I followed the recipe to the letter, and it should definitely be called Squash and Macaroni. It was gross. It looks like mac-n-cheese but with the first bite, my 4 year-old immediately knew it was not mac-n-cheese. Probably because it tastes overwhelmingly like squash. Even adding more cheese didn't help. I pureed the butternut squash with a little (1 TBS) water after roasting it at 400 for 50 minutes and mixed it with the chesses (I omitted the ricotta) and milk over medium heat and then added the cooked pasta. I mixed that together and baked it for and extra 5 mins at 375. I wouldn't use bread crumbs, throw some bread (I used whole wheat) with the crust cut off in a food processor for about 30 seconds. I added about 1/2 c of parm cheese to the bread and let it broil for 3 minutes. We could taste the squash but I expected too somehow. The grocery store where I purchased the frozen squash only had 12 oz packages so I opted to use both and tried to make up for it by adding extra of the additional ingredients. Though I liked the flavor, next time I make this I am going to use dijon mustard instead of dry and use a good Wisconsin or Vermont cheddar instead of the pre-shredded bagged variety. I only had sharp on hand which didn't quite make it. Also substituting gruyere for the monterey jack might be better. (we're not big jack fans here!) Will definitely try this again as a healthy alternative. As always, Ellie doesn't disappoint. All of her recipes have been delicious and I'm also enjoying her new book tremendously. when I reach for a recipe, I often reach for one of Ellie's as I know it will not only be delicious but healthy! My 2 year old through to my 11 year old love it and have no idea that they are getting their veggies too. Sometimes I add in cauliflower or broccoli. I also use Barilla plus pasta and whole wheat bread crumbs. I can eat this and not feel guilty. Love that!!! I wish I could say I loved it, but why use all that cheese if it's not going to taste like the real thing? (which it doesn't, I just dumped the whole casserole dish in the garbage because I didn't care for the strong squash flavor - and I only used 1 package of squash instead of the 2 that were recommended!) My recommendation is to use high protein/high fiber elbows and use the original roux recipe for the cheese sauce. That makes it healthier than the original version. Only make this squash based recipe if you really like squash and don't mind missing out on regular mac and cheese. It was easy to make and tasted great the next day. You'd never know there was squash in this dish, I used frozen yellow squash medallions and cooked them in the milk to thaw and pureed them in the food processor before adding the cheese. My husband is a cheese lover and is a big fan of pasta drenched in creamy cheese sauce. He really liked this healthier version. I recalculated the NI and it wasn't too bad of a change so I was pleased and plan on making this again. My daughter (6 yrs)didn't like it but then again she doesn't like much these days. I hate to say it, but my family and I didn't like it at all. We had the same experience as some of the other reviews, way to much squash taste, not enough cheese. We love squash but this is supposed to be mac and cheese and it tasted nothing like it. I tried adding more cheese to the recipe and we all had to add salt and pepper but it just didn't help. I tested it out on some pretty unhealthy eaters, and they ended up loving it! I didn't see the episode itself, so I did some things differently. 1. I accidentally bought cubed frozen butternut squash instead of pureed, so I pureed it myself in the blender with the milk. 2. I accidentally used 3 cups of milk instead of 2 cups. Maybe this cut out some squash flavor? 3. I used 1/4 tsp. of cayenne instead of 1/8 tsp. (on purpose!). When I told the other 7 people that I might need to add less ricotta, they told me to change absolutely nothing. Make it right away! I wasn't sure what my husband would think of it but turns out he LOVED it and went back for seconds. He always adds salt and pepper to his food and I found I had to add salt to bring out the flavor more so I will add a little more salt to the recipe. I am also going to try some of the variations suggested by others and I like the thought of using panko bread crumbs to the topping. I really like that crunchy topping. As a matter of fact, I rarely rate anything, but this was so not worth the money for the ingredients. The texture and the flavor was truely terrible. If you want anything that tastes remotely like mac and cheese do not try this recipe. The spices did not go well together at all and the butternut sqaush--which I normally love was not a good combination with the other ingredients. Save your money! I thought the addition of the squash was a great trick to make this a bit healthier. I am fairly pleased with this recipe's balance of nutrition and flavor. The squash flavor was barely detectable. Unfortunately, it didn't really have a ton of flavor overall. I will try adding more spices next time. I liked the texture, but I did think it was a bit dry. My boyfriend (who prefers the soupiness of Velveeta Shells and Cheese) has requested that I bake it for less time or maybe not at all. Nobody is going to think it's Mac & Cheese. The squash flavor dominates and I love squash, but it was just too boring to eat much of. I made the following changes to the recipe: used panko bread crumbs instead of regular, put a little sour cream in instead of the ricotta, and used fresh butternut squash instead of frozen. I roasted the butternut squash first until very soft, and then mashed it. Even though my husband saw me making the squash, he still had no idea there was squash in it when I served it. The true test will be whether I can sneak it by my non-vegetable eating relative. Thanks Ellie! I used a smoked sharp cheddar but other than that I followed the recipe exactly. I thought that the squash/cheese sauce was much thicker than other homemade macaroni sauces. The squash flavor is suprisingly subtle,however, I felt like the cheese flavor was too. I think next time I may add a pinch more dried mustard and salt. I roasted 20 oz. of butternut squash in the oven, as other reviewers recommended. I then pureed it in my Vita-Mix with the milk, and came up with a very smooth cheesy-like sauce. I added 1/2 cup of light sour cream, about 1 tbsp of Dijon mustard, along with 2 tsp of salt, about a 1/2 tsp of cayenne, and 1 tsp or so of dry mustard. I didn't have any other cheese but sharp cheddar, so I added 6 oz. of that to the dish. I had no brad crumbs or Panko, so I left those off. Baked it for about 20 minutes. Wow! While it wasn't exactly like full fat macaroni and cheese, it was very good. It's the first low fat, substitute that I liked. In fact, I liked it so much I had a second portion. Personally, I would reduce the amount of squash that it says to put in - maybe 15 oz instead of 20. Also, up the cheddar cheese to compensate for the reduced squash. I also would reccomend putting the frozen squash into the microwave for a few minutes to defrost it instead of doing it all in the pan which takes forever it seems. I would have never thought to put squash in a mac and cheese recipe, but this was perfect - and I'm not generally a huge squash fan. I was craving baked mac and cheese but was feeling guilty about making it, so I was very excited when I found this! I made it exactly as the recipe explains. Next time I might play around with adjusting the seasonings or adding some minced onion. Great dish though. It lends texture, color and a wonderful earthiness. I added broccoli florets and a chopped grilled chicken breast, and it was a one-pot meal. I also used nonfat milk and half the squash, which worked. It sat in the oven for half an hour (my broiler doesn't work)and it was warm, toasted and wonderful. The hubs was shocked it had squash in it. Will make this wonderful dish again and again!!! I thought that the macaroni was ok, but I agree with other reviewers that the texture was grainy (despite pureeing the squash thoroughly). Recently, my local market started carrying the frozen winter squash puree. I decided to make the recipe again, but I also substituted the ricotta cheese with light sour cream. In addition, I added about a tablespoon of dried onion and doubled the amount of dried mustard originally called for. What a difference these changes made! The texture was much creamier, and the onion added a lot of extra flavor. True, it isn't nearly as cheesy as traditional macaroni and cheese. However, I plan on making this recipe more often following these substitutions as it is a healthy and acceptable alternative. The first time I boiled butternut squash, then pureed it with some cooking water. This was way too water-y and bland. I also disliked the texture of the ricotta. Mac&Cheese is supposed to be creamy! The second time, I roasted the butternut squash, then weighed out 20 oz. (to match the two 10 oz. boxes). Then I put the two cups of milk in the food processor to help puree the squash. I also used a really good white cheddar (from Costco) for more flavor than just a supermarket cheddar. Plus, to replace the ricotta I added 1/2 c. of light sour cream, which helped to balance the overly-sweet taste of the squash. If you expect this to taste like Alton Brown's mac n' cheese (which is the best recipe I have ever tasted for this dish) you will be sadly disappointed. However, for what it is (heavy on the squash, light on the cheese) it's pretty darned tasty! I added 1/4 tsp cayenne (instead of 1/8) and 1/2 tsp of black pepper, and found it slightly over-spiced in its initial state, but after 20 minutes in the oven it was lovely. Also subbed panko breadcrumbs for on top (I hate the insipid western variety - the Japanese breadcrumbs give a lovely crunch) and more cheddar mixed in with the crumbs instead of parm. These additions/substitutions may have led to my liking it more, so take that for what it's worth.
