This is one of my favorite soups to prepare because of the flavor and ease of preparation. I throw all the ingredients in a crock-pot and 6-8 hours later I have a wonderful dish. I usually double the recipe and freeze half. You won't be disappointed if you love a spicy soup. I only use one cup of chicken broth which turns it into a great side, although you could have it as the entree. The dish holds its own without the crabmeat so I don't add it. The fresh cilantro adds a wonderful taste, and it's surprising how spicy this soup turned out! We added a little shredded sharp cheddar to our bowls to tone down the heat. I'll experiment a bit with it as I think it is worth it. I didn't use the crab. And I think the Andouille sausage was great. Had never had it before and I'm thinking I might try the rest in Split Pea Soup instead of using ham. Good but wish I had skipped the crab 02/27/2007 at 05:36pm User: Michael from Snellville, GA User Rating: Tried the soup before I added the crab and really liked it, but the crab meat I used was backfin (cheaper) & gave it a stronger hint of fish than I liked. Maybe it was because I used the backfin meat since instead of the most expensive. Also I used a mild version of Ragin-Cajin andouille Sausage (mild is new on the market) rather than the original which is very spicy. It was still pretty spicy but great if you like the extra kick. Will make it again but without the crab meat. One thing I would do differently is to make the soup a bit heartier next time by adding potatoes (or sweet potatoes) and additional vegetables. Our 8 year old twins struggled with the sausage, however, next time I would use a different, less spicier sausage for them. I do not agree with the previous reviewer - it was not bland. It was soupier than I had imaged... I thought it would have thickened up a bit more. I made it with some corn (pan)cakes (Rachael Ray made them once by reading the side of the corn cake mix). The crab really provided a cool down from the hot sausage. I used imitation crab meat and mixed it in soup so it wouldn't be cold. Could be served on brown rice. |
