I made the salad and found that it was also easy to pack into a 1 cup container and carry to work in my lunch box. It can be adjusted for smaller amounts and gives a nice change of pace for your everyday lunch fare. I used fresh sugar snap peas without cooking them. The salad is good at room temperature - it had more flavor at room temp than when cold. The dressing leaves something to be desired - I added two extra (heaping) teaspoons of hoisin, one tablespoon of honey and a few squirts of srichacha. Probably could have gone heavier on srichacha. I also tossed a bit of salt into the orzo mixture. Agree with others that extra dressing would be helpful. I don't usually add all the oil/dressing the celebrity chefs seem to like, but this one needs it (although if you double it, I wouldn't double the oil). I would say this is a nice, but not highly flavorful salad. This recipe is very versitile. I always use fresh snap peas and multi color peppers. Taste the dressing before you pour it over the orzo you may have to add some extra asian flavors. Someone found it a little bland - I would have just added more Hoisin and Soy sauce to taste. Great salad for bar-b-ques - no mayo spoilage to worry about. However, I made a few changes after reading some of the reviews. -I used both fresh sugar snap peas and fresh snow peas. -I doubled the green onions. -I added two cloves of minced garlic. -I added spicy stir fry sauce along with the hoisin sauce in equal amounts. -I doubled the dressing recipe and added 1 tablespoon each of sesame oil and chili oil. -I substituted unsalted peanuts for the almonds. -Right before serving I added freshly chopped cilantro. I think that these few changes made a big difference in the dish since Texans tend to eat spicy foods. You could even add a finely chopped jalape?o to the dish for a little more heat. I increased the dressing amount (made one and a half of the dressing recipe) and I added about a tablespoon of Sesame Oil to it. It was just right. Next time I make it, I will leave out the almonds. They just didn't seem to fit and the water chesnuts added plenty of crunch. Please be aware that this recipe makes A LOT of salad. You may want to cut it in half. I added about 2 tsp of sesame oil to the dressing,and made a bit more dressing than the recipe called for. I think it needed the sesame oil.
