I cooked it as directed and removed from the pan when the center was 135 degrees -- then tented the pork with foil. Into the pan I added 1/2 to 3/4 cup each of pearl onions and sliced mushrooms allowing them to saute for a few minutes and then added the wine and homemade chicken stock, cooking until it reduced. It is best to use just a bit more than sparingly as you spread it across the pork. It doesn't need to be covered because fresh cracked or fresh crushed pepper is very powerful. The wine sauce was terrific though, except again for the overpowering black pepper. The preparation was easy. I had to cook the meat for a minimum of 5 minutes longer, maybe because because my tenderloin was a bit thicker? No worries, just trust your thermometer and adjust accordingly. I also used yellow mustard (don't gasp!) because I like the tang of it versus the spiciness of the dijon style. My sauce did not have the depth of flavor I had hoped for and was a little on the thin side. Next time I will try a heartier wine and some Wondra to thicken. I served the green bean salad along with some sauted cabbage which I always like with pork. I think the mustard and pepper coating would fare better on a pork loin that was roasted whole in the oven, but of course that would require additional cooking time. Found that the combo. of red wine & chicken broth made a somewhat "pink-y" sauce that I didn't care for. Note the pork needs to be butterflied well because if it's too thick in spots it's hard to cook evenly. Not a lot, but a sprinkle just to give it more depth. The wine sauce is fantastic, I did it with some beefy zin. Served with the parmesan mashed potatoes and grilled zucchini, this healthy meal will be on constant rotation in our house. My husband said he had never had pork cooked so perfectly, though I needed to cook it at least an addition five minutes or so longer than the recipe suggested, but I suspect that is because of my faulty electric cooktop. When I watched the show, the host didn't cook the pork well done, and she was telling how good eating meat in medium rare. which freaked me out, and I had to comment on this. People can get serious sick from eating uncooked pork, and I think people/food network should aware of that. Everything else looked great about the show though...
