Either he was starving when he got home last night or this recipe has created a change of heart in him. He even went back for seconds mucht to my shock and awe. I followed this recipe fairly closely. I did use the cast iron skillet and I cooked each steak a little longer on each side making sure the crust was nice and crisp. I returned the steaks to the gravy per the recipe and they came out fine... not a soggy mess as some experienced but I can see how this would happen if the outside wasn't real crisp to begin with. I thought the gravy was very good and I will definately make this again. At the risk of being blasted by the "seasoned cooks", I used canned buscuits. I just didn't feel like taking the time for the real thing. Even with the canned buscuits, the meat and gravy was exceptional. Their was also too much liquid & not enough starch to pull the gravy together - the bisquits I feel were tasteless but maybe I just dont like buttermilk that much. I removed the broken coating & just dipped in flour, which I re-seasoned, and refried to salvage them. I made a roux & thickend the gravy then added a bit of chicken stock to smooth it out & give it a better flavor - the bisquits were fed to the birds. My entire life I have tried and they either came out to tough or to flat. Most recipes including yeast for biscuits require that it rests for at least 20 minutes. This one didn't so I gave it a shot. They were perfect. I even forgot to add the sugar in the mixing process and just sprinkled it onto the dough kneeding it in quickly just a couple of turns and they still turned out perfectly. Everyone is begging me to make them again. They are exactly what I think of when I think of a good southern biscuit. The second time I made them, I used a combination of butter and shortening (1/4 c. cold butter to 1/2 c. shortening) and I added one tsp. of freshly ground black pepper (I normally do this when I make biscuits for savory dishes)much better flavor. Do not put the steaks back into the gravy. Make sure they are completely cooked and keep warm. I added a tsp. of Chicken bouillion granules to the gravy mixtures for more flavor. Simply spoon some of the gravy over the steak and biscuits. The biscuits say they have sugar in them but then they never tell you to put it in. I make a lot of bread so I knew to put it in with the yeast. Also, Paula said she brushed melted butter over the tops before baking, which the recipe doesn't say. I've done this on biscuits before and it helps them a lot with flavor. Paula also doesn't over mix or knead the dough, only just till the ingredients are mixed. Over mixing destroys them. As far as the steak, she never says to put the steaks in the gravy on the show. Why on earth would you do that? It's kind of obvious it will turn the crunchy crust to mush. Should read a 1/2 inch of oil to fry the steaks in, not a 1/2 cup. And somehow I have a hard time believing Paula would ever have MSG in her kitchen, let alone put it in a recipe... This is just absolutely ridiculous. Now I wish I had written down the ingredients from the show because it makes me wonder what else is wrong that I didn't notice. Paula NEVER returned the Chicken Fried Steaks to the milk gravy. She poured a small amount of the gravy on the steaks when serving them. I also noticed that Crisco is recommended for the biscuts but on the show Paula recommends Lard. Frying the steaks wasn't so bad. Some of the breading came off while frying but that was fine. After cooking the steaks, I started to prepare the gravy and it didn't work at all. I threw it out and made a dry packet of sausage gravy mix that worked out better. I used cube steak, and they were delicious right after they were fried. But once returned to the gravy and cooked for 30 minutes, they were a wet disgusting mess. My reccomendations: Fry the steak, make the gravy using something other than left over fat (like beef broth) and then put it all together with biscuits or potatoes. I love Paula, but this is a bad recipe.. So, I think if you make these biscuits with the intention of only using them with "salty" gravy, or even with really sweet honey, then you're good-to-go. Other than that, don't think about it. I followed how Paula made them on TV. After mixing the ing. I turned dough out onto plenty of flour (remember her dough was pretty wet!), sprinkled top lightly with flour and kneaded lightly to bring it together. I put in a jelly roll pan and pressed each biscuit to be sure they were touching and then brushed with melted butter (Paula mentioned that on her show). They did take a bit longer in the oven, but were worth the wait! YUM! I also made the country fried steak. I used round steak, didn't have a butcher to run it through a cuber, so I pounded it to tenderize it. I followed her recipe for the most part. I used a HALF INCH of oil as Paula mentioned - and following Paula, I did NOT put the steak back in the pan with the gravy. I made sure my steak was cooked after taking it out and then served it with the gravy on the side. You want it to be crunchy! I also added more pepper to the gravy as we love pepper. Additionally, I read the REVIEWS before I try the recipe. Even though I'm a seasoned cook, I did find all the comments for these two recipes extremely helpful. I wanted to try the biscuit recipe and, per the REVIEWS, bumped up the amount of salt to 2 tsp. and used butter-flavored Crisco. I also mixed the buttermilk with the yeast/water mixture immediately before adding to the dry ingredients to make sure the yeast was evenly distributed. The mixture was quite wet but I was able to pat it out on a floured pastry cloth using considerable bench flour and they turned out wonderfully! Though they didn't have the same texture as a true baking powder biscuit, it did resemble a cross between that and a dinner roll. I definitely will try these again. I served them with the Chicken A La King I made for dinner tonight. Novice cooks should ALWAYS read the REVIEWS. Cooks with experience would know that simmering a breaded crispy-fried steak for 30 minutes, let alone just 10, would render it a soggy mess. I'M NOT FAULTING PAULA FOR THESE RECIPE ERRORS. I CERTAINLY SPEAK FOR THE REST OF THE MEMBERS HERE WHEN I SAY THE FOOD NETWORK SHOULD BE MORE ATTENTIVE TO THE COMMENTS HERE AS WELL AS ANY DIFFERENCES IN HOW THE COOKS PREPARE THE RECIPE ON THEIR SHOWS AND MAKE ANY CORRECTIONS AS NECESSARY. The food network needs to watch their own programs to see how these recipes are made. When people send in a review the food network should read them and then fix the text of the recipe to match the show. It is a waste of money and someone's time when the recipe is written wrong. I always read the reviews now before making a recipe from the food network. To see what problems or suggestions other's have when making recipes from the food network programming. Everything is perfect. Anyone who says the gravy was bland does not know how to adjust seasoning to their taste. As with any recipe the seasoning needs to be adjusted as some people like more or less salt or more of a certain thing. The only thing I did differently is I returned the steaks to the gravy for only 10 minutes. Just enough to infuse all the flavors but not getting soggy. The key is not to submerge the steaks, just try to rest them on the gravy. ANother winner...THANKS PAULA!!! It didnt have much flavor, so I think next time I will find another gravy recipe to try. By the time I got to the biscuits I was so tired of cooking that I just popped a can of biscuits in the oven instead of making them homemade. Overall, the meal was ok. Like I said, the gravy wasn't great but the steak had a good flavor (even with the coating falling off!). I would still say this was a pretty good recipe. It's some work putting together all of the ingredients for the biscuits and everything, but well worth it in the end, and to say that it's made from scratch makes it that much more impressive! I cut the recipe in half for the biscuits and it makes more than enough, about 17 for just me and my husband. They come out sweet tasting and my husband likes to put butter and jam on it as an optional treat. As for the steak, I season as in the directions and dust with a little flour before dipping into the buttermilk, and then coating with flour. It totally helps the crust stay on when it's cooking. And for the gravy I think the trick is to bust out with a whisk and cook it quickly, constantly stirring and adding milk and flour as you need it. My whole family loves this meal and I'll definitely be marking it as one of my favorite recipes. DO NOT SIMMER THE STEAKS FOR 30 MINUTES!! After you fry the steaks, just keep 'em warm while you make the gravy. To make gravy pour off all but 2 T. of oil and then proceed as outlined in recipe. I used "House Seasoning" instead of Accent. Turned out AWESOME!!! Also, I just used refrigerated biscuits and it was easy and delicious. After putting the fried steaks in the gravy for 30 minutes all the breading fell off into the gravy, leaving a lumpy greasy mess and the steaks became overcooked. If you make this do not put the steaks in the gravy, put them in the oven to keep them warm, then prepare the gravy and put on the steaks. Someone needs to be checking this - it made a huge difference in cook time and how well the crust stayed on the meat. I would have liked to have seen a recommended oil tempature if possible as well. I didn't make the biscuits, because I used her mix for the cheese biscuits that she serves in her restaurant. They were very light - very good for biscuits from a mix! The buttermilk adds such a nice tang. I dipped the meat first in flour, then in the buttermilk, then in flour again. I also didn't return it to the pan to cook with the gravy. My coating stayed on the meat perfectly and had a nice crispness to it. Another suggestion to keep the coating on is not to mess with the meat too much when it is frying. Just drop it in, let it cook for about 4 minutes, then gently pick up an edge to see if it's ready to turn. This was almost as good as my aunt's! They were nice and tender but needed more salt or something. I would have expected the tops to be brushed with salted butter but they were not. Perhaps instead of all shortening it should have been half shortening and half butter. Also as my steaks cooked, the blood that cooked out of it cooked into the crust of the steak giving it a really unappealing color. The steaks cooking in the oil was nerveracking since we never have done something like this. So we pulled the steaks out early, then throwing them back in. The key is to let them hang out until they are nearly black... more like dark brown. The gravy was tough. We didn't know exactly how much extra oil to incorporate into the gravy. We did what the instructions said and it turned out lumpy. More like the gravy was curdling. I am sure this was our fault but it was difficult to do. Next time we are going to skip this step and just use the McCormick gravy packet and mix our own. Anyways, great recipe and if you like pepper than feel free to throw it around generously. Thats what we did and it was good. Second try?-used 5+ cups Self-Rising flour, leaving out baking powder and salt, baked on cast iron drop biscuit pan at 410 degrees F. Bisuits were very large, so I increased the time to 15 minutes. Texture was perfect. Next time I will preheat the pan to give a firmer bottom to the biscuits. Cooked tops were spiky. I baked the remainder of the dough on a flat air-filled cookie sheet. Dabbed tops with milk. They did not rise enough to suit me. Flavor was very good but needed a little extra salt. Resembled ?cat-head? biscuits. I suspect the food kitchen writers took liberties with Paula's recipe because in the south we don't "return the meat to the gravy" (unless we're making smothered steak) and neither did Paula! Tip - try lightly coating steak with flour before dipping into buttermilk - this should help coating stick to steak. Also, when making gravy - try adding 1/2 of the called for liquid to flour mixture - if too thick, add some more until you're happy with the consistancy. Remember - Food Network is based up north and they don't know "southern cooking"!! I rated this 5 stars because Paula did it right!!!
