I used the zest from four small oranges, making it more "zesty." I then blended the juice from the four oranges with 1 can of prepared cream cheese icing and poured that over the top, instead of the confectionate sugar glaze. The extra orange flavor and creaminess of the icing really added a "Wow" factor to this already fantastic recipe. I wanted an orange coffee cake like one from my local bakery and I tried different variations of just using a base Sour Cream coffee cake but it was to no avail. This was the closest and most spectacular. I know I gotta take Paula's recipes w/ a grain of salt, but I felt the arteries clog with this one. The Cream cheese may not be necessary, but I mixed in a tbsp zest and 2 tbsp juice into the cream cheese to give it a more orange flavor, and also used the rest of that mixture (whatever was left in the bowl about 2 tbsp) + 1 C powdered sugar, orange juice, and more zest for the icing! Had to give away slices before I ate it all myself, and at nearly 600 calories per slice (ya I'm serious) its definately dessert. Also, I tried a healthier version of this, using only 1/2 stick of butter and 1/4 C egg beaters as the 'glue'. Omitted cream cheese but brushed all with buttermilk. Used 1/2 splenda and 1/2 Brown sugar for the sugar. And 1/2 the glaze. Sooo easy and quick to make but it comes out looking like something you could have spent a while preparing. I would definitely use only half of the butter and the cream cheese the recipe calls for, though. I poured the leftover butter on top (as recommended) and though it still tasted good, with the biscuits already being dipped in butter it didn't seem necessary. Also, don't bother to cut the cream cheese into pieces like Paula's son did on the show. It's kind of hard to cut a block of cream cheese and I just ended up pulling off small pieces and tucking it inside the biscuits and it was fine. DEFINITELY recommend this one...everyone loved it and it was so simple to make. Everyone loved it. I could only squeeze about 13 biscuits in the pan though and had trouble figuring out how much cream cheese to put in each one. But I would recommend it to anyone!!
