Disappointing 12/15/2007 at 10:11pm User: Kimberly from Buda, TX User Rating: After reading the other reviews, I knew the sauce was going to burn, so I decided to marinate the pork in the sauce for a couple of hours prior to roasting. After marinating, I prepared it according to the directions and poured the little bit of marinade that was leftover on top of it. That little bit did burn, and I had to roast it for about an hour, not 45 minutes to get the right temperature. The marinade flavor was good, but I didn't like how it was paired with the tomato pesto. If I made it again, which I will not, I would not even use the pesto and I would marinate the pork overnight and then not put anymore sauce over the top. This recipe was easy and it tasted that way. This is my second Robin recipe that has been disappointed this week. I like her show and her ideas, but I have yet to find a good recipe from her. Why do the food network personel continue to call it tenderloin when it actually sirloin end boneless pork loin? Maybe it was just the particular pesto I purchased, but I felt that the pork needed a bit more sweet than the pesto offered. I have certainly had better pork loin recipes that were just as simple. Then I added just a touch of tangy BBQ sauce in addition to the honey mustard. the result was wonderful! I cooked the meat at 450 for 15 minutes then turned it down to 400 until it reached 155 degrees. The taste was okay, but next time I'll just use the honey mustard glaze on the loin and toss the pesto with fresh cooked pasta or spread on toast to serve on the side. The flavors were sort of conflicting. Also, it was a bit over-done at 45 plus rest time and not as juicy as we'd like. I'll cook at 30 min. next time. I used a tenderloin, butter flied it, pounded it out and spread on the tomato pesto (easily found within the spaghetti sauce - you might even try the condiment isle). The cooking time was perfect for me - about 160 degrees and everyone loved it for Mother's Day dinner! They LOVED it, and could not stop talking about it even when they went home. My mother in law called me for the recipe. I served the pork loin with mashed cauliflower and fresh green beans tossed in olive oil, salt, pepper, lemon juice and garlic. This is a recipe that I will be making for a long time! Bar none, this piece of pork had so much flavor and was quite moist and it was very easy to prepare. It took longer to cook than on recipe but I cant remember exactly how long. It was tender and delicious. My family raved and even my son who is not much of a meat eater asked for more. I did use the leftovers for pork fried rice and it worked great. This is a winner! It was really easy to prepare and I marinated the meat 24 hours prior to cooking. The natural juices were trapped into the meat making it tender, juicy and delicious. I used Jasmine rice to give it that extra flavor and it was worth it. The smells coming from the kitchen definitely had my tummy rumbling. Although, he did seem to enjoy it more cold the next day in a sandwich. It was an interesting blend of flavors. The tomato esto kept the pork nice and moist. Was not my favorite pork recipe, but it was easy and we did enjoy it. I used the boneless pork loin like Robin did in the show. I had a 1 1/2lb piece on hand and I found that it was done in exactly 45min. The balsamic mixture was starting to carmelize on top and I was afraid it was going to burn and dry the meat out. So the last 15 min I basted with water. The pan drippings tasted burnt since the mixture was drying up and burning before I added water. Any suggestions to prevent the burning of the sauce while it cooks? But pork itself and the Balsamic sauce were bland. I love Robin's idea of using leftovers, but I'm not sure if her recipes are as good as other chefs' in FoodNetwork.
