However, I have also made a few batches where I added about 4 tablespoons of cinnamon to the batter. The cinnamon gives the cookies a great depth, making them even better! They're rich with a slightly crispy outside and chewy inside...awesome when they're warm! I only used all-purpose flour, as I didn't have any wheat pastry flour on hand, and I only had semi-sweet chocolate chunks in the house, so I substituted them for the other chocolate. If they taste even better with the original ingredients, then it would be cookie nirvana. A SOLUTION TO THE OIL PROBLEM: I learned this a long time ago, don't remember from who, but Ellie has done this in some of her baking: I substituted oil with applesauce and it came out super moist. No oily taste or smell, and without even trying I reduced the fat content a lot without sacrificing taste. I rarely use oil in baking. Applesauce rules lol. So does Ellie!!! Maybe next time substitute some oil for light margarine. Otherwise, I loved the chocolate and pecans. I used 1/3 cup dark chocolate chips and 1/3 cup semi-sweet chocolate chunks. I used regular wheat flour, and replaced the brown sugar with 1/4 cup brown Splenda blend, and replaced white sugar with 1/8 cup Splenda blend. I was very skeptical and really thought they wouldn't come out very good. I was SO wrong. They are SO chocolatey and nice and chewy and moist. As someone else said, I used milk and dark chocolate chips instead of the bars and I liked that a lot. These are also very easy to make and don't take long as all. I am not the greatest baker but I know that these two changes will make a HUGE difference in the outcome. You can change your mix in's like the kind of chocolate or nuts though. I used all whole wheat flour and applesauce instead of the oil and the result is a very decadent, rich, and chocolatey cookie. I also added a touch of cinnamon which I will probably leave out next time or reduce the amount. Either way I am going to be making these again and again - they definetly hit the spot. One problem I did have on the first cookie sheet is that my cookies didn't spread at all and I am sure it is because of the applesauce so on the second sheet I pressed the cookies down and they came out perfectly shaped and the right thickness.
