt. MAKE SURE YOU HAVE ENOUGH SPINACH. After squeezing out the water, I was glad I had thawed a 1/2 pound more spinach than the recipe called for, to eqaul a pound of thawed spinach.

I have made many, many recipes from Giada and this is, by far, the worst. I followed the recipe to the letter, and I ended up with a pot of floating spinach and scrambled eggs. I tried adding more flour to the remaining ones, and it did not help. Will not be attempting this again!

These miniature spinach dumplings looked like little bites of heaven however my first attempt failed miserably. Forever the optimist and certain I had missed a step or ingredient I made gallant second try. The second time around I achieved float but the taste and texture was less than acceptable. I am very disappointed; I had great expectations for this recipe.

I loved this recipe - but I always add some roasted garlic to the ricotta/spinach mixture to give it some "oomph." Also, Giada is just like my mother in that they both are nutso over frozen spinach - sorry, guys, but I like to saute mine with a teeny weensy bit of olive oil and garlic. Yummy!
