I was so excited to make this. I thought it sounded so good. I didn't care for it, nor did my family. I thought it had too much spaghetti in it, and not enough flavor.

Delicious, very different taste!

This recipe is great; I had to tweak it as my boyfriend does not eat red meat or pork, so I use ground turkey and turkey bacon. Other than those changes, I follow the recipe as listed and it comes out great (and is even healthier because of our substitutions). Thanks Rachael, this is a staple at our house!

Gaucho Spaghetti

User: Meredith from Williamsburg, VA    User Rating:
This is absolutely one of my go-to recipes! I have modified it quite a bit. We call it Gaucho Spaghetti because I use chorizo instead of hamburger. I never seem to have bacon thawed when I need it, so I use a little bacon grease and Real Bacon Bits in the meat when I brown it to give it a smoky flavor. I add an 8oz can of tomato sauce to make it a little "saucier". Finally, I don't skimp on the beer and let my sauce cook down more than Rachael suggests to make it richer. I always have all these ingredients in my pantry so this is very easy and tastes delicious!

I love this recipe! Spaghetti and meat sauce is my favorite comfort food and is an easy dish when you're short on time and or ingredients. Adding a a few more ingredients (which are mainly toppings) makes it a new meal! You must use the diced tomatoes that are "fire-roasted" they are responsible for taking it from an Italian to western cowboy flavor. I like to eat this layered in a deep bowl rather than tossing it altogether.

Suprisingly delicous!

User: Nicole from Layton, UT    User Rating:
I love this recipe! And considering how many revisions I had to make for lack of ingredients I am proof that this recipe is good no matter how you fix it. I started making it and realized that I didn't have fire roasted tomatoes so I used stewed instead. I didn't have scallions or bacon either. I can't wait to try this recipe how Rachel intended! The only thing that I would do differently is I would season the noodles more than I did, but that isn't a recipe flaw. It's cook's error!

I am Italian and I don't like funky things on my pizza or pasta, so when I heard the announcer say that Rachael Ray was making Cowboy Spaghetti next I almost changed the channel. Good thing I didn't because the dish wasn't anything I thought it would be. I made "cowboy spaghetti" last night and it's one of our new favorites. I didn't use the cheese, scallions or bacon, I just couldn't see it working, and I don't feel those ingredients would have added anything so I'm glad I left them out and I will omit them when I make it in the future. It's not a "saucy" pasta but everything was coated with the yummie sauce, seasoned ground beef and tomatoes and it was moist and great (I did add some pasta water to stretch the sauce). Loved the flavor the beer, Worcestershire sauce and few dabs of hot sauce gave it (I didn't use as much hot sauce as the recipe called for). I usually have all these ingredients on-hand and it's a great quick-fix meal (that makes a TON) so it?s something I can whip up when I am lacking inspiration in the kitchen. Almost reminds me of a quickie faux bolgnese in a kinda/sorta way.

Amazing!

User: Dennis from Anderson, SC    User Rating:
After a long day of shopping and errands I came home to prepare this meal and it was done within 25 minutes. We didn't add the bacon, cheese, or scallions because we didn't have any on hand and it was just as awseome. This recipe tasted better than our favorite Bolgnese Sauce that takes 3 hours to cook. This was very filling and satisfying with plenty of carbs and protein. What makes this recipe so good is the worcestershire, hot sauce, and fire roasted tomatoes. I will be making this one more often and is now considered a family favorite.

This wasn't on TV recently, but I am always looking for new recipes to make. Today, after searching foodnetwork.com for an hour for a pasta dish with meat in it, I came across this recipe. We just got done eating it and my husband and I LOVED it! The only thing I changed was the amount of pasta that I served with it. I probably used about a half a pound of pasta versus the whole box of spaghetti, but other than that I followed the recipe to a tee. Keep it up Rachael! We love your recipes :)

This recipe is better than any spaghetti recipe I've ever tried. I've made it countless times for my family and everyone loves it! I always make extra bacon to top it with. The cheddar cheese is surprisingly fantastic with this dish. It could sometimes use more tomato sauce and left-overs are not always as good as the first time, but it is a must-try!

I'm sorry to disagree with the other reviews, but I really did not care for this dish, and I am a HUGE Rachael Ray fan. I've made about 30 of her dishes and I've loved most of them! Sadly, this spaghetti sauce just didn't taste good to me. One thing to note is that I got this recipe from her cookbook (Express Lane Meals) and that version of the recipe actually differs from the one listed online! The book recipe doesn't include the beer. That might be why I didn't enjoy it when I cooked it?

Woah, partner. Where'd the bacon come from?

This spaghetti is not for those looking for a light meal. This is also not for you dieters. This one is heavy, heavy, HEAVY. Having said this, I love this recipe! I would have rated it a 5-star with the exception that the bacon MAKES this recipe pop out. You simply shouldn't have this without the bacon. All the flavors and ingredients are apparant in this meal and it is something that my family regularly requests.

Definitely a Keeper!

This recipe is very simple and delicious but the ingredients fire roasted tomatoes, canned, I couldnt find it so I used regular chopped tomatoes.. The only problem is when I got home from the grocery store they didnt put the can in my bag so I used bottled medium salsa. It was good but next time I'll keep extra canned tomatoes in my cupboard. The recipe was wonderful and I'm not a Rachael Ray fan...

A surprisingly good Rachael Ray recipe. Overall, I think the ingredients work well together. Could probably do without the beer though, as it adds pretty much nothing of any importance to the mixture. Or maybe that's just because I used Natty Light. Anyway, this was a good meal.

This recipe is so good. My husband and I loved it. SO did our family. We make it atleast once a week. And you can switch it up in so many ways, by adding other veggies. We add mushrooms, green and red peppers and jalapenos in ours to kick up the spice factor. It is sooo good. My only suggestion is that you buy an extra tomato sauce, sometimes you need it. But very good recipe!

We added bacon to the sauce and used a jar of fire roasted red pepper & garlic spaghetti sauce instead of the crushed tomatoes and tomato sauce. For an extra kick some of us added chopped jalepenos to the top with our bacon, onions and cheese. YUM-O!!!!!

My family absolutely loves this recipe! We make at least twice a month, and fight over the leftovers to pack in our lunches. I make a couple of alterations to the recipe... I use italian sausage (turkey italian sausage, sometimes), whole wheat spaghetti, and real bacon bits, instead of frying the bacon. WONDERFUL!! Also, this recipe is extremely adaptable. Last night, I was cooking, when I realized that I didn't have any worsh. sauce, so I substituted in a mixed of Country Bob's Steak Sauce and soy sauce. It was still great! I also use the Chipotle Tabasco sauce for the hot sauce. Highly reccommend!

This was a wonderful recipe that I tried. My husband loved it and my 2 year old son loved it. Even though my son can be very picky with food he was not picky at all with this spagetti. I did change a little bit of the recipe because I did not use beer and the scallions. Instead I used beef broth and green onions. This turned out to be a fabulous dish. Thanks Rachel! Elaine

This is always a recipe that I keep around when I can't decide what to make that day. It's comforting, filling, and a great combination of flavor with the bacon, fire-roasted tomatoes, onion, and sharp cheddar. I don't keep bacon around the house so I substitute already cooked real bacon pieces that I mix in with the meat mixture and then also leave some out as a condiment. It's works just the same!

I made this along with some squaw bread and lemonade for my husband's birthday. We paired it with a double feature of My Name is Trinity and it's follow up for my Spaghetti Western lovin' man! We set the table with a western theme, filled cowboy boots with little presents for hubby. Then we devoured the meal, leaving no leftovers, before settling in for movie night. It was a total hit!!! All four of our children LOVED it and my husband continues to ask for it from time to time since then. What a great twist on a commonly used family meal!!! It was a perfect way to celebrate a special day... Thanks Rachael!!!!!
