Next time I make this, and I suggest it to anyone who makes this, is to blend everything but the juices & oil first and then slowly add the liquids. It pairs really well with the fish. Instead of Swordfish Steaks I cut the fish up into kabobs and added some lemon pepper to the salt and fresh ground pepper. I grilled up the Kabobs and made some angel hair pasta. I mixed half the pesto into the pasta and topped it with the kabobs and then drizzled the rest of the pesto ontop of the fish. It was amazing. VERY VERY EASY AND GREAT FOR ENTERTAINING!! :) will make again and again and again!!! It was very easy to prepare and the cooking time was less than 40 minutes. The dish turned out to be excellent and everyone in the house loved it. My only complain is that the chef did not suggest a rice/pasta side with this dish. My wife prepared her original sticky rice, which paired quite good. I will highly recommend this recipe for all fish lovers. It took about 1.5 hours to prep everything (there was a lot of chopping to do). Right before we sat down to eat I cooked the fish and tossed the salad in dressing. Everything was so flavorful and the dishes complimented each other nicely. I had about 2x as much as we needed but I am sure it will not go to waste. I think I can use it for other dishes as a substitute for normal pests as a refreshing change. It was not too watery once the grated parm cheese was added. I made it a few hours ahead of time and refrigerated it until 1 hour before use and it turned out great. Mine came out way too wet, even though my orange wasn't very big, so I had to strain out some of the fluid and adjust the seasonings a bit. But it was definately worth it! All the rich earthiness of your favorite traditional pesto, with a bright zing of citrus. We used mahi mahi instead of swordfish. I think almost any mild, meaty fish would work well here. Definately a do again! |
