smoked salmon and monterrey jack absolutely do not go together. cream cheese, yes. boursin, maybe. anything stronger than that, it fights the flavor of the salmon.

This is so good I'm taking it to a Christmas dinner party. I didn't use as much Boursin or cheese as was called for. Still very good. I thought the flavors blended well. The capers made the dish. Boursin is much cheaper at Costco.

It was plain gross. I wish people would not rate a recipe based on the changes they made. Its not the same. The original recipe is horrible. If you change it it's not an accurate review to say "after I changed everything it was great!"

I have made quesadillas with many fillings including smoked salmon but these were kind of strange. The dill really threw things off because I was looking for an overall Mexican flavor. Do not include the dill. Also, the garlic herb cheese was kind of out of place. Everything else would have been OK and I'm sorry I didn't make these ommissions when I prepared the dish.

My husband and I didn't like this at all. I didn't like the blend of cheeses with the salmon. I will never make quesidillas with salmon again. Good thing I made guacamole!!

I read prior reviews and decided to replace cheddar with combo of shredded Gruyere and Sargento low-fat 4-Italian blend for a milder flavor. Quesadillas were delish. Will make it again!

Having read the other reviews, I made one without the Jack Cheese and half of one with the Jack (but sprinkled it lightly). I also spread the Boursin thinner on the one with the Jack cheese and in comparison I enjoyed the Jack/thinner boursin layer one better. It was delicious and would have been even better if it had stayed crisp. Don't know about her ingrediant quantities though: I think I used 3 oz. salmon on just 1.5 servings. An expensive treat, with both Salmon and Boursin (should have bought them at Costco)! Next time I'll use Allouette's version of the boursin.

Too many clashing flavors, like the boursin and the herbs and the salmon and the jack cheese. SIMPLIFY! This might have been good without everything and the kitchen sink in it.

I love quesadillas but usually only use cheese and sometimes chicken. The salmon was a great idea. I don't like dill so I used chopped chives. The herbed cheese melted quickly and held the quesadilla together when I turned it over. I used an iron pan and medium-low heat. Easy and delicious.

This was just a horrible recipe. The salmon and boursin would have been fine in a finger sandwich maybe or on crackers but in a quesadilla with that shredded yellow cheese it was inedible.

As you all know, smoked salmon and cream cheese goes well together. Never thought to put in into a Quesadilla. The flavor was better than I thought it would be. I served it at my "Girls Spring Fling" and everyone wanted the recipe. Keep the recipes coming, Sandra!

I thought this was very good with a few changes. We substituted fat free cream cheese for the herd cheese. We also left out the capers and added carmelized onions instead. Very yummy! It was also very easy to make.

I made these for an impromptu girls' lunch but didn't have smoked salmon on hand so substituted a can of canned salmon packed in water. Used less Jack b/c I didn't have much. They were really tasty and I still get comments about them a year later.
