Soaking the pork in the milk mixture brings a great flavor to the meat. I substitute a little panko breadcrumbs (about 1/4 of a cup) to add a little crunch. It really beats Shake & Bake hands down, esp. if you are trying to ween yourself off processed/high-in-sodium foods. Turns out I made the best decision. This recipe was very easy to execute and tasted fantastic. I subsituted the wine for chicken stock and the cheese for a 3-cheese blend I had on hand and added a little parmesan to the top. Tasted so good. My only issue was that I think my chops were slightly thicker than the recipe's and they could have done with an extra 5 minutes in the oven. Not the case with this recipe. Cooking on the rack also worked out great, as sometimes I find I loose the bread coating in the pan. It was very moist, and flavorful, easy to prepare. Was still moist the next day, heated up in the microwave. I will make this one again!
