I made these for 2 different parties (with different people at each party) and everyone raved about them at both! These are super easy to make for anytime you want a filling yet, (what seems to me to be) a healthy snack! Paula- You Rock! thanks so much!




Refreshing little sandwiches

I made these sandwiches for a Bridal Shower and everyone loved them. I let the cucumbers and onions drain(lots of water in them) for an hour before I mixed them with the cream cheese. I also added a little fresh dill to the mixture. They were quite refreshing for a summer shower and quite pretty on a serving tray. I will make them again.

I love these sandwiches!! I made them for a mother's day brunch that I had. They were so cool and tasty. I used a heart-shaped cutter and they looked as good as they tasted. I didn't have any green food coloring though, and went without it. You definitely have to take some time to drain them, since there's so much water in cucumbers. Great addition to our party!

This is a wonder change from the same old cucumber sandwhich. I used it for a baby shower that I was throwing. I followed the directions, from her show (meaning I let the cucumber and onion drain - before mixing it all together). It was a hit. I also noticed that if you let it sit for a day or two it taste much better then when first made.

I made the recipe exactly according to the recipe. It was way too bland, but I love the combination of cream cheese and cucumber, so I added two cans of tiny shrimp (drained), upped the hot sauce to about 1 teaspoon, and added about 1/2 teaspoon of dill. It was wonderful, and although it isn't the same, I never would have tried it if it weren't for the recipe!

This was good, but I ended up adding more than just a spash of pepper sauce as I found the recipe to be a bit bland. I'll make this recipe again, but I think next time I may add a bit of cilantro chopped up in the cheese mixture...or even a bit of a finely diced hot green pepper.
