This was fantasic. I've always been a beef kind of gal and we are trying to get into a healthier regimen. I highly recommend this recipe (the entire menu is outstanding). I used an apple flavored pork tenderloin.

This just could not have been simpler. I don't have a lot of experience with pork tenderloin, so I was a little nervous about slicing it open, but it worked perfect and opened up fine. I was then able to trim off every bit of left on fat! I did cut back on the cracked pepper a bit, and did add some chopped shallots to the pan sauce. Really, very good!

This is my 2nd favorite Elle recipe and have made it several times with no changes. Its so quick and easy, and consistently ends up tender and juicy, with tons of flavor. Very versatile main dish since there are so many things you can pair it with depending on the guest list and what you're in the mood for. Not to mention its a healty alternative. I'm so glad FN added Elle to their list!

I opted to not slice my tenderloin as I perfer pork a little pink. I cooked it as directed and removed from the pan when the center was 135 degrees -- then tented the pork with foil. Into the pan I added 1/2 to 3/4 cup each of pearl onions and sliced mushrooms allowing them to saute for a few minutes and then added the wine and homemade chicken stock, cooking until it reduced. Served over rice, I have had rave reviews for this recipe from guests on two occasions. Definitely a keeper!

This was a tasty recipe, but I had changed it a bit. It seemed like it needed a little bit more, so I sauteed some shallots and some mushrooms in the oil after removing the meat. I then de-glaced w/ the wine, and added the broth and re-added the meat. It turned out great over some cous cous, and was really quick and easy.

I love pork, but my husband is convinced it's either fatty or dry (i.e., the overcooked pork chops of his childhood)...This was lean and tender - just be careful not to overcook it! Also, it IS a lot of pepper - cut back if it's not for you - it will still be great!

I've made this along with the suggested sides of Green Bean Salad and Parmesan Mashed Potatoes.....It's GREAT and so easy. I've already made it several times and it's now one of my favorites. Tip: Look for the "extra-lean" cut of tenderloin to limit the fat.

This dish is like dining in a fancy restaurant right at home! The great thing is that it is so easy. The dijon, pepper, and wine sauce are a perfect combo of flavors. I prepared this as a meal with the green bean salad and mashed potatoes shown in the episode. My dinner guests were impressed.

My husband and I loved this dish. I really like Ellie's recipes because they have all been so easy to make. I really cannot believe that is the "healthy" version with all of the flavor that they have. I have never cut the pork that way and it really made a nice lean pork chop.

This is the most tender and delicious cut of pork I've ever had. The mustard and pepper gave it such wonderful flavor. I made the whole meal from this episode, and I couldn't believe that something so healthy could taste so wonderful!! Will definately make again!! I want Ellie's show on everyday!!!!!!

This could be a good recipe but I couldn't taste anything but the black pepper. It is best to use just a bit more than sparingly as you spread it across the pork. It doesn't need to be covered because fresh cracked or fresh crushed pepper is very powerful. The wine sauce was terrific though, except again for the overpowering black pepper.

Excellent! I changed nothing however, once the sauce reduced some what, I put the pork back in the pan, turned the heat to low and covered. This recipe was so simple and quick....it was ready before we were.

I cook this cut of meat often, and the suggestion to butterfly it was a nice way to get a subtantial feeling portion size without over eating. The preparation was easy. I had to cook the meat for a minimum of 5 minutes longer, maybe because because my tenderloin was a bit thicker? No worries, just trust your thermometer and adjust accordingly. I also used yellow mustard (don't gasp!) because I like the tang of it versus the spiciness of the dijon style. My sauce did not have the depth of flavor I had hoped for and was a little on the thin side. Next time I will try a heartier wine and some Wondra to thicken. I served the green bean salad along with some sauted cabbage which I always like with pork.

I didn't care for the combination of pepper on the pan-roasted pork. I think the mustard and pepper coating would fare better on a pork loin that was roasted whole in the oven, but of course that would require additional cooking time. Found that the combo. of red wine & chicken broth made a somewhat "pink-y" sauce that I didn't care for. Note the pork needs to be butterflied well because if it's too thick in spots it's hard to cook evenly.

This was so simple and yummy! The only thing that kept me from giving it 5 stars is that it really needs salt while cooking. Not a lot, but a sprinkle just to give it more depth. The wine sauce is fantastic, I did it with some beefy zin. Served with the parmesan mashed potatoes and grilled zucchini, this healthy meal will be on constant rotation in our house. My husband said he had never had pork cooked so perfectly, though I needed to cook it at least an addition five minutes or so longer than the recipe suggested, but I suspect that is because of my faulty electric cooktop.

I loved the trick about butterflying the tenderloin. Because I did that I was able to use only 1/2 a whole pork tenderloin for 2 people and my fiance didn't complain about the portion size! Sneaky! The dish was very tasty and you would never know that it's HEALTHY! Thank you Food Network for adding this show to the schedule! It's a keeper!

It's hard to find a quick, easy and healthy recipe for pork tenderloin and this one has it all. The pork turned out so moist and the preparation was so quick and easy. This is definitely going into the regular rotation as well as the other items from this episode. The beans and potatos were great too.

While trichinosis may be present in pork (see reviewer's comments on worms in pork), it is my understanding that it is killed at 138 degress and that is far before it is well done. An instant read thermometer is a great tool for this.

The Fresh Prok contains worms, so when we eat pork we have to cook the meat well done to kill worms. When I watched the show, the host didn't cook the pork well done, and she was telling how good eating meat in medium rare. which freaked me out, and I had to comment on this. People can get serious sick from eating uncooked pork, and I think people/food network should aware of that. Everything else looked great about the show though...

My 7 year old grandson watched the episode with me, he said "Nana lets make that meal for dinner tonight" and we did...it was great, he helped rub on the mustard, he mixed dressing for the green beans and helped mash the potatoes...we had a complete "episode" dinner and it was great.

Not only is Ellie super cute, you can tell she knows her stuff. When I watched her show on Saturday I knew that I had to make everything that she demo'd. This is so good!! This recipe was so easy and everything that was promised. My husband liked it every bit as much as the traditional steak au proivre I make and was delighted to find out that it is a much lower fat alternative. The only thing I did differently was I did add a bit of corn startch to the sauce for thickening.
