I used chicken stock instead of wine, and I could only find sun dried tomatoes in a jar packed in oil. I just drained them really well before adding them. I do agree with the other reviews that this could use more sauce. Next time I'll double the stock, add a bit more cream, and maybe try chicken instead of tuna. Excellent. In fact, the sauce was done so quickly that I was left waiting for the pasta to finish! I agree 100% with other reviewers - MUST double the liquids (cream and wine). In fact after tossing it all together with the pasta I STILL felt it was too dry, so I stirred in even MORE cream last minute to give it a smoother (as opposed to sticky) texture. Other additions I made were to add a pat of butter to the EVOO (everything's better with butter and this is no exception). Also added crushed red pepper flakes to the onions/garlic mixture. The basil is a MUST - you'll love the sweet undertones it adds to the dish. Didn't use Parm-Regg cheese - just used parmesan and it was fantastic. Also didn't use sundried tomotoes - not a fan and was trying to keep my grocery costs down. STILL delicious. Lastly, this recipe says it's for 4 servings - actually it's more like 5 - 5 1/2 - there's TONS. I have enuff for lunch and dinner tomorrow. I've been hot and cold on Rachael's recipes over the years but must admit she definitely has a winner with this one: quick and yummy. He said it reminded him of a tuna version of linguini and white clam sauce. Absolutely delicious! Yes, it does need double the sauce, but that adds virtually no extra time to speak of. Working together, we made the entire menu in about 20-25 minutes! This is very versatile, as you can use tuna, clams, salmon, scallops, shrimp... whatever you have on hand with equally great results. Super fast, super delicious and, with the entire menu coming in at just under 34% fat calories, super healthy! The only change I made was to use fat-free half and half instead of the regular heavy cream, and-- honestly-- we didn't notice any change in taste or texture at all! Thanks, Rachael!!! So i doubled the wine, and tripled the cream, and I skipped the tomatoes altogether. It was a great dish!!! My husband at all of his before half of mine was gone! My only but: we all agreed we could have used more of the sauce and that the dish was on the dry side. That did not stop us from eating the entire casserole in one sitting. If we'd have had left-overs, I'm sure the pasta would have absorbed what little was left of the sauce and the dish would have been too dry the next day. The next time I make this, when I drain the pasta, I"ll be sure to keep 1 and half cups of the pasta water. I just made this for dinner and it was quite lovely and a big hit with my partner. but I made a few changes, bearing previous commenter's words in mind: ~ note: I halved the recipe and my amounts below reflect this ~ 1) much less olive oil (i have a non-stick pan) 2) I used albacore tuna 3) sub chicken stock (up to 1/3 cup from 1/2 cup) for white wine 4) i kept the s-d tomatoes at a 1/2 cup, since some commented that the finished dish was a little bland 5) to prevent dryness and to add a little tang, I added a splash of the tomato soaking water 6) I added the peas at the same time as the tomatoes and tuna 7) I kept 1/4 of the pasta water to add at the end in case the dish was too dry after adding the pasta 8) I had neither the basil nor the parmesan reggiano on hand; I don't think they are necessary in such a homey dish. I cooked the recipe (it did take about twice as long as the recipe predicted) and served it up. After a few bites, my husband said "I thought you said we were having tuna casserole". I laughed and said in a highbrow voice "this is Rachael Ray's RENAISSANCE of Tuna Casserole"! I'm not a huge tuna casserole fan but this new twist on the old fare is excellent...its lighter, healthier, and a more sophisticated take on the traditional casserole and is definitely a keeper for this cook. I did double the wine and cream as it seemed a bit dry before but that could have been because I was using a whole grain pasta. This meal truly took less than 30 minutes to cook, and required no more effort that chopping up the vegetables and throwing all the ingredients into a pan. This pasta has great flavor and also tastes really fresh. I decided used whole wheat fettucine to give it a little healthy twist. If you like tuna I highly reccomend this recipe. If you had enough money to buy those ingredients, wouldn't you rather make something that actually tastes good, and is not so fattening, what with the heavy cream and cheese? For those who don't like alcohol in there food you can use stock as Rachael mentioned in this show (chicken stock.)
