Food Network needs to FIX THIS RECIPE. Ack ... our first batch of cookies started to crumble, too! When we made the second batch, we added TWO EGGS to bind the ingredients. And we did have to put a bit of flour on our hands when rolling them before cooking -- they were much stickier! We also let them cool before sprinkling them with sugar, so they were more resistant to crumbling. The second batch didn't crumble, but wasn't as lemony in flavor. Next time, I would DOUBLE the fresh lemon zest and juice.

this recipe was medium difficulty, absolutely delicious, but very fragile and broke easily. i made them twice following the recipe exactly and found them to easily break. that was the only disappointing thing about this recipe. they were yummy!

These cookies would have been perfect except that the recipe didn't call for eggs. It would bind the dough and keep the cookies from crumbling.

I followed the recipe to the letter and when I took the cookies off the baking sheet to roll in the sugar, they totally crumbled into bits! I don't know what went wrong, but they just fell apart.

The confectioner's sugar does not blend in with the lemon zest. It lumps. The cookie dough is nice and supple, but the baked cookies, although buttery and delicious, do not hold together. Difficult to handle and break apart easily. I think less butter would make a world of difference.

I absolutely love these cookies! I wouldn't change a thing, EXCEPT (ha ha) before the first rolling you should let the cookies cool for about ten minutes or so. I dipped them in the powdered sugar too soon and it gummed up a bit on me. I dipped them a second time after they were cooled. Delicious!!!

I saw this episode, and I knew I had to make these cookies. I thought it was pure genius to combine cornmeal with lemon to bake a sweet treat. Boy was I wrong! Not so much the cornmeal, and not so much the lemon... but something is just OFF. The cookies lacked flavor, and the texture was odd. They tasted nothing like they looked. I REALLY wanted to like these. I'm still searching for the perfect lemon cookie. Let me know when you find one! But this ain't it.

This recipe produces a cookie that falls apart in your hands. It must be missing an egg or other ingredient that will prevent the crumbling effect.

I had a doubt when I looked at 1 1/4 cup of pine nuts and two sticks of butter but went ahead since Giada's recipes are generally good. It had a great flavor and wonderful aroma, though, and my husband loved it and didn't complain about all the oil or crumbly texture.

Mixing the ingredients was the best part. Everything smelled so sweet and so lemony, but they came out very grainy and tasted like sugared ... cornmeal. I couldn't taste the lemon hardly at all even though when they first went into the oven I could smell it so strongly. I also had the problem that others seemed to have had: the first one vanished in my hand like a sand rock does when you touch it. I learned quickly to let them cool a few minutes and they become much sturdier and can then be rolled in the sugar. Overall, I was very disappointed that they didn't come out better. I was so excited to try these!!

So these cookies were great! we had to improvise though, because we didnt have a food processer or lemon, so we used a blender, and orange, instead. They turned out amazing:) We also refrigerated them for longer than in said in the recipe, because on the show it said until the dough was pretty hard.

Although the crumbs were delicious, the cookies are impossible to serve to guests. As soon as you try to pick them up, they crumble into small pieces. I would not recommend trying these -- too much time and money for the finished product.

I should have read all of the poor reviews before wasting my time and ingredients. The cookies were too crumbly to roll, and after they cooled, too grainy with the corn meal. Flavor was good, but the texture was not. Making them a lot smaller than 1 1/2 inch balls might help the structure, but the taste and grit isn't worth trying them again.

These cookies were delicious - so buttery and the hint of lemon made them even better. I took them on a picnic and got rave reviews. I also found them easy to make. One tip - the pine nuts toast quickly; also it would be helpful for the recipe to include instructions for toasting the nuts. I did mine on the stove top in a nonstick pan. Use medium heat and don't turn your back or they'll burn!

The flavor of these cookies is wonderful. They are light and lemony without being too sweet. However, they are so crumbly I can barely pick them up. I turned them over to roll in the sugar (just like Giada did on tv) and they crumbled in the bowl. Some of them crumbled when I picked them up. I ended up having to dust the sugar on with a sifter. I'll try to rework the recipe a little to make them a little more stable.

Had same problem with crumbliness until let it cool a bit and also thought it was too grainy from the cornmeal the first day. Didn't really like them when warm,fell apart. But put them in tupperware & when I ate them the next day the flavors had somehow truly enhanced, the buttery texture was more set (not as grainy as it was the day before)and I REALLY loved them! Fabulous lemony butter cookie by next day! Written recipe should tell you more specifically how long to pulse nut mix. I ended up completely grinding the nuts, but I don't think they should have been that way.

Like in the other reviews, I was very disappointed in these cookies. They crumbled as I took them off the cookie sheet and to the touch. There was no way these cookie were able to be rolled in the sugar. The cookies were very grainy and tasted like lemon flavored saw dust... very disappointing. I will not be making these cookis in the future unless the recipe is updated... especially with the cost of the pine nuts.

There is definitely something missing/wrong with this recipe. I just made it - except I added one egg b/c what I figured it needed an egg, and the cookies still fell apart and didn't taste right. Maybe take out the cornmeal? I don't recommend trying this, it's a waste of ingredients.

I have to agree with all the other bad reviews on this recipe. How can the cornmeal, flour and pine nut mixture hold together without eggs? Is there an email address so we can contact the Food Network? There has to be something missing from the recipe.

There was only one four star review when I decided to try these cookies. Being a huge fan of Giada's recipes, and they ALWAYS turn out wonderful, I decided to go for it on this one. What a disappointment! They crumbled to crumbs at the slightest touch. I am apparently not the only one with this problem....is there a misprint in the recipe or what? The crumbs had a nice flavor, but I agree they are a bit grainy. All in all, a waste of expensive pine nuts and a bit of my oh so precious time.

I love both the flavor and texture of these cookies. The first one crumbled when I tried to roll it in the sugar, so I let the rest cool on the baking sheet, then just sprinkled the sugar on top.

The cookies crumbled even at the slightest touch. I couldn't roll them in the powdered sugar they were so delicate. So, I managed to get them off the sheet and onto a plate to completely cool. Even then, they were very crumbly. The taste was just OK, a little grainy for me. Although I added more lemon zest to boost the lemon flavor.

I'm an avid fan of Giada's and have had lots of success from her recipes. I watched her make these cookies on the show. She made it look so easy! So I followed the recipe exactly, but my cookies weren't firm, even after cooling a bit from the oven. They came out crumbly to the touch, and fell apart when I tried to dust them with the confectioner's sugar. I likely won't be repeating this one.

I watched the show where Giada made these cookies and then I followed the recipe exactly. However, they crumbled upon coming out of the oven. I still tried to save them by topping them with powdered sugar, but they didn't even taste good. They didn't have much lemon flavor and they were really grainy. I was very disappointed, especially considering how much I had to spend on pine nuts to make this recipe. I wouldn't make them again.

I tried to make these cookies TWICE! I even drove to the store in between batches to get more pine nuts and more meyers lemons since I was sure I did something wrong when I tried to remove the cookies from the baking sheet the exploded into crumbs all over my counter. Personally I do NOT beleive the reviews that applaud this recipe! NO WAY!! so I'm out $12 trying used Plugra butter and imported lemons plus the pine nuts and Giada...you RUINED Easter! thank God for Thomas Kellers chocolate bucheons and the pineapple riccotta pie my husband made for us. It was our first ever Easter without a lemon cookie. Oh well my bad I should not of tried a new recipe for a holiday! I am personally insulted by all the reve reviews and encourage all who venture into this recipe to think twice before investing the time, energy and money! NOTE: one and half inch rolled balls do not...I repeat do not flatten out like the picture would indicate.

At least, not as bad as I thought they would be given the reviews. But after I baked them and let them cool, they tasted just fine. (Yes, they are very fragile when they come out of the oven. Let them cool!) The only thing that miffed me about the recipe was that the cookies didn't hold their shape and went from balls to thick disks. Though that could be an error on my part, as I ended up using home-made powdered sugar, more lemon juice and substituted pine nuts with walnuts. Also, I can see what some other people meant by the cookies being "gritty," but personally I enjoy the flavor and texture the cornmeal adds. (Offnote, but I'd recommend dipping the cookies in the powdered sugar then placing the zest on top. Moisture isn't powdered sugar's bff.) All in all it's a great recipe and a unique take on the typical Russian teacake.

This recipe looks and sounds great, but it's not worth the effort. As nearly everyone else commented, the cookies crumble to bits when you touch them. Of the entire batch I made, only about 8 cookies maintained composure enough to keep. Even then, the cookies weren't very delicious.

USE AN EGG! Everyone here agrees these great tasting cookies are coming out too crumbly. Add an egg to the butter/sugar mixture. It helps to bind the ingredients and once baked the outside has a crisp shell and the inside is slightly moist...mmmm MANGIA

I was surprised to see all the trouble with these cookies. I don't bake and they came out perfect and everyone loved them, I should have made more. The only change I made was that I used limes because I didn't have any lemons. Also, instead of rolling, I placed each warm cookie in the sugar mix and pressed the sugar onto the cookie, this means less handling of the cookie. If you don't think cookies have to be chewy you should give it a try.

These cookies do not need an egg or other liquid - you don't want them puffy. They're similar to Mexican Wedding Cake cookies - I used only 1 cup of pinenuts and reduced the powdered sugar in the cookies to 1/4 cup, so proportions were the same. The trick is to cool slightly before rolling in powdered sugar and they won't crumble. Loved the lemon flavor.

I too, like so many reviewers, saw this episode and thought "I have to make those cookies!" I read all of the reviews and came up with the following changes from all the suggestions. I doubled the lemon juice and zest, added two eggs, used almonds instead of pine nuts (that's what I had), and I took the lemon zest out of the powdered sugar topping. The result was cookies that were nice and fluffy and didn't fall apart, BUT they still were gritty in texture. Also, even though I put in a lot of lemon, the cookies didn't overly taste like lemon. They tasted more like corn cookies. I there something else that could be put in them to replace the corn meal?
