The dill really threw things off because I was looking for an overall Mexican flavor. Do not include the dill. Also, the garlic herb cheese was kind of out of place. Everything else would have been OK and I'm sorry I didn't make these ommissions when I prepared the dish. I also spread the Boursin thinner on the one with the Jack cheese and in comparison I enjoyed the Jack/thinner boursin layer one better. It was delicious and would have been even better if it had stayed crisp. Don't know about her ingrediant quantities though: I think I used 3 oz. salmon on just 1.5 servings. An expensive treat, with both Salmon and Boursin (should have bought them at Costco)! Next time I'll use Allouette's version of the boursin. I don't like dill so I used chopped chives. The herbed cheese melted quickly and held the quesadilla together when I turned it over. I used an iron pan and medium-low heat. Easy and delicious. We also left out the capers and added carmelized onions instead. Very yummy! It was also very easy to make. Used less Jack b/c I didn't have much. They were really tasty and I still get comments about them a year later.
