The Strawberry Sauce Makes the Dish 07/14/2008 at 08:41am User: M from Arlington, MA User Rating: These were good; I haven't eaten or prepared pancakes in years, so I can't judge against the fuller-fat lower-fiber variety. I made these because I was sold on the good-for-you factor and I also wanted to test out my new Griddler. I didn't understand, though, why the heat below the griddle or pan needs to be so low. The pancakes took a long time to cook; I don't recall ever waiting so long for pancakes, or cooking them on low-medium heat. Does it have anything to do with the whole-wheat flour? The lower fat content? The pancakes were a tad dry; so next time I might make more of the yummy strawberry sauce. And don't skimp on the confectioners sugar; a little goes a long way and adds a nice, decadent touch. My husband really liked these, but he did have to add a little maple syrup. Instead, I just added a few blueberries into the batter. The pancakes were pretty soft and thick and I couldn't taste much of a difference with the wheat flour. The one thing I will warn is that they HAVE to be eatten while warm, otherwise they lose some of their flavor. Will definetly make these again! I was not impressed. I found the pancakes to be extremely tasteless and had no warm or complex flavors which easily could have been achieved by adding some spices and/or extracts. However, the texture was not even good enough to build from this recipe. Will search for another, better, wheat pancake recipe. Definiltey would make them again. The strawberry syrup was ok - not all that sweet and I used frozen strawberries so they seemed a bit watered down. However, I found the batter to be a little thinner than regular buttermilk pancake batter. A little bit more difficult to make the perfect round pancake but delicious for a whole wheat version. So light and fluffy and slightly sweet! I didn't make the strawberry sauce. Instead, I served them with the mango sauce Ellie makes for Angel Food Cake. Turned out great! I don't know that I'll every try another pancake recipe again. From now on, this is my pancake recipe! Is is by far the best pancake recipe I have ever tried. The flavor, consistency and color are all fabulous. I have added every type of seasonal fruit available with great success. Don't change a thing, prepare the recipe as written. You won't be disappointed and will end up with a new favorite recipe. I threw out my other pancake recipes. They rose beautifully and the whole wheat flour lends great texture. I've never made pancakes in a non-stick pan without butter, but it works great and cuts down on much of the richness of typical pancake prep. Also, the strawberry sauce was very nice; I imagine substituting raspberries would be equally delicious. I used the whole wheat pastry flour that I have bought for several of Ellie's other recipes. I also did not have any strawberries so I made a blueberry sauce instead by simmering 1 c. frozen blueberries with 1/3 c. water. I then added 2 t. cornstarch dissolved in 1 T. water and simmer a little longer. Right before serving I stirred in 1 T. of maple syrup! It was a great breakfast and no one knew it was HEALTHY! Easy to make. And, the best part is they are more healthy for you than white flour pancakes. The strawberry sauce needed a touch more honey or sweetner if the berries are not that sweet. They were light and fluffy and the hint of vanilla made them even more delicious. I'm always looking for recipes that use whole wheat flour and this recipe uses 1/2 regular flour and 1/2 whole wheat. I did make some slight changes though. I used a little Splenda since my honey was a little too thick for pouring and I used one regular egg and one "Egg Beater" egg. What's great about this recipe too is the fact that you don't have to add any oil or butter. It's definitely a keeper and one I will share with my friends! |
