The blue cheese did not complement the mango very well in my opinion. Oh, my goodness. the ground spices provide such a nice complement to the grilled mangos and the warm, drizzeled honey on top made me feel all nuzzled inside. You'll love this easy dish. I opted not to use the bleu cheese or the honey on the pineapple. I also mix the spice mix with brown butter and sage, then marinate the pineapple (cut into spears) for about an hour. The flavors complemented each other so well...will have again many times. It was a big hit both times. I was a little intimidated to make the spice essence, but it was simple and now I have it on hand. The second time I made it with less blue cheeze on top. You just need a taste, you don't want to over-power the mango which is so good on its own. |
