Be sure to cook your green beans and potatoes to al dente - you don't want them to be cooked all the way through. The salad dressing with the lemon was tangy and refreshing and a nice pairing with the tuna. This one is a keeper and is now one of my new favorites. I made it as a meal for dinner with a slice of toasted wheat french bread on the side. My boyfriend is usually pretty opposed to "healthy" meals... but he cleaned his plate and went back for more. I've made several of Ellie's recipes and LOVED them all. She definitely knows how to skip the bad and keep/enhance all the good! I tried a modification of half albacore tuna and half canned wild salmon and was pleased with the result, though it got overly fishy after a couple days. I also left out the olives in my version. I also used the leftovers in a whole wheat pita the next day and it was awesome. Mixed it with some Light Sun Dried Tomato and Basil dressing for another side dish and it was like a new dish. Chefs and cooks cook. Nutritionists tell you what they think you should eat (though if you've ever been to a conference of nutritionists, most of them are overweight which is a bit ironic). Anyway, this salad is bland and it's full of sodium. Don't you think you should at least be using low-sodium tuna, Ms. Dietician?
